- 8. One batch makes 7 to 8 pint jars of relish.

Steps:
- Heat a grill to high.
- Combine all of the ground meat into a large mixing bowl. Shape into 16 (1-ounce) patties. Season patties generously with salt and pepper and drizzle with oil.
- Cook burgers on a very hot grill for about 30 seconds on each side. If a smoky flavor is desired, you may place a lid on the grill during cooking. Serve the patties on Parker House rolls garnished with a dill pickle and Onion Relish.
- Heat a large skillet over medium-high heat and add the olive oil and garlic cloves. Saute the garlic until lightly browned. Add the onions and continue to cook the mixture until golden brown. Season well with salt and pepper, add the water, stir, and bring to a boil, scraping up the caramelized bits on the bottom of the pan. Stir in ketchup and mustard. Simmer until thick. Remove from heat and let cool before serving with the burgers.

DIANE'S NO-COOK RED HAMBURGER RELISH
This is my copycat recipe for Bick's® Classic Hamburger Relish, which used to be my go-to condiment of choice to create a tasty burger. Unfortunately, the red relish is no longer available. However, I find my version to be remarkably similar to the original and hope you agree... Enjoy!

- For the fresh tomato relish, place the tomatoes and red onions in the bowl of a food processor. Pulse 10 to 12 times or until the tomatoes and onions are finely chopped but still a little chunky. Place in a strainer and drain for 2 minutes.
- Place the chopped tomatoes and onions in a bowl and stir in the apple cider vinegar, honey, kosher salt, pepper, celery salt, red pepper flakes and parsley. Set aside.
- For the burgers, place the bread in a bowl and pour milk over it. After the bread has soaked up as much of the milk as possible, smash and squeeze out and pour off the excess.

- The night or at least 8 hours before you plan on canning the relish, dice the cucumbers, zucchini, onion, and peppers. Put them in a large bowl filled with water, and add 1/4 cup pickling salt.
- The next day, drain the water and rinse the vegetables. Squeeze out as much of the water as you can.
- Chop up your tomatoes and remove as many seeds as you can. I like to chop my tomatoes in half and squeeze out the seeds. You won't get everything, but it is a lot quicker.

- Clean and slice the onions. Melt the butter on medium-high heat and add the sliced onions. Sautée for about 10 minutes, stirring constantly to prevent the onion from frying; it should just sweat and get soft. Set the water to boil.
- After 10 minutes, add the sugar and stir for a couple of minutes. Then pour in the Balsamico and stir until it has evaporated (another couple minutes). Pour in the boiling water, close the lid, lower the heat to medium and let simmer for 15 minutes, checking from time to time.
- Remove the lid and simmer uncovered for a couple of minutes to evaporate any excess water that has not been absorbed by the onions. This is ready to serve.
