AMAZINGLY SIMPLE AND PERFECT BURGER SLIDERS
After watching numerous how-to videos about making sliders I came up with this method. It's a combination of methods all rolled into one. The actual recipe is mine though. The burgers come out perfectly sized each time. This recipe makes 15 burgers but I only make 6 at a time and freeze the rest. When we want sliders I just take out another 6 and let them thaw over night in the refrigerator.

Steps:
- Place ground chuck in mixing bowl (using an 80% - 20% fat content produces the best burgers). Add the onion powder, 1 teaspoon garlic powder, 1 teaspoon sea salt, 1 teaspoon fresh ground black pepper and the Worcestershire sauce and mix well.
- Place meat between 2 sheets of parchment paper. Using a rolling pin roll meat out to 1/4 inch thick. Using a biscuit cutter cut out patties. Keep rearranging the scrapes to make more patties. You should end up with 15. (I freeze 9 of my patties for later use. When I freeze them I separate the patties with parchment paper and place in freezer bag for up to 3 months. When ready to make take out the desired number and let defrost in the refrigerator over night).
- Heat oil and butter in pan over high heat. Add onions and 1/4 teaspoon garlic powder, 1/2 teaspoon sea salt and 1/2 teaspoon coarsely ground black pepper and cook 3-4 minutes until onions are starting to soften. Add patties on top of onions turn to medium -medium high heat and cook for 3 minutes.Stir onions often. Flip burger and cook an additional 3 minutes. Place the bottom of the bun on the patty white side (not crust side) down on the patty. Place the top of the bun right side up on the bottom bun (meaning crust side up). Cover and cook an additional 1 minute. Remove the top half of the bun and place off to the side for a second while lifting the patty. Using large spatula lift up onion, patty and and bottom bun in one motion making sure the patty is facing up with the onions on top. Split the cheese into 6 pieces and place a piece on each patty. Then place the top half of the bun on top. Serve with choice of condiments. I've found it's just easier to dip your slider into the condiments instead of putting them on the patty.

HAMBURGER SLIDERS
Steps:
- Prepare a grill or griddle for medium-high heat.
- Add the beef, salt and pepper to a medium bowl and mix to combine. Divide the beef into 8 equal portions, then form each portion into a patty a little larger in diameter than the buns.
- Cook the patties for 3 minutes or so (if using a griddle, do this in batches to avoid crowding). Flip with a spatula, add 2 slices of cheese to each and cook until the cheese melts and the burgers are cooked to medium, 3 to 5 minutes more.
- Transfer the burgers to the buns and serve immediately with tomato slices, lettuce, red onions and pickles.
THE EASIEST CHEESEBURGER SLIDERS
Steps:
- Preheat the oven to 350 degrees F.
- In a large bowl, gently mix together the ground beef, Worcestershire, garlic salt, 1 teaspoon salt and 2 teaspoons pepper. Transfer the burger mixture to a lightly greased 9-by-13-inch baking dish, pressing it into a flat layer with your hands. Evenly scatter over the diced onions; lightly press the onions into the meat.
- Bake until the burger is medium rare, 15 to 20 minutes. Let rest for 5 minutes.
- Gently slide the cooked burger patty out of the baking dish and onto a cutting board or platter; leave a few tablespoons of excess burger drippings in the pan. Place the bottom buns into the baking dish. Squirt yellow mustard evenly across the buns.
- Place the burger patty on the buns. Divide the pickles among the sliders. Top with a layer of slightly overlapping cheese slices. Add the bun tops, pressing down on them gently.
- Brush the tops of the buns with egg. Sprinkle the chips over the buns.
- Return to the oven and bake until the cheese is melted, another 15 to 20 minutes.
- Slice the burgers along the lines of the buns to separate into individual sliders. Scoop out with a spatula. Serve immediately.
SLIDERS
Steps:
- Build a charcoal fire or heat a gas grill.
- Place the ground beef in a large bowl and add the mustard, olive oil, thyme, garlic, salt, and pepper. Mix gently with a fork to combine, taking care not to compress the ingredients. Shape the meat into 12 (2-inch) patties of equal size and thickness.
- When the grill is medium-hot, brush the grill grate with oil to keep the sliders from sticking. Place the sliders on the grill and cook for 4 minutes. Turn the sliders over with a spatula and cook for another 4 to 6 minutes, until medium-rare, or cook longer if you prefer the sliders more well done. For the last 2 minutes of cooking time, place 1/2-ounce Gruyere on the top of each burger and close the grill lid. Remove the sliders to a platter and cover with foil.
- Slice the buns in half crosswise and toast the halves cut side down on the grill.
- Divide the baby arugula among the 12 bottom buns, top each with a slider, and finish with a slice of tomato and red onion. Cover with the top of the bun and serve hot with ketchup.
ONE PAN BURGER SLIDERS

- Preheat oven to 400°.
- To begin, combine the ground beef, breadcrumbs, onions, and salt in a bowl. For this step, it's best to use your hands to work all the ingredients together.
- Next, line a 9-by-13-inch baking sheet with parchment paper, then gently press the meat onto it in an even layer. Not only does the parchment paper prevent the beef from sticking to the pan, but it also makes cleanup easier.
- Bake the giant patty for 30 minutes.
- Then, lay the cheese of your choice over the beef. Do your best to ensure every inch is covered. Once you're satisfied with how it looks, stick the whole thing back in the oven for about 2 minutes or until the cheese is melted to your satisfaction.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Stir mushrooms, shallots, garlic, thyme, salt, and pepper together in a bowl. Heat olive oil in a skillet over medium heat;cook and stir mushroom mixture until golden, about 8 minutes. - Preheat an oven to 350 degrees F (175 degrees C). Cover a baking sheet with aluminum foil and spray with cooking spray.

- In a mixing bowl, combine the onions with the water, cover with plastic wrap and refrigerate overnight.
- When ready to make the sliders, drain any excess water from the onions and set aside.
- In another mixing bowl, combine the ground chuck and the ground beef. Don't over-mix. Lay out a sheet of plastic wrap. Dump the meat onto it and cover with another sheet. Using a rolling pin, roll very thinly (about 1/4 inch thick) into a large rectangle.
- Trim any excess from the rectangle and reroll into a smaller rectangle. Using a pizza cutter, cut 3x3 inch patties out of both rectangles. Season well with salt and pepper.
- Using the bottom of a fork or spoon, twirl 5 small holes in each patty (like the pips of the five on a six sided die).
- In a large skillet, melt the butter. Add the onions and season well with salt. Saute the onions in the butter for 3 minutes. Spread the onions thinly across the bottom of the skillet. Place each square patty seasoning side down onto the bed of the onions. Cover and steam the patties for 4 minutes.
- Wrap the buns in wet paper towels and microwave for 20 seconds. To serve, split the dinner rolls horizontally across the middle and place a patty with a tablespoon of onion on lower half of a dinner roll. Top with one dill pickle slice and then top with upper half of dinner roll. Serve immediately with choice of condiments.
