1 small yellow onion, diced
3 tablespoons all-purpose flour
1 cup half-and-half
½ cup whole milk
salt and ground black pepper to taste
1 teaspoon garlic powder

¼ teaspoon paprika
4 large russet potatoes, peeled and thinly sliced
1 ½ cups chopped hickory smoked ham
½ cup grated Cheddar cheese
½ cup grated Monterey Jack cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Butter a baking dish.
  • Melt butter in a large skillet over medium heat. Add onion; cook and stir until starting to soften, 3 to 4 minutes. Sprinkle flour over onion and whisk together. Cook until golden brown, about 2 minutes. Stir in half-and-half and milk; whisk until thickened, 3 to 4 minutes more. Remove from heat; season sauce with salt and pepper. Add garlic powder, Worcestershire sauce, onion powder, and paprika.
  • Place half the sliced potatoes into the baking dish; top with half the chopped ham. Sprinkle half the Cheddar cheese and half the Monterey Jack cheese on top. Pour in half the sauce from the skillet. Repeat layering the remaining potatoes, ham, cheeses, and sauce, ending with a layer of cheese and sauce. Cover dish with aluminum foil.
  • Bake in the preheated oven for 40 minutes. Remove the foil and bake until the cheese on top is golden and sauce is bubbling, 20 to 30 minutes more.

1 large leek, washed and chopped
1 (2 ounce) jar sliced pimientos, drained
4 1/2 tablespoons flour
12 ounces ham, cooked and sliced
1/4 teaspoon salt
1/4 teaspoon pepper
1 3/4 cups milk
2 tablespoons butter

Steps:

  • Preheat oven to 350.
  • Arrange one third of potatoes in a greeased 2.5 quart casserole dish. Sprinkle with a third of the leeks and pimientos, then 1 1/2 tablespoons flour. Add a layer of half the ham slices.
  • Add half of remaining potatoes, leeks and pimientos. Top with remaining ham slices and 1 1/2 tablespoons flour.
  • Top with a final layer of potato slices, sprinkle with remaining flour, leeks, pimientos and salt and pepper.
  • Pour milk over all. Dot with butter.
  • Cover and bake 35 minutes. Uncover and bake 30 minutes longer, or until potatoes are tender and liquid is reduced to desired consitency.
  • Let stand 5 minutes before serving.

2 medium onions, thinly sliced
4 large russet potatoes, peeled and thinly sliced
12 ounces 1/4-inch sliced baked ham

Steps:

  • Preheat oven to 350 degrees. Butter a baking dish.
  • In a saucepan, melt 2 tablespoons butter over medium high heat. Stir in flour and cook for 1 minute. Remove saucepan from heat and whisk in milk. Return pan to heat and bring to a simmer while stirring. When sauce has thickened remove from heat, season with salt and pepper and set aside.
  • In a skillet, cook onions in melted butter until golden brown. Season with salt and pepper.

2 leeks, halved, thinly sliced and soaked in cold water for 30 minutes
3 sprigs fresh thyme, leaves picked
Kosher salt and freshly ground black pepper
2 pounds Yukon gold potatoes
8 ounces cream cheese, softened
1/2 cup heavy cream
1/2 cup chicken stock
2 cloves garlic, minced
1/4 teaspoon paprika
1 1/2 cups grated fontina cheese

Steps:

  • Preheat the oven to 350 degrees F. Butter an oval baking dish. Drain the leeks and rinse.
  • In a large skillet, melt the butter over medium heat. Add the leeks and thyme, season with salt and pepper and cook, stirring, until the leeks are softened and golden, 5 to 7 minutes.
  • Peel and slice the potatoes into very thin rounds. Sprinkle with salt and pepper. Layer half of the potatoes in the buttered dish, then layer half of the cooked leeks over the potatoes. Repeat the layers.
  • Return the skillet to medium heat and add the cream cheese, cream, chicken stock and garlic. Stir together, scraping up any brown bits from the bottom of the skillet. Sprinkle with the paprika and some salt and pepper. Bring to a boil, lower to a simmer and simmer for about 5 minutes so the cheese melts. Pour the cream mixture over the leeks and potatoes and top with the grated cheese.
  • Cover with foil and transfer to the oven. Bake for 40 minutes, then remove the foil and continue baking until the cheese is bubbly and golden, 15 to 20 minutes more. Allow to cool slightly before serving.

1 1/2 cups half-and-half

3 cups diced cooked ham

Chopped fresh parsley, for sprinkling, optional

Steps:

  • Preheat the oven to 375 degrees F.
  • Add the butter and onions to a large skillet over medium heat and saute until starting to soften, 3 to 4 minutes. Sprinkle the flour over the onions and whisk them together. Continue cooking the onion/flour mixture until golden brown, about 2 minutes. Stir in the half-and-half and milk and whisk around, allowing the mixture to thicken; this will take 3 to 4 minutes. Add some pepper, stir the sauce, reduce the heat and keep warm.
  • Slice the potatoes really thin using a mandolin or a really sharp knife, the thinner the better. Generously butter a 2-quart baking dish, then add half the sliced potatoes and half the diced ham. Sprinkle on half the cheese then pour on half the sauce from the skillet. Repeat with the rest of the ingredients, ending with a layer of cheese and sauce. Sprinkle extra pepper on top.
  • Cover the dish with foil and bake it for 40 minutes, then remove the foil and bake until the cheese is golden brown and the sauce is bubbling, an additional 20 to 30 minutes. Sprinkle with chopped parsley if desired and serve it up.

3 large potatoes (or 5 small to medium ones)
2 cups cooked ham, cubed (about 1 lb)
1 (10 3/4 ounce) can cream of potato soup
3/4 cup milk
2 cups cheddar cheese, shredded
salt and pepper

Steps:

  • In a med bowl, mix milk and soup until smooth. Set aside.
  • Peel and slice potatoes into 1/4 inches slices.
  • Arrange half the potato slices in a layer in a greased, shallow baking dish.
  • Top potatoes with salt, pepper, half the soup mixture, half the ham, and then half the cheese.
  • Repeat for second layer.

  • Preheat oven to 375°F. Grease a 2 qt. covered casserole dish. Parboil potato slices over medium heat in unsalted water for 5 minutes. Strain and rinse briefly under cold water to stop cooking process. In a small bowl, blend together flour, parsley, chives salt and pepper. Whisk in milk. Strain potatoes. In the greased casserole dish, create multiple layers of potatoes, onion slices, ham and sprinkling of the dry ingredients in each layer. Dot each layer with some butter, reserving enough potatoes and butter for the top layer. Pour the milk mixture over the top. Sprinkle with paprika and parsley.
