Harissa-Spiced Roast Pork image

Have your butcher butterfly the pork so that it lies flat. It should be about 1 1/2 inches thick.

10 ounces harissa (North African chili sauce; about 1 1/4 cups)
1 bunch fresh thyme leaves, roughly chopped (1/4 cup)
1/4 cup fresh lemon zest, plus 1/3 cup lemon juice (from 3 lemons)
1/3 cup red-wine vinegar
1/2 cup coarse salt
2 tablespoons paprika
1 1/2 tablespoons freshly ground pepper
1 skin-on, bone-in pork picnic shoulder (about 11 pounds), butterflied
Harissa-Spiced Barbecue Sauce

Steps:

  • Mix together harissa, thyme, lemon zest and juice, and vinegar for marinade.
  • Mix salt, paprika, and pepper for dry rub. Stir 1 tablespoon dry rub into marinade. Place pork, skin side down, in a large roasting pan; pour marinade over pork. Flip pork; with a sharp knife, score skin (but not meat) in a diamond pattern at 1/2-inch intervals. Pat remaining dry rub over skin. Cover, and refrigerate at least 8 hours and up to 1 day. Bring to room temperature before roasting, 1 to 2 hours.
  • Preheat oven to 325 degrees. Cover pan with parchment-lined foil, and roast pork until fork-tender, about 5 hours. Remove foil from pan, and roast 30 minutes more. Raise temperature to 425 degrees, and roast until skin is deep brown and crisp, about 45 minutes. Remove from oven, and tent with foil. Let rest 45 minutes before carving. Serve with harissa-spice barbecue sauce.

This spicy North African condiment has many versions, but usually contains dried hot red pepper, caraway, cumin and garlic. Just a small dab packs quite a punch, and can be used to brighten soups, sauces or marinades. Thinned with olive oil, it's good drizzled over grilled meat or vegetables. Store it in the refrigerator for up to 1 month.

1 or 2 garlic cloves, smashed to a paste with a little salt
1/2 teaspoon caraway seeds, toasted and finely ground
1 tablespoon hot paprika
1/2 teaspoon cumin, toasted and finely ground
2 tablespoons olive oil

Steps:

  • Put pepper flakes in a small bowl. Cover with hot water for 5 minutes, then drain and return to bowl. Stir in garlic, caraway, hot paprika, cumin and olive oil. Store in small jar.

1 2-pound top sirloin steak (about 1 1/2 inches thick), fat trimmed
4 tablespoons extra-virgin olive oil, divided, plus additional for brushing
4 garlic cloves, pressed
2 tablespoons (packed) golden brown sugar
2 tablespoons soy sauce
1 tablespoon fresh thyme leaves
2 teaspoons plus 1 tablespoon harissa sauce*

Steps:

  • Cut steak lengthwise in half, forming two 2- to 3-inch-wide strips. Cut each strip into 2- to 3-inch triangles. Combine 2 tablespoons olive oil, garlic, sugar, soy sauce, thyme, and 2 teaspoons harissa in large bowl; whisk to blend. Add beef; toss to coat evenly. Marinate 30 minutes at room temperature or cover and chill at least 2 hours and up to 1 day, tossing occasionally.
  • Drain beef. Heat 2 heavy large skillets over high heat. Brush skillets generously with olive oil. Divide beef tips between skillets. Cook until well browned on all sides, turning with tongs, 6 to 7 minutes for medium-rare. Transfer beef tips to platter.
  • Whisk remaining 2 tablespoons olive oil, 1 tablespoon harissa, and 2 tablespoons water in small bowl to blend well. Season sauce to taste with salt. Drizzle sauce over beef tips and serve.
  • * A spicy North African red chile sauce; available in cans and jars at some specialty foods stores and at Middle Eastern markets.

  • In a blender or with a mortar and pestle grind the peppers finely.
  • Add the garlic, spices, tomato and salt.
  • Crush until well blended.
  • Scrape the mixture into a jar, pour over just enough olive oil to cover, cover tightly and refrigerate until needed.
  • Considering how hot the sauce is, this quantity should last for quite a while.

  • Remove the seeds from the chili peppers and soak the pepper in water for 1/2 to rehydrate. Heat cumin, caraway and coriander seeds over low heat for one minute. Put all the ingredients in a blender and blend until smooth.

1 1/4 cups cider vinegar
1/2 cup unsulfured molasses
1 to 2 tablespoons harissa (North African chili sauce)
1 tablespoon Worcestershire sauce
1 tablespoon mustard powder
1 tablespoon onion powder

Steps:

  • Combine all ingredients in a saucepan, and bring to a boil. Reduce heat, and simmer, stirring occasionally, until sauce thickens, 20 to 30 minutes. Sauce can be refrigerated 1 day.
