Cooking spray
2 pounds ground beef
1/2 cup breadcrumbs
1/2 cup milk
2 large eggs, lightly beaten
1/2 small onion, grated
1 clove garlic, finely grated
1/3 cup chopped fresh parsley
Kosher salt and freshly ground pepper

Steps:

  • Preheat the oven to 450˚ F. Line 2 baking sheets with foil and coat with cooking spray.
  • Combine the beef, breadcrumbs, milk, eggs, onion, garlic, parsley, 2 teaspoons salt and 1/2 teaspoon pepper in a large bowl; mix with your hands until combined. Form into 1 1/2-inch meatballs (about 30). Arrange the meatballs on the prepared baking sheets.
  • Bake the meatballs until browned and cooked through, 12 to 15 minutes.

1 large egg
1/2 cup panko breadcrumbs
1/4 cup whole milk
1/4 cup finely grated Parmesan
2 tablespoons olive oil, plus more for cooking the patties
1/2 yellow onion, finely chopped
Kosher salt and freshly ground black pepper
2 large cloves garlic, minced
2 teaspoons fennel seeds
1/2 pound ground beef
1/2 pound ground pork
Crushed red pepper flakes
1/2 teaspoon dried oregano
1/2 bunch fresh parsley, finely chopped
6 slices mozzarella or provolone
6 ciabatta rolls or big squares of focaccia
Marinara sauce and fresh basil, for serving

Steps:

  • In a large bowl, mix together the egg, breadcrumbs, milk and Parmesan and set aside.
  • Heat the oil in a skillet over medium-high heat and add the onion and a pinch of salt. Cook, stirring, until softened, 5 to 7 minutes. Add the garlic and fennel seeds and cook for another minute. Set aside to cool.
  • Add the ground beef and ground pork to a medium bowl, spreading it out, and sprinkle the surface evenly with 1 teaspoon salt, a few turns of black pepper, a good pinch of crushed red pepper, the oregano and the parsley. Add the cooled onion mixture to the meat mixture. Mix with your hands quickly until just combined (don't overmix). Divide into 6 parts and shape into balls. Sprinkle with salt and pepper.
  • Heat a large cast-iron skillet or a griddle over medium heat and add a thin layer of oil. Cook the meatballs on one side until a brown crust is formed, 1 to 2 minutes, then flip and cook for 2 minutes; then smash with a big metal spatula. Top each with a slice of cheese and cook until the cheese is melted and the internal temperature is 160 degrees F, about 5 more minutes.
  • Toast the rolls or focaccia either in a skillet or the oven, then spread each side with marinara sauce. Top each with a patty and 2 big leaves of basil. Enjoy!

1 egg
1 envelope Lipton Onion Soup Mix
3 tablespoons ketchup
1 tablespoon dijon or yellow mustard
3 tablespoons sweet or dill pickle relish
1/2 cup regular or seasoned bread crumbs
2 cups shredded cheddar cheese
1 tablespoon Worcestershire sauce
Thousand Island dressing or Awesome Sauce for dipping

Steps:

  • Preheat the oven to 400º.
  • Add all the ingredients (except the dressing) to a large bowl and mix together well.
  • Roll into meatballs roughly the size of a golf ball. You can use a 1 1/2 tablespoon scoop to help make them all the same size.
  • Place the meatballs on a parchment lined baking sheet and bake for 15 minutes.
  • Serve with Thousand Island dressing or Awesome Sauce for dipping.

This is my newest, favorite meatball recipe. If you like a sweet twist, you'll like this one. The meatballs will be slightly pink inside when done because of the pork, so do not overbake them!

1 ¼ pounds ground smoked ham
1 pound ground pork
1 pound lean ground beef
1 cup milk
2 eggs
1 ½ cups graham cracker crumbs
1 (10.75 ounce) can tomato soup
¼ cup cider vinegar
1 cup packed brown sugar
1 teaspoon mustard powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the ham, pork OR sausage, and the ground beef. Stir in the milk, eggs and graham cracker crumbs and mix well. Form into large balls about 2 inches in diameter and place them in a 9x13 inch baking dish.
  • In a separate medium bowl, combine the soup, vinegar, brown sugar and mustard powder. Mix well and pour over the meatballs.
  • Bake at 350 degrees for 1 hour or until internal meat temperature reaches 160 degrees F (73 degrees C).

My kids and I spend Wednesdays out in the woods either hiking, biking, or letterboxing. We have to take a huge lunch with us and usually it's a Japanese-style bento with onigiri, some protein item, and lots of vegies and pickles. More often than not, my kids will pick this for the protein...it's basically a french hamburger recipe that has been adapted for our bento lunches. Cooking time will vary with how large your patties are. The sauce is a true basting sauce and these will not be in a soupy sort of base. The point of bentos is to make the food as fuss-free to eat as possible. The meat mixture is soft and a bit tricky to work with, but the result is a moist patty that doesn't need condiments and isn't a rubbery hard superball.

1 cup fine dry breadcrumb
1 cup havarti with dill (grated)
3 tablespoons prepared horseradish
3 tablespoons dried onion
1 teaspoon salt (or salt-spice mix of your choice, we prefer a Creole seasoning)
1/2 cup cottage cheese (or 1/4 cup dairy of some sort)
1 large egg
1 1/2 lbs ground turkey
1/2 cup butter (melted)
1/2 cup ketchup
1 -2 tablespoon soy sauce

Steps:

  • Preheat oven to 350 degrees and prepare a baking sheet by lining with parchment or foil.
  • Lightly coat the parchment or foil with cooking spray.
  • Mix the bread crumbs, havarti, horseradish, dried onion, salt (or spice-salt mix), cottage cheese, and egg together in a large bowl. (Please note that the horseradish should be prepared, i.e., the creamy kind that is mixed with mayonnaise. We use the Beaver brand.).
  • Allow to stand for 5 minutes to soften the bread crumbs.
  • Mix in the ground turkey.
  • The meat mixture will be very soft.
  • Form the meat into balls that will fit into your bento box(or on your plate).
  • Flatten slightly so that the meat is formed into shapes resembling patties.
  • Place in the oven to bake for 20 minutes.
  • Meanwhile, make the basting sauce by combining the melted butter, ketchup, and soy sauce.
  • Carefully turn the patties over and put them back in the oven until 20 minutes before the meat is cooked through.

  • The time to finish cooking will depend on how large you made your patties.
  • I use a meat thermometer to check for doneness.

  • Approximately 20 minutes before the meat cooks through, baste one side of the meat with the sauce, returning to the oven for 10 minutes.

2 tablespoons 2% milk

2 large eggs
1 cup crushed saltines (about 30 crackers)
5 tablespoons canola oil

Steps:

  • In a large bowl, combine egg and soup mix. Crumble beef over mixture and mix well. Divide into 36 portions; set aside. In another large bowl, combine the flour and milk until smooth. Add cheese and bacon; mix well. , Shape cheese mixture into 36 balls. Shape one beef portion around each cheese ball. In a shallow bowl, beat eggs for coating. Place cracker crumbs in another bowl. Dip meatballs into eggs, then coat with crumbs. , Heat oil in a large cast-iron or other heavy skillet over medium heat. Cook meatballs until meat is no longer pink and coating is golden brown, 10-12 minutes.

3 tablespoons dry red wine
2 tablespoons tomato paste
1/2 cup Italian seasoned breadcrumbs

1/4 teaspoon ground black pepper
1 tablespoon chopped parsley or 1 tablespoon parsley flakes
1 clove garlic, finely chopped
1 tablespoon freshly grated parmesan cheese
1 teaspoon onion powder or 1 teaspoon onion flakes
1 teaspoon marjoram
1/2 teaspoon sweet basil

Steps:

  • Beat the egg in a small bowl.
  • Blend in the wine and tomato paste and set aside.
  • Place the ground beef and italian sausage in a large bowl and blend with your hands.
  • Add the bread crumbs and dry ingredients.
  • Slowly blend in the egg mixture with the hamburger mixture until it is mixed well.
  • If it is too dry, add more tomato paste or wine.
  • Shape into 2 to 3 inch meatballs.
  • Place meatballs on a baking sheet.
  • Bake in a preheated oven 400 degrees for 20 minutes, turn meatballs at 10 minutes.
  • Add them to your tomato sauce (see Simple Tomato Sauce Recipe) and cook approximately 30 minutes or longer for more flavor.

  • Before you do anything, make sure your cheese is cut into 1/2-inch cubes, then place them in the freezer, while you work on the rest of the ingredients. You aren't necessarily looking to FREEZE the cheese, so much as give it a nice chill.
