CREAMY & CRUNCHY HAM AND NOODLE CASSEROLE



Creamy & Crunchy Ham and Noodle Casserole image

Someone once defined eternity as two people and a Christmas ham. When my husband and I received not one, not two, but three Christmas hams in one week, I came up with this recipe, which has since become one of our post-holiday favorites.

8 ounces uncooked egg noodles
1 lb diced leftover cooked ham
2 stalks celery, sliced thin
1 small onion, diced
2 tablespoons oil
1 (10 3/4 ounce) can cream of mushroom soup or 1 (10 3/4 ounce) can cream of chicken soup
1 (8 ounce) can mushroom pieces
1/2 cup chicken bouillon or 1/2 cup broth
1 cup shredded cheddar cheese
1 tablespoon Worcestershire sauce
1/2 teaspoon dried thyme
1/4 teaspoon dried marjoram
5 dashes Tabasco sauce (optional)
1/4 cup breadcrumbs
2 tablespoons melted butter or 2 tablespoons melted margarine

Steps:

  • Preheat oven to 350°F.
  • Cook noodles according to package directions.
  • Drain and pour into large mixing bowl.
  • Saute celery and onions in skillet with oil over low heat until vegetables are translucent, not browned, about 5 minutes.
  • Remove from heat and stir into cooked noodles.
  • Stir in ham, soup, mushrooms, bouillon or broth, cheese, Worcestershire sauce, thyme, marjoram and Tabasco, if using.
  • Pour mixture into an ovenproof casserole dish.
  • In a small dish, stir together melted butter or margarine and bread crumbs until well blended.
  • Sprinkle between your fingers over the surface of the casserole.
  • Bake casserole in oven preheated to 350°F for 40 minutes.

1 celery stalk (diced)
1 carrot (diced)
¼ cup diced onion
2 tablespoons butter

Steps:

  • Preheat oven to 350 degrees.
  • In a large saucepan cook noodles according to package directions. Drain noodles and clean saucepan to make the sauce.
  • In a large saucepan over medium heat, melt the butter until bubbly. Add the celery, carrot, and onion and cook for 3 minutes, until vegetables have softened.
  • Whisk in the flour, salt, pepper, and thyme. Cook, whisking constantly, for 1 minute.
  • Gradually add chicken broth and milk, whisking constantly. Bring to a boil, then reduce heat and simmer until the sauce begins to thicken.
  • Stir in the cheese and ham and cook for 1 minute, or until cheese is melted.
  • Remove the ham mixture from the cooktop and stir in the cooked egg noodles. Transfer the ham and noodle mixture to a prepared 9x13 casserole. Sprinkle with seasoned panko crumbs (if using) and bake in the oven for 30 minutes, or until casserole is hot.

2 tablespoons all purpose flour ((gluten-free OK))
2 tablespoons butter
2 1/2 cups milk
1 1/2 cups shredded Italian blend cheese
7 ounces ham steak (cubed)
1 cup frozen peas
1/2 cup shredded Italian blend cheese
2 tablespoons butter
1/3 cup breadcrumbs ((gluten-free OK))

Steps:

  • Bring a pot of lightly salted water to a boil. Preheat oven to 375 degrees F. Spray a 9 x 13" baking dish with cooking spray, and set aside.
  • Cook pasta according to package directions, and drain.
  • While pasta cooks, melt butter in a large skillet over medium high heat. Add flour to melted butter, and whisk until combined.
  • Whisk milk into flour mixture about a half cup at a time, making sure the consistency is smooth before adding more liquid. Bring this sauce base to a low simmer.
  • Stir cheese, ham, and peas into sauce until cheese is melted. (The peas can be added while still frozen.) Stir in cooked pasta until combined well, and transfer to prepared baking dish.
  • Melt butter in a microwave-safe dish in the microwave (or on the stove if you prefer). Stir breadcrumbs into the melted butter.
  • Sprinkle 1/2 cup cheese over the pasta in the baking dish, and sprinkle the breadcrumbs over the cheese. Bake in preheated oven for 20 minutes or until top is golden brown and edges are bubbly. Serve right away.

1 lb boneless ham cut in 1" cubes (ham leftovers are perfect)
¼ cup seasoned bread crumbs
4 oz shredded cheese (Swiss or Cheddar)
12 oz bag of egg noodles
14 oz can creamed corn
3 or 4 dashes of garlic powder
1/8 tsp of dried thyme or 1 tsp of fresh thyme
Fresh cracked pepper
1 rib of celery (chopped)
½ medium onion (chopped)
1 tbs butter

Steps:

  • Cook egg noodles for 8 minutes and drain.
  • While noodles are cooking, saute onion, celery and thyme in butter 5 min on medium heat or until celery and onion are soft.
  • In a large bowl combine all ingredients, except bread crumbs.
  • Spray 13"x9"x3" pan with cooking spray and put noodle mixture in it. Sprinkle bread crumbs evenly on top.
  • Bake at 375 F for 30 minutes, uncovered.

1 lb (450 g) pasta fleky (widenoodles cut in squares, or simply wide noodles)
9 oz (250 g) bacon in one piece (half fat half lean)
8 whole eggs
1/2 stick (55 g) butter unsalted (some more to grease up the baking dish)
salt
pepper
parsley strig (to garnish)
pickles

Steps:

  • Grease the baking dish thoroughly with butter. I used a 9x12 inches cast iron casserole dish.
  • Heat the oven to 350 °F (180 °C) without hot air circulation.
  • Cook the pasta in salt water al dente, following the manufacture's instructions.
  • Meanwhile, dice the bacon into pieces about 1/2 inch in size and fry them in a pan with butter.
  • Crack the eggs into a separate bowl, beat them gently with a fork, and flavor them with salt.
  • Strain the pasta, put it into a larger bowl, and mix in butter, until it dissolves.
  • Mix the still-hot pasta with fried bacon, flavor with salt and pepper, add eggs.
  • Layer the pasta blend into the greased dish and bake for 30 minutes until the surface turns to gold.
  • Let šunkofleky a bit cool down, cut in squares, and put it on the plate. Garnish with green parsley.
  • Serve with pickles.

Long of Peru, Indiana. Made with egg noodles, chopped ham, a tasty mix of vegetables (carrots, broccoli, asparagus), and a rich and creamy sauce, the casserole is made two at a time in two 8-inch square baking dishes to serve eight people (or more, if you are serving it with other dishes as part of a buffet). 16 oz of egg noodles, uncooked
2 cups of veggies of your choice, fresh or frozen
2 cups of ham, cooked, chopped, and trimmed of fat
2 cups shredded cheese, packed
1 can of cream of mushroom soup
1/2 cup of sour cream
1/3 cup of milk
1 tsp of garlic powder
1 tsp of ground black pepper
2 tbsp of dried onion soup mix
1/4 cup dry breadcrumbs or something similar (optional)
Fresh or dried parsley, for serving (optional)

Steps:

  • Cook the noodles according to the instructions on the packet, making sure not to overcook them.
  • Preheat the oven to 350°F, and grease a medium-sized casserole dish.
  • In a large bowl (or directly in the casserole dish to save time cleaning up), combine veggies, ham, soup, sour cream, and milk.
  • Stir in 1 1/2 cups of cheese.
  • Add in garlic powder, pepper, and onion soup mix. Mix well.
  • When the noodles are done, drain them and add them to the casserole dish, stirring everything together.
  • Sprinkle the remaining 1/2 cup of cheese over the mixture.
  • Top with breadcrumbs. (Optional)
  • Completely cover with a lid or aluminum foil, and bake for 25 min.
  • Remove the lid or foil and bake for another 20 min, or until your ham and noodle casserole is nice and golden brown on top.
  • If using parsley, sprinkle over the top just before serving.
  • Pour a glass of wine, and enjoy!

Optional addition: 4 cups frozen French-style green beans or other veggies of your choice

Steps:

  • Preheat oven to 350 degrees F. Spray a 9 x 13-inch baking dish with cooking spray and set aside.
  • Cook egg noodles just until al dente, according to package instructions. Drain.
  • While the noodles are cooking, place mustard, ham, condensed soup, and optional frozen green beans in a large bowl.
  • Pour the drained, cooked, hot noodles over the rest of the ingredients in the bowl and stir to combine.
  • Transfer noodle mixture to prepared baking dish. Top with grated cheese.

2 cups reserved Double-Duty Heavenly Citrus Ham or any cubed fully cooked ham

1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup frozen peas
1/2 cup sour cream
1 can (4 ounces) chopped green chiles
1/3 cup heavy whipping cream
1/4 teaspoon pepper
1 can (6 ounces) french-fried onions, divided

Steps:

  • Cook noodles according to package directions. Meanwhile, in a large saucepan, combine the ham, cheese, soup, peas, sour cream, chilies, cream and pepper. Cook and stir over medium heat until cheese is melted. Drain noodles. Add noodles and half of the onions to ham mixture., Transfer to a greased 13x9-in. baking dish. 1 (12oz. bag) wide egg noodles
3 cups full cooked diced ham
1 (10 ½ oz. can) condensed cream of chicken soup (or scroll up for my homemade version)
1 cup sour cream
1 ½ cups milk
½ teaspoon garlic powder
¼ teaspoon pepper
2 cups shredded Monterey Jack cheese
Fresh parsley, optional

Steps:

  • Preheat oven to 350 degrees. Lightly spray a 13x9-inch baking dish with non-stick cooking spray.
  • In a large saucepan cook noodles according to package directions to al dente. Drain noodles and return to the pan. Stir in the ham, chicken soup, sour cream, milk, garlic powder, and the pepper; stir well.
  • Transfer the mixture to the 13x9-inch baking dish. Sprinkle the 2 cups cheese over the top. Bake for 25 to 30 minutes or until heated through. Garnish with fresh parsley, optional.

6 cups water
4 cups uncooked egg noodles
1 onion, chopped
½ cup sour cream
1 (10.75 ounce) can condensed cream of chicken soup
2 cups diced cooked ham
2 cups shredded Swiss cheese
salt and pepper to taste
¼ cup dry bread crumbs

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole.
  • Bring water to a full rolling boil in a pot.. Cook the egg noodles in the boiling water, stirring occasionally, for 3 minutes; remove from heat, cover, and let stand until the noodles are tender, about 10 minutes. Drain.
  • Stir the noodles, onion, sour cream, chicken soup, ham, and Swiss cheese together in a large bowl. Season with salt and pepper. Spoon into the prepared casserole. Sprinkle the top with bread crumbs.
  • Bake in the preheated oven until the casserole is bubbling and the bread crumbs have browned, about 40 minutes.
