Hash Brown Egg Casserole with Ham image

This Cheesy Hashbrown Breakfast Casserole is everything you need on Christmas morning! (Or anytime you have guests for breakfast!) Frozen hashbrowns are baked til crispy, then topped with eggs, cheese, and black forest ham. It's an overnight recipe, so you have more time for stockings in the morning! Make ahead breakfasts are always a win at the holidays.

Provided by Karen

Categories     Breakfast

Time 1h25m

Number Of Ingredients 13

1 (30-ounce) package frozen shredded hashbrowns
1/2 cup melted butter (1 stick)
salt and pepper
1 & 1/2 cups shredded Monterey Jack cheese (packed )
1 & 1/2 cups shredded Cheddar cheese (packed )
1 & 1/2 cups black forest ham* (cut into bite-size pieces)
8 large eggs
1 & 1/3 cups evaporated milk OR cream
1 teaspoon seasoned salt (I like Lawry's)
1/2 teaspoon kosher salt (use 1/4 if all you have is table salt)
1/2 teaspoon pepper
1/4 teaspoon dry mustard powder (optional)
1/4 teaspoon onion powder (optional)

Steps:

  • Preheat your oven to 400 degrees F.
  • Spray a 9x13 inch pan with nonstick spray, or grease with butter.
  • Dump the bag of frozen hashbrowns into the pan. (There is no need to thaw first.)
  • Melt a stick of butter in a small bowl, and pour evenly over the potatoes. Sprinkle the potatoes with salt and pepper. Use a spoon to gently toss it all together, then spread it out so that it's even.
  • Bake at 400 degrees for 25-30 minutes, until the potatoes are tender and lightly browned on top. You can even nab a forkful to make sure they are done if you like.
  • Remove the casserole and reduce the oven temperature to 350.
  • Layer 1 and 1/2 cups each Monterey Jack and Cheddar cheese over the top of the potatoes (make sure you pack in your cheese! Don't skimp now!) Add the ham. You can either leave it layered or use a spoon to gently toss the cheese and potatoes and ham together. Either way is fine. (I like to toss for a more even distribution.)
  • In a large bowl or stand mixer, whisk together 8 eggs, 1 and 1/3 cups evaporated milk OR cream, 1 teaspoon seasoned salt, 1/2 teaspoon kosher salt (use less if all you have is table salt!), 1/2 teaspoon pepper, 1/4 teaspoon dry mustard, and 1/4 teaspoon onion powder. Beat well.
  • Pour the egg mixture evenly over the top of the casserole, making sure everything gets wet.
  • Bake at 350 degrees for about 40 minutes. It is done when bubbly. The edges should be starting to brown and the center should not wiggle when you shake the pan.
  • If the center of the casserole looks very wobbly but the top is starting to brown too much, cover with foil for the last few minutes of baking.

4 TBS butter (divided)
3/4 cup chopped Vidalia onion
Salt & pepper
20 oz bag of shredded potatoes (from the freezer section)
4 eggs
3/4 cup milk
2 cups chopped ham
2 scallions chopped (or chives)
1 cup your favorite cheese (shredded (Cheddar, Monterey Jack, Swiss))

  • Preheat oven to 375 and spray a XX baking dish.
  • Melt 2 TBS butter and saute the onions until they are cooked through (about 4 minutes).
  • Add in the remaining 2 TBS butter and Hash Browns and saute for 5 minutes.
  • Season well with salt & pepper.
  • Remove from heat and add in ham, cheese and scallions and toss until incorporated.
  • Scrape into your baking dish.
  • Whisk eggs and milk in a small bowl, season with s&p.
  • Pour egg/milk mixture slowly and evenly over-top and if you choose sprinkle on some additional cheese, ham and s&p.
  • Bake for 35 minutes or until firm and brown around the edges.
  • Allow the casserole to rest for 10 minutes before cutting it into squares.
  • This can also be prepared, covered and stored in the fridge overnight before cooking.
  • **It is not necessary to saute the potatoes...You can choose to simply add them and 2 TBD melted butter to the onions and mix. I like a little more color on the hash browns, which is why I choose to do that. Either way tastes great!

COUNTRY HAM HASH RECIPE

Country Ham Hash Recipe image

Once you start cooking this Country Ham Hash, the inviting aromas will have your sleepy overnight guests hurrying down the stairs and into the kitchen. You can get a head start on this breakfast side dish by chopping all of the vegetables a day in advance. Store the potato cubes in water to prevent browning, and pat them dry with paper towels before adding them to the skillet so they will cook up nice and crisp. If you're prepping everything day of, peel the russet potatoes and pat them with a paper towel to absorb excess moisture while the ham sizzles in the skillet. Transfer the ham to a separate plate, then add the potatoes, onion, and bell pepper to the skillet. Cook until the potatoes are tender, adding in garlic, pepper, and salt. While the mixture cooks go ahead and chop the cooked ham, stirring it into the potatoes once they are tender. Country Ham Hash is delicious for a holiday brunch, but it also makes a satisfying and quick meal for the family during the week. Add a tossed green salad to round out the meal.

Provided by Emily Nabors Hall

Categories     Breakfast

Time 40m

Yield Serves 8

Number Of Ingredients 9

8 ounces sliced country ham
3 tablespoons unsalted butter
1 1/2 pounds russet potatoes, peeled and cut into 1/2-inch pieces
1 cup chopped red onion (from 1 medium onion)
1 cup chopped red or orange bell pepper (from 1 medium bell pepper)
1 teaspoon chopped garlic (from 1 large garlic clove)
1/2 teaspoon black pepper
1/4 teaspoon kosher salt
1 tablespoon chopped fresh rosemary

Steps:

  • Cook ham in a large skillet over medium, turning occasionally, until golden brown, about 10 minutes. Transfer ham to a plate lined with paper towels.
  • Return skillet to medium-high, and melt butter in skillet. Add potatoes, onion, and bell pepper, spreading in an even layer. Cover and cook until potatoes soften, about 8 minutes. Uncover and stir in garlic, pepper, and salt. Cook, uncovered, without stirring, 2 minutes. Stir and continue cooking in 2-minute intervals, stirring after each interval, until potatoes are golden, about 15 minutes total.
  • Chop cooked ham, and stir into potato mixture. Cook, stirring occasionally, until warmed and lightly browned, 2 to 3 minutes. Sprinkle with rosemary, and serve immediately.

HAM HASH BROWNS

Ham Hash Browns image

This one is from our local/state paper and sounds like a good way to use up left over ham from Christmas - suggested you serve a poached egg. Times are estimated.

Provided by ImPat

Categories     Breakfast

Time 30m

Yield 4 serving(s)

Number Of Ingredients 9

4 potatoes (medium)
1/2 cup milk
30 g butter
salt (to taste)
fresh ground pepper (to taste)
2 white onions (small finely chopped, I would use spring onion)
500 g ham (without fat, finely chopped or processed)
30 g butter
2 tablespoons parsley

Steps:

  • Peel the potatoes and boil until they are tender and then mash them finely and add the milk, butter and salt and pepper and then fold through the onions and ham.
  • Melt the second lot of butter in a medium pan and add the mixture and cook over a moderate heat until the base is golden brown and then turn it over; if it breaks up a bit fear not and cook until the second side is also golden and crisp.
  • Break into sections and serve with a scatter of parsley.
