Steps:
- Combine one 12-ounce bag cranberries, 1 diced peeled Granny Smith apple, 1 cup sugar, 1/2 cup Cointreau or Grand Marnier, 1/2 cup water and 1/4 teaspoon each ground cinnamon and cloves in a saucepan over medium heat. Bring to a boil, then reduce the heat and simmer until the berries start to pop, about 10 minutes. Off the heat, stir in the grated zest of 1 each lemon and orange; chill.

- Place cranberries, sugar and vanilla in a medium saucepan. Place pan over medium heat and stir. Simmer cranberry mixture until the berries burst, about 5 to 6 minutes.
- Place orange peels in a large glass container with an airtight lid, or large mason jars with lids. Pour vodka over the orange peels.
- Allow the cranberry mixture to cool. Pour the cooled mixture into the glass container(s). Cover tightly and set aside for 1 week. After 1 week, strain out the cranberries sand orange peels and pour mixture into a clean bottle, using a funnel. Store vodka in the refrigerator.
- To serve: Pour 2 ounces of vodka mixture over ice in a tall glass and top with tonic water. Garnish with a slice of lime.

I use either Grand Marnier or Cointreu in this recipe. The additions of liqueur and orange zest make this cranberry sauce a holiday favorite at our house.

ORANGE-CRANBERRY BUNDT CAKE

- Preheat the oven to 350 degrees F. Grease and flour a bundt pan.
- Mix together the orange zest and juice, orange liqueur and eggs in a large bowl and set aside. In a smaller bowl, toss the cranberries with 1 tablespoon of the flour and set aside.
- In a stand mixer with a paddle attachment, add the sugar, baking powder, salt, baking soda and remaining 2 1/2 cups flour and mix to combine. On low speed, slowly add the butter 1 tablespoon at a time and continue to mix until a pea-sized crumble texture is achieved. Turn the speed to medium and slowly stream in the egg/orange mixture until combined. Increase the speed to medium high and beat until light and fluffy, about 2 minutes. Gently fold in the cranberry mixture. Pour the batter into the prepared bundt pan and smooth out the top.
- Bake until a cake tester inserted in the cake comes out clean, 50 to 55 minutes. Let cool in the pan for 20 to 30 minutes, then remove the cake and serve.
ORANGE CORDIAL
Never drink bought cordial again! A great way to use up excess oranges. I found I could mix in a similar ratio as that used for bought cordial however the colour will be a lot paler. This should yield about 850mLs of cordial. Cooling time not included.

- Remove the peel from the oranges. Peel thin enough that you don't get any of the white pith.
- Place in a large saucepan together with the sugar and water. Heat until boiling. Reduce heat to create a fast simmer. Cook at this rate for 10 minutes.
- Whilst cooking, juice the 3 oranges (about 200mls).
- After 10 minutes simmering, remove from heat. Add the juice and citric acid; stir well.
- Leave to cool (about 2 hours).
- Strain and bottle.
- To serve mix a ratio of 1:5 cordial to water (ie 40ml cordial to 200mls water).

- Bring to a gentle boil, reduce heat and allow to simmer for 5-10 minutes until soft; stirring occasionally.

- In a large saucepan, bring sugar and 1 1/2 cups water to a simmer, stirring until sugar dissolves.
- Place cranberries in a food processor and pulse until they are broken up. Add cranberries, vodka and citrus zest (if using) to the sugar syrup in the pot. Stir well, then transfer to a large jar or two, cover and shake well. Shake the mixture every day for 2 weeks. - Combine all ingredients in a large stainless or enamel pot. Slowly bring to a boil. Reduce heat to a simmer, stirring occasionally, until thick, about 20-30 minutes.
- Mash with a potato masher to break up fruit, leaving some chunks, but not whole berries.
- Ladle into clean hot jars and seal. Process for 10 minutes at altitudes up to 1000 feet.

- Combine 2 ½ cups of sugar, water, vanilla, and orange extract in a sauce pan. Heat over medium until the sugar has completely dissolved-but not boiling.
- Pour in the cranberries and stir. The hot syrup will loosen the skin, saturate the berries and adhere to the berries over time.
- Cover the cranberries with a small plate to keep them mostly submerged. Then cover the pan and place it in the refrigerator over night.
- Place the remaining 1 ¼ cup of sugar in a rimmed dish. Strain the cranberries and place them in the sugar. Shake until they are completely coated.
- Carefully transfer them to a baking sheet to dry-about an hour.
- Once the sugar coating is hard, place them in an air-tight container and keep in a cool spot for up to a week!
- *Don't forget to refrigerate your Cranberry Infused Vanilla-Orange Syrup for cocktail time!
GRAND MARNIER CRANBERRY SAUCE WITH ORANGES
This recipe is my family's favorite recipe for cranberry sauce. It appeared in a local newspaper about 10 years ago and I have made it every year since then. I always make two sauces if I'm having more than 8 guests - the other is usually Cranberry Sauce with Pears and Cardamom, which is very different from this sauce and gives people a choice of very different flavors and textures. I've always used Grand Marnier instead of the other choices of orange liqueur or orange juice concentrate, although when it comes to the fruit, I've used Minneola (aka Honeybell) or Orlando Tangeloes instead of Naval oranges. Hope you enjoy this recipe as much as we do!

- Grate 2 teaspoons zest from the oranges and set aside.
- Using a sharp knife, cut away and discard the thick white pith from the oranges. Carefully cut between the membranes to release the orange sections. Set the orange sections in a colander to drain off the excess juice. (If you add the juice to the pan, it will be too watery.).
- In a medium, heavy-bottomed, nonreactive saucepan, combine the cranberries, sugar, water and the zest. Bring to a boil over medium heat, stirring often to help dissolve the sugar. Reduce the heat to low and simmer until the sauce is thick and the cranberries have burst, 10 to 15 minutes.
- During the last few minutes, stir in the orange sections.
- Remove from the heat and stir in the Grand Marnier.
- Cool completely.
- The cranberry sauce can be prepared up to 1 week ahead, covered and refrigerated. Serve at room temperature or chilled.
