- Preheat oven to 375°. Combine the first six ingredients. Divide crescent dough into 24 portions. Press into greased mini muffin cups., Spoon 1 tablespoon ham mixture into each cup. Bake until golden brown, 13-15 minutes.

Steps:
- Preheat oven to 350ºF. Line baking sheet with parchment paper. Set aside.
- In a bowl, combine butter, cheese, ham and Worcestershire sauce. Mix well. Blend in flour. Make sure flour is thoroughly combined with butter and cheese mixture.
- Form dough into 1/2-inch balls. Place on baking sheet.
- Bake for 15 to 18 minutes.

Steps:
- Preheat oven to 180C/350F. Spray 2 baking trays with oil.
- Let the puff pastry defrost then cut into 9 x 8cm/3.5" squares.
- Spread about 1/2 tsp of mustard diagonally across ta square.
- Top with ham and sprinkle with cheese.
- Dab one corner with egg yolk using a brush. Fold the opposite corner over the filling first, then fold the corner with the egg yolk over it and press down to bond.
- Place on baking tray. Repeat with remaining square.
- Brush the top with egg. Bake for 15 minutes or until deep golden brown and puffed.
- Serve warm!
HAM AND CHEESE IN PUFF PASTRY
Steps:
- Preheat the oven to 450 degrees F. Place a piece of parchment paper on a sheet pan.
- Lay 1 sheet of puff pastry on a floured board and carefully roll it out to 10 by 12 inches. Place it on a sheet pan and brush the center with the mustard, leaving a 1-inch border around the edge. Place a layer first of ham and then cheese, also leaving a 1-inch border. Brush the border with the egg wash.
- Place the second sheet of puff pastry on the floured board and roll it out to 10 by 12inches. Place the second sheet on top of the filled pastry, lining up the edges. Cut the edges straight with a small, sharp knife and press together lightly. Brush the top with egg wash and cut a few slits in the top to allow steam to escape.
- Bake for 20 to 25 minutes, until puffed and golden brown. Allow to cool for a few minutes and serve hot or warm.
PUFFS
Puffs that you put tuna, ham, chicken, shrimp, or egg salads. This is a wonderful basic recipe that you can build on and create sweet or savory dishes. Stuff them with vanilla ice cream and top with chocolate sauce. Voila, a fabulous dessert that looks like you spent hours on, but you didn't!

- Preheat oven to 375 degrees F (190 degrees C). Grease a cookie sheet. Set aside.
- In a medium saucepan heat butter and water over medium heat until butter melts. Fold in flour all at once, and stir vigorously until a ball forms in the center of the pan. Remove from heat and let stand for 5 minutes.
- Add eggs, one at a time, and beat until fully blended. Mix should be very stiff. Drop by 1/2 to 3/4 teaspoon onto prepared cookie sheet.
- Bake for 30 to 40 minutes, or until the moisture disappears. Cool and slit a small opening on one side and stuff with desired filling.

- Combine water, butter and salt in medium saucepan.
- Heat to boiling.
- Add flour all at once and beat with a wooden spoon until the batter leaves the sides of the pan.
- Add eggs one at a time using a beater.
- Beat well after each egg.
- Beat until dough i s smooth and shiny.
- Stir in cheese, ham and mustard.
- Drop by spoonfuls on a greased cookie sheet and bake at 400°F for 20-25 minutes.
HAM AND CHEESE PUFFS
My family used to make these for special occasions, or random visitors! Basically a gougere! They can be baked and frozen then just brought out and thrown in a toaster oven when needed! Sometimes I like a stronger mustard taste so I double the dry mustard. I'm guessing at the amount of servings as I don't think I've ever made a single batch of this recipe - haha.

- Preheat oven to 400 degrees Fahrenheit.
- Combine water, butter, and salt in a saucepan and bring to a boil.

- In a small bowl, beat the cream cheese, mayonnaise and milk until blended. Stir in the ham, cheese, pepper, chives, parsley and garlic. Cover and refrigerate until ready to use., In a large saucepan, bring the water, butter, seasoned salt, garlic powder and onion powder to a boil. - Heat oven to 400°F.
- Combine ham and cheese. Unfold pastry sheet on cutting board; cut into 9 squares. Make 2 L-shaped cuts in each square, making cuts opposite from each other and 1/2 inch from edges of square. Lift loose outer corners of each square and bring through cuts to opposite sides of square; press edges together to seal. Place on baking sheet; brush with egg. Prick centers with fork.

ULTIMATE HAM CUPS
I created this recipe to use leftovers from Thanksgiving for a day-after brunch. It combines the best of the holiday flavors - smoked ham, cranberries, almonds, and smoked mozzarella cheese - into puff pastry shells, to make a really elegant presentation for a buffet, or it could be put into mini muffin pans for an appetizer. Sprinkle with finely chopped parsley or paprika if desired.

- Preheat oven to 400 degrees F (200 degrees C).
- Melt 1/4 cup butter in a saucepan over medium heat. Whisk in flour until fully incorporated. Add milk; bring to a slow boil. Whisk until thickened, 3 to 5 minutes. Add nutmeg, white pepper, cayenne, and salt. Remove from heat and let filling cool slightly. Add ham, mozzarella cheese, cranberries, and almonds.

This is my cross-cultural take on a frequently served Swedish snack. If you're making the North African mantecaos specifically for this dish, you might omit the cumin, but I think they're more interesting with it. You can also make these with standard biscuits, in which case they're pretty simple.

- Melt the butter in a skillet over medium heat. Add the shallots and cook until soft and golden, about 3 minutes. Lower the heat and add the meat; cook, stirring occasionally, until hot, about 5 minutes.
- Meanwhile, whisk together the sour cream, egg, and herbs. Add to the meat mixture and cook until just heated through. Season with pepper and spoon into the Cheese Mantecaos, making little sandwiches. Serve immediately.
