I've been making these pies for years, so lots of friends and family now have the recipe. If you can't find leeks, a sweet or mild onion works just as well. -Bonny Tillman, Acworth, Georgia

1/4 cup butter, cubed
4 cups sliced leeks (white portion only)
1/2 pound sliced fresh mushrooms
3 medium carrots, sliced
1/2 cup all-purpose flour
1-1/4 cups 2% milk
1-1/4 cups vegetable broth
1-3/4 cups cubed fully cooked ham
2 tablespoons minced fresh parsley
1/4 to 1/2 teaspoon ground nutmeg
Dash pepper
1 sheet frozen puff pastry, thawed
1 large egg, lightly beaten

Steps:

  • Preheat oven to 425°. In a large saucepan, heat butter over medium-high heat. Add leeks, mushrooms and carrots; cook and stir until tender., Stir in flour until blended. Gradually stir in milk and broth. Bring to a boil over medium heat, stirring constantly; cook and stir or until thickened, about 2 minutes. Remove from heat; stir in ham, parsley, nutmeg and pepper., On a lightly floured surface, unfold puff pastry; roll to 1/4-in. thickness. Using a 10-oz. ramekin as a template, cut out 4 tops for pies. Fill 4 greased 10-oz. ramekins with leek mixture; top with pastry. Cut slits in pastry. Brush tops with egg., Bake 18-22 minutes or until golden brown. Let stand 5 minutes before serving.

CREAMY LEEK, POTATO & HAM PIE

Make your own shortcrust pastry then fill with sweet leeks, Lancashire cheese, cooked ham and a chive and crème fraîche sauce

120g butter , cut into cubes
300g plain flour , plus extra for dusting
good pinch of salt
600g small floury potato , roughly the same size
2 tbsp olive oil
1 onion , finely chopped
500g leek , cleaned and roughly chopped
3 garlic cloves , finely chopped
3 tbsp snipped chive
150ml half-fat crème fraîche
200g Lancashire cheese , grated
200g thinly sliced ham (we used Italian cooked ham)
1 medium egg , beaten

Steps:

  • First, make the pastry. Put the butter in a bowl with the flour and salt. Using your fingertips, rub the butter into the flour until the mixture resembles coarse breadcrumbs. Add about 6 tbsp water to the mixture and use a knife to mix together until you have a firm dough. Cut the dough in half and shape each into a flat disc. Wrap in cling film and put in the fridge while you make the filling.
  • Put the potatoes in a medium saucepan and cover with water. Bring to the boil and simmer for 5-7 mins until partcooked. Drain well and allow to cool.
  • Heat the oil in a large saucepan. Add the onion and leeks, and gently cook for 10-15 mins until they are very tender, being careful not to brown them. Add the garlic and cook for a few mins more, then remove from the heat, tip into a bowl and allow to cool. Stir in the chives.
  • Heat oven to 180C/160C fan/gas 4. Put a baking tray in the oven to preheat. Roll out 1 disc of the pastry on a lightly floured surface to 5mm thick. Use this to line a 24cm round x 4cm deep pie tin, leaving any excess pastry to overhang the tin. Prick the pastry all over with a fork, place on the heated baking tray and bake for 10-12 mins. Return the baking tray to the oven.
  • Slice the cooled potatoes into very thin rounds. Start to assemble the pie by arranging half of the potatoes in the base, then top with half the leeks, half the crème fraîche dotted over the top and half the cheese. Arrange half the ham on top, then repeat again with all the remaining ingredients.
  • Roll out the remaining disc of pastry to about a 26cm circle. Brush the top edge of the pastry in the tin with the beaten egg. Lay the circle of pastry over the top and trim the edges, crimping with your fingertips or a fork to seal. Brush all over with the beaten egg and decorate the top with any leftover pastry cut into leaves or a decoration of your choice.
  • Place on the hot baking tray on the lowest shelf and bake for 45 mins until golden. Set aside for 15 mins to cool in the tin before transferring to a wire rack to cool. Cut into wedges and serve.

1 cup extra-virgin olive oil
2 leeks, white part only, cut into 1/4-inch dice
Kosher salt
3 Yukon gold potatoes, peeled, cut into 1/2-inch dice
Pinch crushed red pepper
1/2 pound ham steak, cut into 1/2-inch dice
8 large eggs
1/2 cup grated Parmigiano
2 cups mesclun mix or mixed greens
2 tablespoons red wine vinegar

Steps:

  • Preheat the oven to 350 degrees F.
  • Coat a 12-inch nonstick saute pan with 3/4 cup oil, add the leeks to the pan, season with salt and bring to a medium heat. Cook until the leeks are starting to soften and are very aromatic, 5 to 6 minutes. Toss in the potatoes, season with a little more salt and the crushed red pepper, about 3 minutes. Add the ham and the remaining 1/4 cup of oil. Cook, stirring occasionally to be sure the potatoes do not stick to the bottom of the pan, until the potatoes start to soften, 15 to 18 minutes.
  • Meanwhile, beat the eggs with about 2 tablespoons water to a smooth consistency in a bowl, then add a heavy pinch of salt and half the grated cheese and beat together until the eggs and cheese are a smooth, homogeneous mixture.
  • Using a colander or mesh strainer, carefully strain out the excess olive oil from the potato-leek mixture and reserve. Return the potato-leek mixture to the pan and stir in the eggs. Cook over medium heat, stirring occasionally, until the eggs start to cook around the outside edges of the pan. Transfer the pan to the oven and bake until the eggs are cooked through, about 18 minutes.
  • Remove the pan from the oven. Place a snug fitting lid or a baking sheet on the pan, then hold the handle of the lid, swing the pan and flip the frittata onto the pan lid. Commit to it! It's fun! Slide the frittata onto a plate. You can serve this hot or at room temperature.
  • Toss the mixed greens with the red wine vinegar, 2 tablespoons of the reserved potato-leek oil and a pinch of salt in a bowl. Serve with slices of the frittata.
  • You gotta break some eggs to make frittata!

1 large onion, finely chopped
3 leeks, finely sliced
2 large potatoes, cut into small cubes
2 tablespoons plain flour
300 ml chicken stock or 300 ml ham stock
2 teaspoons coarse grain mustard
200 g cooked ham, shredded
375 g puff pastry
1 eggs, beaten, to glaze or 1 milk, to glaze
100 ml double cream

Steps:

  • Melt the butter in a large frying pan, add the onion and leeks first, and then the potatoes after a few minutes, cook until soft.
  • Add the flour and then the stock and stir together well. Turn down the heat and add the crème fraiche, mustard and ham. Season to taste and the add ingredients to a pie dish.
  • Dust a little flour on the surface and roll out the puff pastry, add it to the top of the pie and trim the edges. Use a fork to press down the edges and cut a few slits to allow air to escape. Brush the pastry will egg and cook for 30 minutes until golden (220C/Fan 200C/Gas 7).
  • The pie may be served with any extra vegetables from your box such as spring greens, carrots or savoy cabbage.

500g (2 large) waxy potatoes
1 tbsp olive oil
1 bay leaf
1 tbsp butter
2 leeks , halved and cut into ½ cm thick slices
1 onion , chopped
grating of nutmeg
1 tsp Dijon mustard
1 tsp wholegrain mustard
20g parmesan or vegetarian alternative, grated
20g mature cheddar
250g melting cheese , like doux de montagne, ogleshield, or reblochon, sliced (use vegetarian if needed)
250g plain flour , plus extra for dusting
140g cold butter , plus extra for the dish
2 tsp vodka
2-4 tbsp iced water
1 egg , beaten, to glaze

Steps:

  • To make the pastry, sieve the flour into a large mixing bowl and add 1 tsp sea salt. Coarsely grate in the cold butter, then use your fingertips to work into the flour until it resembles breadcrumbs. Pour over the vodka and use a butter knife to mix it in, then pour over 2 tbsp cold water and stir again with the knife. If you need to, add a little more water until it comes together as a dough, about 1-2 tbsp. Lightly knead the pastry to a smooth dough in the bowl, dust lightly with flour and wrap in baking parchment. Rest for at least 30 mins.
  • Peel and cut the potatoes into 5mm- thick slices and put them in a lidded saucepan. Cover with cold water, add a generous pinch of salt, bring to the boil with the lid on, then lower to a simmer and cook for 8-10 mins until just tender. Drain and leave to steam-dry.
  • In a large non-stick frying pan, heat the olive oil, bay leaf and butter together over a medium heat, then add the leek and onion. Season well and add a good grating of nutmeg. Cook, stirring, for 8-10 mins, until softened. Add about 100ml water, and cook until most of it has evaporated. Discard the bay leaf and stir in both the mustards and parmesan. Set aside to cool. Butter and flour a 20cm round pie dish.
  • Roll ¾ of the pastry out on a lightly floured surface in a circle larger than the pie dish, then line the dish. Roll the rest into a large circle for the lid and chill both for 10 mins. Heat the oven to 200C/180C fan/gas 6.
  • Spoon a layer of the leek mixture into the lined dish, grate over some cheddar and top with a layer of potatoes and the melting cheese slices. Repeat the layering until you have filled the pie dish - press down to compact it.
  • Brush some of the egg around the edges, top with the pastry lid and crimp together. Egg wash the lid, scatter over some sea salt and cut two slits in the lid. Bake for 45-50 mins until golden.
  • Remove from the oven and allow to sit for 10 mins, then slice and serve with a watercress salad, if you like.

3 medium potatoes (about 450g), peeled and thinly sliced
butter , for the dish
1 garlic clove , crushed
2 trimmed leeks (about 200g), halved and sliced
350g Cheddar cheese (we used HS Bourne), grated
500ml double cream

Steps:

  • Heat oven to 180C/160C fan/gas 4. Bring a pan of salted water to the boil and cook the potato slices for 3 mins. Drain and allow to cool.
  • Butter a shallow ovenproof dish and spread over the garlic. Layer the potatoes, leeks and cheese, season well, then pour over the cream. Cover with foil and bake for 1 hr.
  • Remove the foil and continue cooking for 20 mins or until the top is browned and the potatoes are cooked through. Leave to stand for 5 mins before serving.

This bake is a great way to use up leftover roast potatoes or gammon and can be made-ahead and frozen for convenience

2 tbsp olive oil
400g chicken breast , cut into small chunks
140g thick-sliced ham , roughly chopped
roughly leftover roast potato , large ones halved
2 leeks , trimmed and sliced
1 heaped tbsp plain flour , plus extra for dusting
200ml white wine
400ml chicken stock
3 heaped tbsp crème fraîche
375g shortcrust pastry sheet (use fresh if you're freezing the pie)
beaten egg , to glaze

Steps:

  • Heat half the oil in a large frying pan and brown the chicken for about 5 mins. Tip into a 22 x 28cm ovenproof pie dish, then evenly scatter over the ham and roast potatoes. Heat the remaining oil and soften the leeks for about 5 mins, then stir in the flour for 1 min.
  • Pour in the wine and stock. Bring to the boil and, stirring continuously, boil rapidly to reduce to a thick sauce. Take off the heat, then stir in the crème fraîche and seasoning. Pour over the pie filling and leave to cool.
  • Unroll the pastry and cut off a small strip to make decorations (if you like). Roll the remainder to fit the dish and place on top of the pie. Use a fork to crimp the edges and press the pastry to the edge of the dish. Make a small hole in the centre, then cover well with cling film. Freeze for up to 3 months. For best results, defrost at room temperature for 8 hrs.
  • Heat oven to 200C/180C fan/gas 6. Brush pie with egg to glaze (making sure the steam hole hasn't sealed up). Cook for 30-40 mins, until golden and hot through.

This warming winter recipe is a great way to use up the Christmas leftovers, and so easy to make. Perfect for Boxing Day

400g leftover cooked potato (roasted or boiled - see step 1)
1 leek , finely sliced
2heaped tbsp horseradish sauce
5heaped tbsp crème fraîche
100g cooked ham , chopped into small pieces
pinch of dried thyme
375g packet ready-rolled puff pastry
1 tbsp milk

Steps:

  • To make the filling, preheat the oven to 220C/gas 7/fan 200C. Slice your potato leftovers as best you can, then blanch the leek in boiling water for 3 minutes and drain. If you don't have any leftovers, peel, halve and thickly slice a baking potato, then boil for 8 minutes, adding the sliced leek for the last 3 minutes. Drain. In a large bowl, mix the potato, leek, horseradish sauce, crème fraîche, ham and thyme, mushing up the potato slightly, then season well.
  • To make the pie, unroll the pastry rectangle onto a baking sheet. Pile the filling along the length of one half of the pastry, leaving a small gap on the outside edge. Brush milk round the edges of the pastry. Fold the uncovered side over the filling, then press the pastry edges together well, using the prongs of a fork, to seal. Make a few 6cm diagonal slashes in the top. (The pie can now be frozen for up to a month.)
  • To bake the pie, brush the pie with the remaining milk and bake for 30 minutes until golden brown. Leave to relax for a couple of minutes then cut into slices and serve with a green salad.

2 lbs potatoes
4 medium leeks
1 tablespoon flour
salt and pepper
1 teaspoon nutmeg
2 cups hot milk
1 -2 tablespoon butter

Steps:

  • Peel the potatoes and slice thinly.
  • Wash the leeks thoroughly and slice thinly discarding about the last 2 inches of the green tops.
  • Mix together the flour, salt, pepper and nutmeg.
  • Grease a casserole dish.
  • Put in alternate layers of potatoes and leeks sprinkling each layer with the seasoned flour and small chips of butter.
  • The top layer should be potatoes.
  • Dot the top with butter, pour hot milk on top of the casserole.
  • Bake in the oven uncovered (gas 5, 375°F, 190°C.) for about 1 hour.

6 large potatoes (3 pounds)
1 (10 ounce) package pie crust mix
6 ounces cheddar cheese (grated)
3 tablespoons all-purpose flour
1 large onion, slice
1 -2 cup leftover ham, pieces (cubed)
2 garlic cloves, minced
1 1/4 teaspoons salt
1/4 teaspoon pepper
1/8 teaspoon ground nutmeg
1 cup milk
1 tablespoon butter or 1 tablespoon margarine
1 egg yolk
1/2 cup half-and-half cream

Steps:

  • Scrub potatoes, pare and slice very thin.
  • Put potatoes in a large glass bowl and cover with cold water; set aside.
  • Prepare pie crust mix according to package directions; wrap in plastic and set aside.
  • Using a food processor or food grater, coarsely grate Cheddar cheese. Put in a small bowl; add flour and toss to mix well.
  • Preheat oven to 350°F.
  • Lightly grease a shallow two quart oval, round or rectangular baking dish.
  • Drain potatoes thoroughly; pat dry with paper towels. Alternately layer potatoes with sliced onion, ham and cheese-flour mixture, sprinkling with garlic, salt, pepper and nutmeg as you layer.
  • Pour on milk; dot with butter and set aside.
  • On a lightly floured surface, roll pastry out to a 15 x 11 inch rectangle, or a 13 inch circle, depending on the size and shape of your baking dish. Gently lift pastry and place on baking dish to cover potato mixture completely.
  • Turn edges of pastry under and flute decoratively with your fingers. Cut four gashes in pastry to allow steam to escape while baking.
  • Mix egg yolk with one tablespoon of the half and half cream; brush over the pastry to glaze.
  • Bake 60 minutes or until pstry is golden brown and potatoes are done.
  • Remove from oven; pour remaining half and half cream through the vents in the top of the pastry. Let stand 15 minutes before serving.

BLACKBIRD PIE......OR CHICKEN, LEEK AND POTATO PIE!



Blackbird Pie......or Chicken, Leek and Potato Pie! image

Yes, it's an old-fashioned Blackbird pie! This is made with leftovers & tasted so good that I decided to post the recipe or is it an assembly job? Very easy, I am almost embarrassed to say that I made it with ready-made pastry. Well, it was after all a quick lunch with an assault on the fridge! This is what I found, mashed potato, cooked leeks & some cooked chicken breasts. There was an open packet of ham, and that completed the pie. The only vital item is a blackbird pie funnel, oh yes & some ready-made pastry & leftovers.

2 (225 g) packets shortcrust pastry
500 g mashed potatoes
2 cooked chicken breasts, cut into small pieces
4 -6 cooked leeks
50 g cooked ham, cut into dice
3 -4 tablespoons creme fraiche or 2 -3 tablespoons cream
1/2 teaspoon mixed herbs
salt
pepper
1 egg, beaten with a little
milk

Steps:

  • Pre-heat oven to 200C/400°F.
  • Grease and line a pie dish with baking paper.
  • Mix together your mashed potato, leeks, chicken, ham, crème fraiche & seasonings to taste. Set to one side.
  • Roll out your pastry and line the base of the pie dish - allow the edges to extend over the edge of the pie dish.
  • Put you filling into the pastry pie case - and sit your blackbird or pie funnel in the middle, pushing it down slightly so it is not too high.
  • Turn back the pastry edges and make a raised crust all the way around. Dampen the piecrust with some of the beaten egg & milk mixture.
  • Roll out your pastry for the lid - ease it over the top gently breaking OR cutting a hole for the blackbird to poke through!
  • Turn back the edges of the pastry lid and neatly crimp the top together with the bottom - using a fork to help you if necessary.
  • Brush the beaten egg and milk glaze over the top and bake in the pre-heated oven for about 45 minutes.
  • Take out and allow to cool very slightly before serving with fresh vegetables & gravy. This is also wonderful cold as picnic food.

350g new potatoes
375g ready-rolled puff pastry
100g crème fraîche
50g thinly sliced ham
125g brie or camembert cheese, halved and sliced
green salad , to serve (optional)

Steps:

  • Boil the potatoes in salted water for 8-10 mins, until tender but still firm. Leave to cool, then slice.
  • Heat the oven to 200C/180C fan/ gas 6. Unroll the pastry with its baking parchment on a baking tray. Reserve 1 tbsp of the crème fraîche, then spread the rest over the pastry, leaving a 2cm border around the edge. Season. Layer the potatoes, ham and cheese over half of the pastry, seasoning the potatoes as you go.
  • Fold over the other half of the pastry and use a fork to seal the edges. Trim with a knife for a neat finish - the pie should look like a big sausage roll. Mix a little water into the reserved crème fraîche, then brush all over the pastry. Make a few cuts along the length, then bake for 35-40 mins until golden. Leave to cool for 10 mins, then serve with a salad, if you like.

  • Sift over the flour with a couple of pinches of salt, then sprinkle over 2 tbsp chilled water and mix witha palette knife or dinner knife to a rough dough. Add a little more water if needed to bring it together, then tip out onto a lightly floured work surface and shape it into a disc with your hands. Handle it as little as possible. The pastry should still have visible flecks of butter through it. Wrap in cling film, then chill.
  • To make the filling, put the potatoes into a pan of boiling water and cook for around 5 minutes or until not quite done. Drain and leave to steam dry in the colander for a few minutes. Melt the butter in a large sauté pan or saucepan, then add the leeks with some salt. Cook, stirring, for around 5 minutes or until softened but not coloured, then stir in the mace and flour until the leeks are evenly coated. Cook,stirring often, for 2-3 minutes until the flour starts to smell biscuitty. Stir in the mustard and add the bay leaves. Gradually, over a medium-high heat and stirring all the time, add the chicken stock. It will thicken as it cooks. It should be thick enough to thickly coat the back of a spoon – if it looks too thin, stop adding stock and let it bubble and thicken while stirring, then continue adding stock.
  • Once all the stock has been added and the sauce is the right thickness, stir through the cream and bubble for a minute or so. Stir through the potatoes and the ham, then taste it – you probably won’t need to add salt but it will need some pepper. Transfer to a 1.5 litre ovenproof pie dish and leave to cool completely, loosely covered with cling film.
