1 (4 to 5-lb.) fully cooked boneless ham
2 (10-oz.) jars (2 cups) apple jelly
1/2 cup Dijon mustard
2 tablespoons brown sugar
1 teaspoon ginger
3 teaspoons dry mustard

Steps:

  • Heat oven to 325°F. Spray shallow roasting pan with nonstick cooking spray. Place ham in sprayed pan. With knife, score ham by cutting diamond shapes about 1/4 inch deep through surface. Bake at 325°F. for 45 minutes.
  • Meanwhile, in small saucepan, combine apple jelly, Dijon mustard, brown sugar, ginger and dry mustard. Cook over low heat until jelly is melted and mixture is well blended, stirring constantly.
  • Remove ham from oven; brush with about half of the glaze. Return to oven; bake an additional 30 to 45 minutes or until ham is thoroughly heated, basting with remaining glaze once or twice. Serve with any remaining glaze.

2 tablespoons neutral oil
2 bone-in pork chops
Kosher salt and freshly cracked black pepper
3/4 cup chicken stock
1 shallot, diced
1 tablespoon stone-ground mustard
2 teaspoons apple butter

Steps:

  • Heat the oil in a large skillet over medium-high heat. Sprinkle the pork chops with salt and pepper on both sides and cook, flipping once, until nicely browned and cooked to 150 degrees F or desired doneness, 5 to 7 minutes per side. Set the chops aside and reserve the skillet.
  • Pour the chicken stock into the skillet and scrape with a wooden spoon to lift any browned bits. Add the shallots and cook, stirring occasionally, until the stock is reduced by half, about 4 minutes. Whisk in the mustard and apple butter. Turn off the heat and continue whisking until the sauce coats the back of a spoon, about 1 minute. Season as desired with freshly cracked black pepper.

One 20-pound bone-in fully cooked ham
1 1/2 cups maple syrup
1 1/2 cups Dijon mustard
1/2 cup soy sauce
1/2 cup dark brown sugar
1/2 cup apple cider vinegar
1/2 cup Worcestershire sauce
Pinch cayenne pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the ham in a roasting dish with 1 cup water in the bottom of the dish. Roast for 1 hour and 15 minutes. (Check the ham after 45 minutes and add more water if necessary or tent with aluminum foil if it is getting past a dark golden brown.)
  • Meanwhile, combine the syrup, mustard, soy sauce, brown sugar, vinegar, Worcestershire and cayenne in a saucepan over medium-high heat. Cook, stirring frequently, until the mixture is thick and bubbly, 15 to 20 minutes.
  • If you used it, remove the foil from the ham and slather the ham with the glaze. Return the ham to the oven uncovered. Continue to roast, brushing the ham with the glaze every 15 minutes, until the internal temperature is between 140 and 150 degrees F, another 1 hour and 30 minutes. (If the ham starts to become too dark on the outside, tent it with aluminum foil. We are looking for a dark, sticky, flavorful glaze on the outside of the ham. Use all the glaze! Really slather it on!)
  • Remove the ham from the oven, remove the foil, brush with any remaining glaze and cook, uncovered for another 5 minutes. Let it rest for 20 to 30 minutes.
  • Serve hot or at room temperature.

1 (6 to 8-pound) bone-in smoked ham
Whole cloves
1 (15-ounce) can vegetable broth
2 cups pineapple juice
1/2 cup spicy brown mustard
2 tablespoons brown sugar
2 tablespoons honey
2 cloves garlic, smashed

Steps:

  • Slice the surface of the ham about 1-inch deep on the diagonal from left to right, spacing each slice about 1 1/2inches apart. Then go back and slice diagonally from right to left spacing each slice about 1 1/2 inches apart to form a diamond pattern. Put a whole clove in the center of each diamond.
  • Preheat oven to 350 degrees F.
  • Put the ham in a roasting pan fitted with a rack. Add the vegetable broth to the bottom of the roasting pan. Bake in the oven for 1 1/2 hours.
  • While the ham is cooking combine all the glaze ingredients in a pot, and reduce by half over medium-low heat.
  • After 1 1/2 hours remove the ham from the oven and generously baste with the sweet mustard glaze. Return the ham to the oven and bake for an additional 30 minutes, basting with the remaining glaze every 10 minutes.
  • After the ham has cooked for 2 hours and has become golden brown and caramelized remove it from the oven, to a cutting board, cover with foil and allow it to rest for 15 minutes before slicing and serving.

A perfectly glazed ham is often the centerpiece of many holiday celebrations, including Easter and Christmas. Guests swoon over the juicy, savory slices on their plate. The most beautiful ham will have a tangy, sticky-sweet and shiny glaze. After tinkering with many ingredients, we landed on a knock-your-socks-off combination that includes brown sugar, maple syrup, cinnamon and cloves for sweet, warm and slightly smoky notes. Dijon and a splash of apple cider vinegar add tang and zip while soy sauce gives it a great depth of flavor. Rounding out the glaze with brightness are the zest and juice of an orange. We hoped to only brush the ham once during baking, but test after test proved that glazing two more times during the last 30 minutes in the oven brings out the best flavors and creates the most magical sheen.

One 8- to 10-pound fully-cooked bone-in ham
3/4 cup packed dark brown sugar
3/4 cup pure maple syrup
1/4 cup low-sodium soy sauce
Zest and juice of 1 navel orange
1 tablespoon Dijon mustard
1 tablespoon apple cider vinegar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon onion powder
Freshly ground black pepper

Steps:

  • Preheat the oven to 325 degrees F. Let the ham sit at room temperature for 30 minutes and trim off any skin. If your ham is not a spiral-cut ham, use a sharp paring knife to score through the fat in a diagonal crosshatch pattern without cutting through to the meat.
  • Place the ham, flat side down, on a roasting rack in a roasting pan. Pour 1 cup water into the pan. Bake until a thermometer inserted into the thickest part of the ham registers 130 degrees F, about 2 hours 30 minutes (about 15 minutes per pound-reduce the time to 10 minutes per pound for a spiral-cut ham).
  • Meanwhile, make the glaze: Whisk the brown sugar, maple syrup, soy sauce, orange zest and juice, Dijon, vinegar, cinnamon, cloves, onion powder and a few grinds of black pepper in a medium saucepan until smooth. Bring to a boil over medium-high heat, whisking occasionally, then reduce the heat to low and simmer until the glaze has thickened and reduced by half (you should have 1 cup glaze), 20 to 25 minutes. Set aside until the ham is ready.
  • Increase the oven temperature to 425 degrees F. Brush half of the glaze over the ham. If the water in the bottom of the pan has evaporated, add 1 cup water. Return the ham to the oven and roast for 30 minutes, brushing with the remaining glaze every 10 minutes (two more times) before returning to the oven.
  • Let the ham cool for 15 minutes before thinly slicing.

Steps:

  • Preheat oven to 350°F.
  • Score top of ham into diamonds and stud center of each diamond with a clove. On a rack in a roasting pan bake ham in middle of oven 1 1/2 hours.
  • In a small saucepan heat jelly over moderate heat, stirring, until melted and smooth. Remove saucepan from heat and stir in mustard. Spread glaze evenly on top of baked ham and bake 35 minutes more.
  • Transfer ham to a platter and let stand 15 minutes. Serve ham with relishes and brandied fruits.

The ham can even be fully cooked, covered and refrigerated up to 2 days ahead of time, and you can prepare the glaze a day ahead also. Remember save the bone from the ham and freeze for pea soup! Purchase a butt-portion ham (water-added) that is wrapped in heavy plastic for this, the butt is the best! Cooking time is for the last stage of cooking the ham, prep time includes the first cooking of the ham and making the sauce.

1 (6 lb) bone-in ham (use a butt portion)
3 cups apple cider (use apple cider not 3 cups apple cider vinegar!)
2 cups dried apples, chunks (about 5 ounces)
3/4 cup brown sugar
6 tablespoons cider vinegar
3 tablespoons Dijon mustard

Steps:

  • Set oven to 325 degrees.
  • Place the ham in a roasting pan and bake until a thermometer reads 150F (about 15 minutes per pound).
  • Cool the ham completely (you can cover and refrigerate the cooked ham up to 2 days ahead).
  • In a saucepan bring the apple cider and dried apples to a boil over medium heat.
  • Boil until the liquid is reduced to about 1-1/2 cups (this should take about 8-10 minutes).
  • In a small bowl, whisk together the brown sugar, cider vinegar and mustard until well blended.
  • Add to the cider mixture; simmer sauce until reduced to about 2-1/4 cups, stirring occasionally (this shoud take about 5-6 minutes) the sauce can be prepared a day in advance and refrigerated.
  • Set oven to 375 degrees.
  • Cut 1/2-inch slices from the bone, and place into a glass baking dish.
  • Spoon the sauce over the slices.
  • Bake in the oven until heated through and the sauce bubbles (about 25-30 minutes).
  • Transfer to a platter to serve.

10 lbs smoked ham, with rind preferably shank end
1 cup unsweetened apple juice or 1 cup apple cider
1/2 cup whole grain Dijon mustard
2/3 cup golden brown sugar, packed
1/4 honey

Steps:

  • Preheat oven to 325°F.
  • Method 1: Place ham in large roasting pan. Pour apple juice over ham. Cover ham completely with parchment paper, then cover ham and roasting pan completely with heavy duty foil, sealing tightly at edges of pan.
  • Bake ham until thermometer reads 145 F, about 1 hour 10 minutes or 7 minutes per pound.
  • Remove ham from oven. Increase oven temp to 375°F.
  • Method 2: instead of using parchment paper and foil, use a turkey bag.
  • Remove foil and parchment paper from ham or remove ham from bag.
  • Drain and discard liquids from roasting pan.
  • Cut off rind and all but 1/4 inch thick layer of fat from ham and discard.
  • Using long sharp knife, score fat in 1 inch wide 1/4 inch deep diamond pattern.
  • Spread mustard evenly over fat layer on ham.
  • Pat brown sugar over mustard coating, pressing firmly to adhere.
  • Drizzle honey evenly over.
  • Bake until ham is well glazed, spooning any mustard and sugar glaze that slides into roasting pan back over ham, about 30 minutes.
  • Transfer ham to serving platter and let cool at least 45 minutes.
  • Slice ham and serve slightly warm or at room temperature.
