3 whole acorn squash, approximately 8 cups when cooked
6 shallots, 1 cup diced, 3 left whole and peeled
6 garlic cloves, peeled
3 tablespoons olive oil, plus 1/3 cup extra-virgin olive oil
1 tablespoon salt
1 tablespoon pepper, freshly cracked, plus more for seasoning
1 stick unsalted butter, in all
4 cups chicken stock, low-sodium
1/4 teaspoon cayenne
1/4 teaspoon white pepper
1 teaspoon sage, dry
1 teaspoon savory
1 cup heavy cream
1 tablespoon Worcestershire sauce
1/3 cup grated Parmesan

Steps:

  • Preheat the oven to 350 degrees F. Cut the squash in half on the equator and remove the seeds with a spoon. Cut a flat spot on each end so the squash will sit flat. Line a baking sheet with aluminum foil and arrange the squash, cut side up. To 3 of the squash halves, add a peeled shallot and to the other 3 add 2 garlic cloves on each. Drizzle with 2 tablespoons of olive oil and season with 1 tablespoon each of the salt and freshly cracked pepper. Roast in the hot oven until very tender and starting to caramelize and collapse, approximately 1 hour. Remove from oven and when cool enough to handle, remove the squash from the skin. Reserve the roasted shallots and garlic with the squash. Can be done ahead.
  • In a large Dutch oven, heat 1 tablespoon of the olive oil and 2 tablespoons of the butter over medium-high heat and when the butter is starting to foam, add the raw diced shallots and saute until they are starting to caramelize, about 5 to 6 minutes. Deglaze with 1/2 cup of the chicken stock and stir to remove any fond. Reduce the heat to medium-low and add in the reserved squash, roasted shallots and garlic and then the remaining chicken stock. Stir to combine, then puree with a stick blender. The mixture will be very thick. Add in the cayenne, white pepper and the herbs. Stir in the cream and Worcestershire sauce and heat slowly over medium-low heat. When the mixture comes to a slow simmer, mix again with the stick blender and stir in 1/4 cup of the Parmesan and turn heat to low. Serve with a fresh crack of black pepper, a nice drizzle of extra-virgin olive oil and a light sprinkle of remaining Parmesan. Ladle into soup bowls and serve.

3 to 4 pounds butternut squash, peeled and seeded
2 yellow onions
2 McIntosh apples, peeled and cored
3 tablespoons good olive oil
Kosher salt and freshly ground black pepper
2 to 4 cups chicken stock, preferably homemade
1/2 teaspoon good curry powder
Scallions, white and green parts, trimmed and sliced diagonally
Flaked sweetened coconut, lightly toasted
Roasted salted cashews, toasted and chopped
Diced banana

Steps:

  • Preheat the oven to 425 degrees F. Cut the butternut squash, onions and apples in 1-inch cubes. Place them on a sheet pan and toss with the olive oil, 1 teaspoon salt and 1/2 teaspoon pepper. Divide the squash mixture between 2 sheet pans and spread it in a single layer. Roast for 35 to 45 minutes, until very tender.
  • Meanwhile, heat the chicken stock to a simmer. When the vegetables are done, put them through a food mill fitted with the medium blade. (Alternatively, you can place the roasted vegetables in batches in a food processor fitted with the steel blade. Add some of the chicken stock and coarsely puree.) When all of the vegetables are processed, place them in a large pot and add enough chicken stock to make a thick soup. Add the curry powder, 1 teaspoon salt and 1/2 teaspoon pepper. Taste for seasonings to be sure there's enough salt and pepper to bring out the curry flavor. Reheat and serve hot with condiments either on the side or on top of each serving.

Steps:

  • Place squash, cut side down, in a greased shallow baking pan. Bake at 350° for 35-40 minutes or until the squash is almost tender. , In a large saucepan, saute onion and curry powder in butter until onion is tender. Remove from the heat; set aside. Carefully scoop out squash; add pulp to saucepan. Gradually add broth. Cook over medium heat for 15-20 minutes or until squash is very tender. Cool slightly., In a food processor, process the squash mixture until smooth; return to saucepan. Stir in the cream, nutmeg, salt and pepper. Cook over low heat until heated through (do not boil). Garnish with bacon if desired.

1 delicata squash
1 acorn squash
2 tablespoons butter
1 tablespoon olive oil
1 sweet onion, medium chopped
1 -2 garlic clove
3/4 teaspoon ginger puree
1 -2 teaspoon mild curry powder
2 tablespoons flour
36 ounces chicken stock
1 tablespoon honey
1/4 teaspoon fresh nutmeg
1/2 cup cream, 18% m.f
salt (I use Bolivian rose)
cayenne pepper
2 tablespoons heavy cream (like Devonshire or creme fresh)
1/2 teaspoon cinnamon

Steps:

  • Split squash in half lengthwise, scrape and discard seeds and stringy membrane.
  • Lightly oil baking sheet and place squash halves flesh side down, roast in 425 oven for 40- 50 minutes, depending on how much caramelization you prefer.
  • Let cool, meanwhile.
  • Melt butter and add olive oil in a medium sized dutch oven.
  • Add onions, garlic and ginger and sautee over medium low heat for 30 minutes, or until light brown.
  • Mix in flour and curry powder, continue stiring for 2 minutes.
  • Add in the chicken stock, honey and nutmeg.
  • Skin the cooled squash, chop and add to pot.
  • Once the soup is mixed well, continue cooking over medium low heat for 35 - 45 minutes, you want the flavors to meld.
  • Puree with emersion blender or food processor until smooth.
  • Stir in 18%m.f. cream.
  • Salt and cayenne pepper to taste.
  • Combine creme fresh and cinnamon.
  • To serve, top with a dolop of the cinnamon thick cream.

1 butternut squash (about 1-3/4 pounds)
1 large onion, chopped
2 garlic cloves, minced
2 tablespoons canola oil
1 tablespoon all-purpose flour
1 teaspoon salt
1 teaspoon curry powder
1/8 teaspoon cayenne pepper
5 cups chicken broth
1 bay leaf
CILANTO CREAM TOPPING:
1/2 cup sour cream
1/4 cup heavy whipping cream
1/4 cup minced fresh cilantro

Steps:

  • Cut squash in half lengthwise; discard seeds. Place squash cut side down in a greased or foil-lined baking pan. Bake, uncovered, at 400° for 40-50 minutes or until tender. When cool enough to handle, scoop out pulp; set aside., In a large saucepan, saute onion and garlic in oil until tender. Add the flour, salt, curry powder and cayenne until blended. Stir in broth. Add bay leaf. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; simmer, uncovered, for 20 minutes. Discard bay leaf. Cool to room temperature., In a blender, combine half of the broth mixture and squash; cover and process until smooth. Repeat with remaining broth mixture and squash. Return to the saucepan; heat through. Combine the topping ingredients; place a dollop on each serving.

1 acorn squash
1 tablespoon extra-virgin olive oil
1 small white onion, chopped
½ tablespoon freshly minced garlic
½ tablespoon freshly minced ginger
1 large Golden Delicious apple - peeled, cored, and chopped
1 (14.5 ounce) can fat-free chicken broth, divided
½ tablespoon curry powder
½ teaspoon ground cinnamon
½ teaspoon ground cardamom
1 pinch cayenne pepper
1 pinch salt and ground black pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Cut acorn squash in half and remove seeds and pulp. Place cut-side down in a baking dish; add about 1 inch of water.
  • Roast in the preheated oven until a knife can be easily inserted, 20 to 30 minutes.
  • While squash roasts, heat oil in a medium saucepan over medium-high heat. Saute onion until almost translucent, about 5 minutes. Mix in garlic and ginger. Add apple and cook, stirring regularly to keep from sticking, until it starts to get mushy, 7 to 10 minutes. Pour in 1/4 of the chicken broth. Add curry powder, cinnamon, cardamom, cayenne, salt, and pepper.
  • Remove squash from the oven and let cool enough to handle, about 5 minutes. Remove skin carefully, chop flesh roughly with a knife, and mash some of the flesh.
  • Add squash to the pot with remaining chicken broth. Simmer soup over medium-low heat, stirring occasionally, for 5 to 10 minutes. Taste and adjust seasoning as needed. Pour into large bowls and serve.

Subtly spicy and decidedly comforting, this Indian-influenced acorn squash soup makes a great autumn supper with a slice of crusty bread. The recipe came to me when my husband was in bed with a nasty cold, and my refrigerator was almost empty. All I had was an acorn squash, half an onion, peppers from our back porch garden and spices in the cupboard. The soup didn't exactly restore my husband to full health (at least not immediately!), but he did enjoy the soup even with his diminished sense of taste and smell.

1 acorn squash (small to medium)
1 onion (small)
4 anaheim chilies (or whatever mild chili peppers you have at hand)
1 hot green chili pepper
10 -20 curry leaves (as many as you want, really)
2 teaspoons cumin seeds
1/2 tablespoon butter (or vegetable oil for vegetarians)

Steps:

  • Remove the pulp from the acorn squash and cut into large chunks.
  • Slice the onion. Cut the anaheim peppers in half and remove the seeds. Make a slit on the hot green chili, from top to bottom. (This will release the flavor of the green chili, without making the soup too hot.).
  • Boil about 3 cups of water in a pot and cook the squash pieces until tender. Keep the cooking liquid.
  • While the squash pieces are cooking, melt the butter in another pot. Fry the onions until soft.
  • Add curry leaves, cumin and hot green chili and fry until flagrant, on medium-low heat.
  • Add the peppers and cook until tender, stirring occasionally to prevent the onions from burning.
  • When the squash pieces are cooked through, discard the skin and transfer the "meat" to the other pot.
  • Add a ladleful of the cooking liquid to the pot, and process everything into a smooth mixture, using a blender. Adjust the texture by adding more of the cooking liquid, if necessary.
  • Season generously with salt and pepper.

  • Move the vegetables to the sides of the pot. Scoop the cream from the top of the unshaken can of coconut milk and add to the center of the pot along with the curry paste. Mix the curry paste into the coconut cream and sauté until fragrant. Add the remaining coconut milk and salt.
