This easy Nachos Supreme dinner is the perfect family meal to add all of your favorite toppings to for truly epic nachos supreme that are so much better than any from Taco Bell! No one complains when I'm dishing up their servings of this ultimate baked beef nachos recipe!

1 Tbsp olive oil ((extra virgin))
1 medium white onion ((diced))
1 Tbsp garlic ((minced))
1 lb ground beef ((lean ground beef is recommended))
4 oz diced green chiles ((1 4-ounce can, drained))
1 taco seasoning mix ((or use 1 packet of seasoning mix))
15 oz refried beans ((optional - 1 15-ounce can))
17-18 oz tortilla chips ((a larger bag of tortilla chips))
1 cup nacho cheese sauce
2 cups Mexican cheese blend
diced tomatoes
pickled jalapeno
diced avocado
chopped cilantro
crema or sour cream
chopped green onion
sliced olives
pico de gallo
guacamole

Steps:

  • Preheat your oven to 425 degrees F (218 degrees C) and line a large rimmed baking sheet with aluminum foil for easy cleanup if desired.
  • In a large skillet or non-stick frying pan heat the olive oil to medium-high temperature. Once shimmering and just beginning to smoke, add the diced white onion and saute for 2-3 minutes. The onion should get fragrant, tender, and become transparent. Add 1 tablespoon of minced garlic and saute with the onion for 30 seconds to 1 minute.
  • Add the 1 pound of ground beef, break apart, and brown until almost completely browned or about 5-6 minutes. Add the taco seasoning and stir into the ground beef. Add the water as instructed on your packet (or use 1/4 cup of water with my homemade taco seasoning mix). Combine the refried beans with the ground beef and taco seasoning. Cook until the beans are heated.
  • Spread the tortilla chips as your base, then top with 1 cup of nacho cheese sauce (heat in the microwave before pouring over the chips), beef and beans mixture, and 2 cups shredded Mexican cheese blend.
  • Bake at 425 degrees F (218 degrees C) for 15 minutes or until the cheese is completely melted and slightly browned.
  • Remove from the oven and add your favorite toppings then serve immediately.

1/2 pound lean ground beef (90% lean)
3/4 cup water
2/3 cup condensed tomato soup, undiluted
2 tablespoons taco seasoning
3/4 cup uncooked instant rice
Optional toppings: shredded lettuce, shredded cheddar cheese, salsa and sour cream
Tortilla chips

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the water, soup and taco seasoning. Bring to a boil. Stir in rice. Cover and remove from the heat. Let stand for 5 minutes or until rice is tender. , Spoon onto two serving plates. Top with lettuce, cheese, salsa and/or sour cream if desired. Serve with chips.

1 pound ground beef
1 package (about 1 ounce) taco seasoning mix
1 can (10 3/4 ounces) Campbell's® Condensed Tomato Soup
1 1/2 cups water
1 1/2 cups uncooked instant white rice
Pace® Chunky Salsa
Shredded Cheddar cheese
Shredded lettuce
Tortilla chips

Steps:

  • Cook the beef and taco seasoning in a 10-inch skillet until the beef is well browned, stirring often to separate meat. Pour off any fat.
  • Stir the soup, water and rice in the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 5 minutes or until the rice is tender.
  • Top with the salsa, cheese and lettuce. Serve with the tortilla chips for dipping.
  • Serving Suggestion: Serve with carrot and celery sticks. For dessert serve chunky applesauce sprinkled with cinnamon.

1 pound ground beef, good quality, lean and grass fed
2 bags of Tortilla chips, your choice of flavor
1 packet Taco seasoning mix
1 can refried beans
½ onion diced
3 small tomatoes, diced
3 green onions, chopped well
16 ounces Fiesta blend cheese, shredded

Steps:

  • FIRST STEP:Preheat the oven to 400* Add the beef and onion to a skillet, crumble the beef and cook thoroughly SECOND STEP:Drain any fat from the pan Reduce the heat to low and add in the taco seasoning THIRD STEP:Simmer for a few more minutes Lay a sheet of parchment on two large baking sheets FOURTH STEP:On each tray, place one bag of tortilla chips and spread evenly Divide the refried beans and drop by spoonfuls on each tray of chips FIFTH STEP:Sprinkle half the meat mixture on each of the two trays Sprinkle half the cheese on each tray SIXTH STEP:Place the trays into the oven and bake for 10 to 15 minutes, until the cheese has melted. Once the cheese has melted, remove from the oven and top with the diced tomatoes and the green onion SEVENTH STEP:These can be served with salsa and sour cream, shredded lettuce and olives, or any other toppings that are preferred in your family. 1 lb ground beef
1/2 teaspoon sea salt
1/2 teaspoon black pepper
1/2 cup red onion, diced
1 tablespoon chipotle chile in adobo (puree)
2 garlic cloves, pressed
1 (4 ounce) can diced green chilies
1 tablespoon taco seasoning
1 teaspoon oregano
1 (908 g) bag tortilla chips
1/2 cup red pepper
1 (2 1/4 ounce) can sliced black olives
2 cups cheddar cheese, grated
2 cups monterey jack cheese, grated
30 pickled jalapeno peppers
1 tomatoes, seeded and diced
2 green onions, sliced

Steps:

  • In a large skillet over medium heat, add ground beef and season with salt and freshly ground black pepper. Break down the meat while cooking until half way done. Add red onions and sauté until soft and translucent, about 4 minutes. Transfer to a colander to drain then return meat mixture back to skillet.
  • Add chipotle purée, garlic, green chilies, taco seasoning and oregano. Stir ingredients very well before removing from the heat. Preheat oven to 400ºF.
  • To assemble the nachos, cover bottom of a deep dish pizza pan with tortilla chips. Spoon half beef mixture on top followed with ¼ cup red peppers, half can sliced black olives and sprinkle 1 cup each of Monterey Jack and Cheddar cheese. Repeat with the second layer starting with tortilla chips, remaining beef mixture, remaining ¼ cup red peppers and the rest of black olives. Add about 15 pickled jalapeño peppers and cover with the remaining 2 cups of cheeses. Add more jalapeño pepper (about 15 more).
  • Transfer dish to preheated oven and bake for 7 minutes or until cheeses are melted and ingredients are heated through. Remove from the heat and garnish with diced tomato and sliced green onions. Serve with salsa, guacamole, refried beans and sour cream. Serve 4 to 6.

3 ounces yellow corn tortilla chips
2 teaspoons olive oil
¼ (12 ounce) package ground beef vegetarian substitute (such as MorningStar®)
2 tablespoons water
1 ½ teaspoons hot taco seasoning mix
½ cup black beans, rinsed and drained
⅔ cup shredded mild Cheddar cheese
½ cup shredded lettuce, or to taste
¼ cup purchased salsa
3 tablespoons purchased guacamole
1 tablespoon sliced jalapeno peppers, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat olive oil in a skillet over medium-high heat. Add ground beef substitute and fry for 1 to 2 minutes. Stir in water and taco seasoning. Continue to cook and stir until cooked through, about 8 more minutes.
  • Place tortilla chips on an oven-safe plate and top with black beans. Add fried beef substitute and top with Cheddar cheese.
  • Bake in the preheated oven until cheese is melted, about 5 minutes; make sure the chips do not burn.
  • Remove from the oven and top with lettuce, salsa, guacamole, and jalapeno peppers.
