Linguine with Mushrooms & Ham image

This is one of our favorite pasta dishes. I use honey ham from the deli and it really gives the dish good flavor. For reheating leftovers, add a little extra cream and simmer over medium low heat on stove.

1 (8 ounce) package linguine pasta
1 tablespoon butter
1 onion, finely chopped
3 cloves garlic, minced
1 cup sliced fresh mushrooms
1 ½ cups whipping cream
¼ pound cooked ham, julienned
1 teaspoon fresh basil leaves, chopped
freshly ground black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Add linguine pasta, and cook for 8 to 10 minutes, or until al dente; drain.
  • Melt butter in a saute pan over medium heat. Cook and stir onion, garlic, and mushrooms in butter until tender. Reduce heat, and slowly stir in cream. Continue cooking until sauce has thickened, add ham and basil, and simmer for 10 more minutes.
  • In a large bowl, toss linguine with cream sauce, and season with freshly ground black pepper.

2 large eggs
1/4 cup whole milk
1 cup all-purpose flour
1/4 cup finely sliced chives
1/4 teaspoon freshly grated nutmeg
2 tablespoons unsalted butter
1 large yellow onion, sliced
8 ounces ham steak, diced
1 head white or green cabbage, sliced
1 tablespoon ground coriander
1 tablespoon crushed red pepper flakes
Kosher salt and freshly cracked pepper
One 12-ounce bottle wheat beer
1 1/2 cups turkey stock
1 cup sauerkraut
1/2 bunch parsley, roughly chopped or torn
4 tablespoons hot mustard

Steps:

  • For the dumplings: Whisk together the eggs and milk in a large bowl. Mix in the flour, chives and nutmeg. Set aside to rest until ready to use.
  • For the ham, cabbage and sauerkraut: Melt the butter in a large Dutch oven over medium-high heat. Add the onion and ham steak and cook until the onions begin to sweat, 5 to 6 minutes. Add the cabbage with the coriander, red pepper flakes and a large pinch of salt and cook until the cabbage begins to melt and break down, about 5 minutes. Stir in the beer, turkey stock and sauerkraut, bring to a simmer and cook for 30 minutes.
  • Bring large pot of salted water to boil. Spread the dumpling batter in a line down the back of a sheet tray or small cutting board. Dip a bench scraper in the boiling water, then use it to "cut" the dumplings into the pot, dipping the bench scraper in the boiling water in between each cut. Cook the dumplings until they begin to float to the surface, 2 to 3 minutes. Transfer the dumplings to the Dutch oven with the cabbage. Mix in the parsley and mustard and any additional salt and pepper if needed. Serve.

This is a light, delicate bread, topped with caramelized onions and cheese. Cubed ham makes a tasty addition. The dough for the bread is made in the ABM. Note: My ABM is older and takes 2 1/2 hours for the dough cycle and is included in the preparation time.

2 teaspoons bread machine yeast
3 1/4 cups flour
2 1/2 teaspoons gluten flour
1 1/3 teaspoons salt
1 1/3 tablespoons sugar
1 1/3 cups water (luke warm)
2 tablespoons melted butter
2 medium onions (cut into rings)
3/4 cup cubed ham
2 cups grated cheese
1 teaspoon italian seasoning
fresh coarse ground black pepper

Steps:

  • Place the ingredients into your ABM in the order specified for your machine. Set it on the dough cycle.
  • When the dough cycle has beeped, LEAVE the dough in the machine for another 30 minutes. It will continue to rise again.
  • Preheat your oven to 190°C Grease a 9 1/2 x 13 1/2 x 1/2 inch pan with some cooking spray or a little olive oil.
  • Tip out your dough onto a lightly floured work area and roll into a rectangle to fit baking pan. You will hear all the air bubbles popping as you roll.
  • Once the air bubbles are gone, place in pan, patting it into the corners.
  • Leave to rise for 15-20 minutes. While dough is rising prepare topping.
  • Melt butter in a large skillet and sauté the onion rings on medium heat until golden and caramelized, about 6-8 minutes. Set aside to cool slightly. Have your ham cubed and cheese grated and set aside. Now back to the dough.
  • Make indentations with forefinger approximately 1 inch apart all over dough.
  • Place caramelized onions evenly over dough. Scatter the ham over, and then sprinkle the cheese on top. Sprinkle with Italian seasoning and coarsely ground black pepper.
  • Bake at 190 degrees C for 15-18 minutes.

A puff pastry turnover is always a good way of using leftovers - adapt the recipe to whatever cheese you've got

250ml milk
1 tbsp each butter and flour, mixed to a paste, plus extra for dusting
140g button mushroom , cut into quarters
1 tbsp olive oil
140g ham , chopped into small pieces
85g leftover cheese (amount will vary according to type - go with your taste buds), cut into small pieces
1 tbsp chopped herbs - tarragon, parsley and chives all work well
500g block puff pastry
1 egg , beaten

Steps:

  • The first thing to do is to make a thick white sauce that will be the base of the turnover filling. Bring the milk to a simmer, then add the butter and flour paste. Whisk the paste into the simmering milk and allow it to boil for 3-4 mins, whisking gently all the time to prevent it from catching. You should now have a very thick white sauce. Cool the sauce in a bowl. Fry the mushrooms in the oil for 3-5 mins until golden, then leave to cool.
  • Place the ham, cheese and mushrooms into a bowl, then gradually add the white sauce until everything is well coated. Finally, add the herbs.
  • Roll out the pastry on a floured surface to about the thickness of a £1 coin and cut out 4 saucer-size rounds (about 18cm wide), re-rolling the trimmings if you need to. Brush the edges of each round with beaten egg. Spoon the mixture onto 1 side of each round, then fold over and seal the edges well. The turnovers can now be frozen for up to 1 month. Brush the turnover with the remaining egg, then chill for 30 mins.
  • Heat oven to 200C/180C fan/gas 6. Place the turnovers on a baking sheet and bake for about 35 mins until puffed up and golden. Leave to cool slightly and enjoy warm.

500g bag farfalle
50g butter, plus a little extra
200g small mushroom, halved
bunch spring onions, finely sliced
50g plain flour
500ml milk
140g thickly cut ham, chopped
140g mature cheddar, grated

Steps:

  • Cook the pasta according to pack instructions, then drain. Heat oven to 200C/fan 180C/gas 6, then melt a little butter in a large saucepan. Fry the mushrooms for a couple of mins, then scoop out and set aside. Use some kitchen paper to wipe out the pan.
  • Melt the remaining butter in the pan, then add most of the onions and soften for 1 min. Stir in the flour for another min, then gradually stir in the milk until you have a lump-free sauce. Increase the heat and bubble the sauce, stirring for a few mins to thicken. Turn off the heat, stir in the ham and most of the cheese, then season to taste.
  • Tip the pasta and mushrooms into a large ovenproof dish, then pour over the sauce and mix well in the dish. Scatter over the remaining cheese and spring onions, then bake for 10 mins until golden.

Dried shiitakes, normally rehydrated before using, are grated into a fine powder that dissolves and fortifies the broth with intense mushroom umami. Make the dumpling mixture while the stew cooks and allow it to rest in the fridge for more tender dumplings. 2 tablespoons extra-virgin olive oil
2 medium leeks (1 pound), white and light green parts only, thinly sliced (2 cups)

3 garlic cloves, minced
1 pound small white button or cremini mushrooms, quartered (5 1/2 cups)
8 ounces shiitake mushrooms, thinly sliced (about 3 cups)
2 carrots, thinly sliced (1 cup)
3 dried shiitake mushrooms, grated on a Microplane and stems discarded (1/3 cup)
1 tablespoon all-purpose flour
4 cups mushroom broth
3 thyme sprigs
2 tablespoons heavy cream or whole milk
Chopped chives, for garnish
1 1/2 cups/205 grams all-purpose flour
1 1/2 teaspoons kosher salt (Diamond Crystal)
1/2 teaspoon baking powder
1/4 teaspoon black pepper
1/4 teaspoon baking soda
1 large egg
1/2 cup/120 grams whole milk
3 tablespoons/45 grams butter, melted

Steps:

  • Prepare the mushrooms: In a large Dutch oven, melt 1 tablespoon of the butter in 1 tablespoon of the oil over medium-high. Add leeks, season with salt and pepper, and cook, stirring occasionally, until softened, 3 minutes. Stir in garlic until fragrant, 1 minute. Add fresh mushrooms, carrots, the remaining 2 tablespoons butter and 1 tablespoon oil, and season with salt and pepper. Reduce heat to medium and cook, stirring occasionally, until mushrooms are softened and lightly golden, about 5 minutes.
  • Stir in grated shiitake powder and flour until mushrooms are evenly coated, about 1 minute. Add broth, 2 cups of water and thyme, and bring to a boil over high. Reduce heat to medium and simmer, partially covered, for 10 minutes. Uncover and simmer until reduced and slightly thickened, about 5 to 10 minutes longer. Discard thyme sprigs, and stir in cream.
  • As the mushrooms simmer, make the dumplings: In a medium bowl, whisk flour, salt, baking powder, black pepper and baking soda until well combined. In a small bowl, whisk egg, milk and butter until well blended, then add to dry mixture and fold just until a dough forms. Refrigerate until ready to use.
  • Drop 12 equal spoonfuls of the dough into the pot, leaving some space in between. Cover and simmer gently over low heat until dumplings are puffed and cooked through, about 15 minutes. Divide among 4 bowls and garnish with chives.

Sauteed Mushrooms with Smoked Ham image

Traditionally, this flavorful sauté would be composed entirely of fresh cèpes (we know them better by their Italian name, porcini) gathered from the forests around Bordeaux. In this recipe, dried porcini mushrooms are supplemented with fresh large button mushrooms.

Number Of Ingredients 9

1 ounce dried porcini mushrooms*
4 tablespoons extra-virgin olive oil
1 1/4 pounds large button mushrooms, halved
1/2 cup finely chopped shallots
1/2 cup chopped fresh chives
1/3 cup finely chopped smoked ham (such as Black Forest)
2 large garlic cloves, minced
3 tablespoons fresh lemon juice
Fresh parsley sprigs

Steps:

  • Place dried mushrooms in medium bowl; add enough boiling water to cover. Let stand until mushrooms soften, about 45 minutes. Using slotted spoon, transfer mushrooms to work surface; reserve mushroom soaking liquid. Chop mushrooms.
  • Heat 2 tablespoons oil in heavy large nonstick skillet over medium-high heat. Add button mushrooms. Sauté until mushrooms are brown and juices evaporate, about 12 minutes. Add porcini mushrooms; stir 1 minute. Transfer mushroom mixture to medium bowl.
  • Add remaining 2 tablespoons oil to same skillet over medium heat. Add shallots and next 3 ingredients. Sauté until shallots are tender, about 2 minutes. Add mushroom mixture and 1/2 cup mushroom soaking liquid, leaving behind any sediment. Cover and simmer until mushrooms are tender, stirring occasionally and adding more soaking liquid if mixture is dry, about 20 minutes. Add lemon juice; season with salt and pepper. (Can be made 1 day ahead. Cover and chill. Rewarm over medium heat before serving.)
  • Transfer mushroom mixture to serving bowl. Garnish with parsley sprigs.
  • Dried porcini mushrooms are available at Italian markets, specialty foods stores, and many supermarkets.

This is my version of a recipe from "Great Meals in Minutes" by Maria Robbins. It's a wonderful and unique way to use some of that leftover Christmas ham, or any good-quality ham. If you're not crazy about onions and mushrooms, experiment with other sauces and toppings. A honey mustard sauce would also be yummy. This recipe is from the "Brunch" cookbook, but I've also served it for a light supper with a green salad. To make things easier, prepare the topping before you poach the dumplings.

1/2 cup unsalted butter (one stick)
3 cups day-old bread, cut into 1/2-inch cubes
1/4 cup milk (or more)
3/4 lb cooked ham
3 eggs
1/2 cup ricotta cheese
1/2 cup fresh parsley, coarsely chopped
1/2 cup flour (approximately)
4 tablespoons unsalted butter
2 medium onions, finely chopped
1/4 cup mushroom, trimmed and finely chopped
1 cup unseasoned breadcrumbs
1/2 cup fresh parsley, chopped

Steps:

  • Bring 4 quarts of salted water to a simmer.
  • Melt butter in skillet. Add bread cubes and toss until they have absorbed all the butter. Turn heat off and add milk. Continue tossing until all the milk is absorbed.
  • Blend the ham in a food processor or blender. Add bread cubes, eggs, ricotta, parsley and salt& petter to taste. Process (or blend) until thoroughly mixed. The mixture should hold together and be almost dough like.
  • Sprinkle some flour on a sheet of waxed paper. Dust your hands with the flour and shape the ham mixture into balls about one-and-one-half-inch, coating each one with flour.
  • Preheat the oven to 200°F.
  • Carefully add the dumplings to the simmering water. Don't crowd them. (Do them in batches if necessary.) Poach at a gentle simmer for about 10 minutes, or until the dumplings float to the top.
  • As they are done, remove the dumplings with a slotted spoon to a heated platter and keep them warm in the oven while you cook the rest.
  • Just before serving, spoon the dumplings onto individual plates and top with the Mushroom-Onion topping.

  • Melt butter in skillet. Add chopped onions, and cook over low heat until onions are golden brown (about 15 minutes.).
  • Add chopped mushrooms, cook for 1 minute, then add bread crumbs.
  • Continue to cook, stirring, until bread crumbs are browned.
  • Add parsley, remove from heat, and cover and keep warm until ready to serve.
