GERRY'S COBBLER
Cobbler recipe from my Aunt Gerry, used by my mother for many years. Works with other fruits as well.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Grease a 9-inch square baking dish.
- Mix flour, baking powder, and salt in a bowl; set aside. Beat 1/2 cup white sugar and butter in another bowl until smooth. Stir flour mixture alternately with milk, into butter mixture until well mixed. Pour batter into prepared baking dish. Spoon blackberries and blackberry juice on top and sprinkle with remaining 1/2 cup sugar.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes.

TRIPLE BERRY COBBLER
Steps:
- Preheat oven to 350 degrees F.
- Combine berries, cinnamon, and lemon juice in a 9 by 13-inch baking pan.
- Combine flour, 3/4 cup sugar, and baking powder in medium mixing bowl and stir. Add milk and butter while stirring. Pour mixture over berries until covered.
- Combine cornstarch and 1/2 cup sugar in small mixing bowl and stir. Sprinkle mixture over batter.
- Remove boiling water from heat and slowly pour over entire pan. Place baking pan into oven and bake for 45 to 50 minutes or until crust is golden brown. Remove from oven, allow to cool slightly, and serve warm.
MIXED BERRY COBBLER

- For filling:
- Position a rack in middle of oven and preheat to 400°F. Whisk sugar and cornstarch in a large bowl. Add berries to bowl and toss to coat. Transfer berry mixture to a 2-quart baking dish about 2" deep. Set aside to macerate while making dough.
- For dough:
- Whisk 1 1/3 cups flour, 1/4 cup sugar, baking powder, and salt in a medium bowl. Add butter; using fingertips, rub in butter until coarse meal forms. Add 1/2 cup milk and stir just until dough forms. Gather dough into a ball and transfer to a lightly floured surface. Gently knead 5 or 6 times, then pat or roll dough into a 9x6" rectangle. Cut dough in half lengthwise, then crosswise 3 times, forming 8 rectangles. Arrange biscuits 1/2" apart over fruit. Brush tops lightly with milk and sprinkle with sugar.
- Bake until fruit is bubbling and biscuits are just cooked through and golden all over, about 35 minutes. Let cool at least 30 minutes; serve with vanilla ice cream. DO AHEAD: Cobbler can be made up to 3 hours ahead. Rewarm at 350° if desired.
PEACH AND BERRY COBBLER
This is one of my favorite summer recipes, as it features peaches and berries that are in season. But it's just as delicious with frozen fruit any time of the year. The quick biscuit topping brings it all together. -Lauren Knoelke, Des Moines, Iowa

- Preheat oven to 375°. In a large bowl, mix sugar, cornstarch, cinnamon and cardamom. Add peaches, berries and lemon juice; toss to combine. Transfer to a 10-in. cast-iron or other ovenproof skillet., In a small bowl, whisk the first 6 topping ingredients; cut in butter until mixture resembles coarse crumbs. Add buttermilk; stir just until moistened. Drop mixture by tablespoonfuls over peach mixture., Bake, uncovered, until topping is golden brown, 40-45 minutes. Serve warm. If desired, top with vanilla ice cream.

BEST-IN-THE-WEST BERRY COBBLER
The name says it all! It has a delicious sugar crackle topping that forms by pouring the boiling water over the top before baking. This is my favorite cobbler recipe. Easy, impressive, and versatile. Can use any combination of berries, frozen or fresh.

- Spread berries in a greased 8 inch square pan.
- Cream shortening and 3/4 cup sugar well.
- Sift flour, baking powder, and salt together.
- Add alternately with milk to creamed mixture. Batter will be thick.
- Spread batter over berries.
- Combine remaining sugar and cornstarch together then sprinkle evenly over batter. *NOTE* This is a juicy cobbler but if you want the berries and sauce to be thicker add an extra 1/2 to 1 tablespoon of cornstarch to the remaining sugar.
- Pour boiling water over all. Do not mix.
- Bake at 350* for 30-45 minutes, until golden brown and toothpick inserted into middle comes out clean. Serve warm or at room temperature with whipped cream or ice cream if desired. (Doubled recipe fits into a 9x13 pan, but must bake 20-30 mins longer than normal).

- Preheat oven to 350*.grease and flour 13x9 baking pan.
- Combine cake mix, eggs, water and oil in large bowl. Beat at medium speed with electric mixer for 2 minutes.
- Pour into pan.
- Combine sugar, cornstarch in large bowl. Add cherries with juice, melted butter and almond extract and 8-12 drops of red food coloring. Stir until blended.
- Spoon cherry mixture over batter.
- Bake at 350* for 60-65 minutes or until golden brown. Serve warm or cold with whipped topping.
