- Melt butter in 12-inch nonstick skillet over medium-high heat until sizzling; add onion and green pepper. Cook, stirring occasionally, 3-4 minutes or until vegetables are crisply tender. Add ham; continue cooking 2-3 minutes or until heated through. Reduce heat to medium.
- Beat eggs and water in bowl with whisk. Pour eggs over vegetables in skillet. Cook, gently lifting and stirring slightly with spatula to allow uncooked portion to flow underneath, 3-4 minutes or until almost set.
- Sprinkle with cheese; add salt and pepper, if desired. Cover; remove from heat. Let stand 2-3 minutes or until cheese is melted.

- Heat a frying pan on medium heat. Spray with a bit of non-stick cooking spray and add in diced ham, stirring occasionally.
- Crack eggs into a bowl. Add in water and Ranch dressing. Whisk until combined.
- Pour eggs into frying pan with ham. Using a rubber spatula, mix gently. Allow to cook, turning eggs occasionally. Once eggs are nearly cooked add in half the cheese. Stir to combine. Remove from heat once completely cooked (time will vary depending on how soft you like your scrambled eggs.)
- Top with remaining cheese and serve.

I hate scrambled eggs. Except, that is, when I make them. These, I like. If you're looking for firm eggs, go somewhere else; these are both moist and gooey, while not undercooked (I have a horror of salmonella). Simply double to serve 3 to 4 (or two people with bigger appetites).

- Spray non-stick frying pan with cooking spray.
- Heat up over medium to medium-high heat.
- (Use medium on an electric stove, medium-high on a gas.) While pan is heating, whisk together eggs, Worcestershire sauce, milk, salt, and pepper with a fork, just until blended.
- Pour into pan and stir continually for about 2 to 3 minutes, until eggs are cooked.
- Because of the milk, they will remain moist, but they should not be runny or sticky.
- Turn off heat, but leave pan on burner.
- Add ham and cheese.
- Stir until everything is mixed, ham is heated, and cheese is melted.

SUNNY'S PERFECT SCRAMBLED CHEESY EGGS

- In a large nonstick pan with sloped sides (even a wok shape works), melt the butter over medium-low heat, being careful to not brown the butter. If it begins to bubble, the heat is too high, so lower the heat to cook the eggs properly. (Slow and low like BBQ is the way to go with eggs.)
- Meanwhile, in a large bowl, add the eggs and 1 teaspoon cold water. Vigorously whisk until frothy and smooth. Swirl the pan around to coat the butter on the bottom and up the sides. Pour the eggs into the pan and let sit for a few seconds. When the eggs begin to lightly set on the bottom, use the whisk to gently beat the eggs, then allow them to sit for just a few seconds between beating them again. Curds will begin to form and increase throughout the cooking time. Repeat this process of whisking then resting the eggs for a few seconds until about 50 percent of the eggs are set and the rest are still wet. At this point, sprinkle the eggs with a pinch of salt and pepper and continue to whisk and rest alternately. Once the eggs are 75 percent done, add the cheese and from this moment, continue to whisk the eggs until done. This entire process from pouring in the eggs to them being finished should take 8 to 12 minutes; this isn't a race, only a journey to the best scrambled eggs ever. Remove from the heat and continue to scramble in the last seconds. Serve warm.

- Position a rack in the lower third of the oven. Preheat the oven to 350 degrees.
- Place two 2-foot-long pieces of nonstick aluminum foil next to each other so the long sides are just touching. Pinch the edges together and then fold them over several times to seal and form one large piece of foil. Line a rimmed baking sheet with the foil and set aside.
- Crack the eggs into a large bowl and whisk well. Add the scallions, 1 teaspoon salt and 2 tablespoons water and whisk to combine.
- Split the whole pack of attached dinner rolls in half horizontally using a serrated knife. Set aside.
- Add 1 tablespoon of butter to the prepared baking sheet and place in the oven to melt, about 3 minutes. Spread the butter all over the foil with a pastry brush and then pour in the egg mixture. Place the attached roll halves cut-side down and side by side on top of the eggs and return to the oven. Bake until the eggs are completely set, about 10 minutes.
- Meanwhile, butter another baking sheet with the remaining 1 tablespoon butter. Using heatproof mitts, top the rolls with this baking sheet and invert the whole thing. Remove the top baking sheet and peel back the foil. Top half the eggs with the cheese and the other half with the ham. Bake until the cheese is melted, about 5 minutes.
- Using a large metal hamburger spatula, flip the bottom half of the rolls onto the other half, so the rolls are top-side up. Cut or pull the rolls apart. Serve with hot sauce.

- Preheat oven to 350 degrees.
- In a large saucepan, melt 2 tablespoons butter and blend in flour. Cook for 1 minute.
- Gradually stir in milk, cook until thick. Add salt, pepper and cheese, stir until cheese melts. Set aside.
- In a large skillet saute the ham and green onion in 3 tablespoons butter until onion is tender. Add eggs and cook over medium heat until eggs are set, stir in mushrooms and cheese mixture. Spoon into a greased 13 x 9 x 2 inch casserole dish.
- Combine topping ingredients, sprinkle evenly over casserole.
- Bake uncovered for 30 minutes.
