3 cups chicken stock
1 cup quick-cooking grits
1/2 cup Southwestern-style egg substitute
5 ounces reduced-fat process cheese (Velveeta), cubed
1/4 cup 2% milk
2 tablespoons butter
1-1/4 cups cubed fully cooked ham
3 green onions, chopped
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1/8 to 1/4 teaspoon crushed red pepper flakes
3/4 cup shredded cheddar cheese

Steps:

  • Preheat oven to 350°. In a large saucepan, bring stock to a boil. Slowly stir in grits. Reduce heat to medium-low; cook, covered, about 5 minutes or until thickened, stirring occasionally. Remove from heat. In a small bowl, stir a small amount of hot grits into egg substitute; return all to pan, mixing well., Add process cheese, milk and butter; stir until cheese is melted. Stir in ham, green onions and seasonings. Transfer to a greased 11x7-in. baking dish. Sprinkle with cheddar cheese., Bake, uncovered, 35-40 minutes or until edges are golden brown and cheese is melted. Let stand 10 minutes before serving.

8 slices bacon, cut into 1/2-inch pieces
1 onion, very thinly sliced
4 cups low-sodium chicken broth
2 cups coarse stone-ground grits
2 cups heavy cream
2 cups grated Monterey Jack cheese
Kosher salt and freshly ground black pepper

Steps:

  • In a heavy pot, cook the bacon over medium heat to render the fat, about 2 minutes. Add the onions and cook with the bacon until the onions are golden brown and the bacon is chewy, about 5 minutes. Carefully add the chicken broth and 2 cups water. Whisk in the grits. Bring to a boil, lower to a simmer and cook until thickened, about 25 minutes. Stir in the cream and cheese until thoroughly combined. Season with salt and pepper.

1/2 cup parmesan cheese, grated
2 eggs, lightly beaten
fresh ground black pepper
1 tablespoon canola oil
8 ounces sliced mushrooms
8 ounces lean ham, diced
1/2 cup green onion, chopped
1 teaspoon garlic, minced
1/4 cup sherry wine
1 lb medium shrimp, peeled and deveined
1/2 teaspoon garlic salt

Steps:

  • Heat oven to 350 degrees F.
  • Bring the chicken broth to a boil. whisk in the grits, reduce heat and simmer 10 minutes.
  • Pour intro a large bowl.
  • Stir in 1 cup of the cheddar chees, all of the Paremesean cheese and eggs.
  • Season to taste eith black pepper.
  • While grits cook, melt the butter in a large nonstick skillet over medium high heat.
  • Add the mushroom, ham and green onions and saute until the mushrooms are golden.
  • Stir in the garlic and sherry and cook for 1-2 minutes.
  • Season with salt and pepper.
  • Stir the mushroom mixture into the grits.
  • Sprinkle theshrimp with the garlic salt and stir them into the grits.
  • Pour into a greased 3-quart baking dish.
  • Sprinkle with 1 cup cheddar cheese.
  • Bake 30 minute, until the shrimp are done.

1-1/2 pounds uncooked egg noodles
3 pounds cubed fully cooked ham
4 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
4 cups frozen cut green beans, thawed
1 cup 2% milk
1/4 cup butter, melted
2 cups shredded Colby-Monterey Jack cheese

Steps:

  • Preheat oven to 350°. Cook pasta according to package directions., Meanwhile, in a large bowl, combine ham, soup, beans and milk. Drain pasta; pour over ham mixture and toss to coat. Transfer to 2 greased 13x9-in. baking dishes., Drizzle each with butter; sprinkle with cheese. Bake, uncovered, 25-30 minutes or until heated through. Freeze option: Cool unbaked casseroles; cover and freeze up to 3 months. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake, uncovered, 40--45 minutes or until heated through and a thermometer inserted in center reads 165°.

This casserole is delicious! You can prepare the complete casserole up to a day in advance and refrigerate, when ready to bake remove from the fridge and let stand for about 45 minutes then bake. Yellow onions can be substituted for the green, you can also add in fresh minced garlic and saute with onions and ham.

1/2 lb bacon
1/2 lb cooked ham, chopped
3/4 cup quick-cooking grits
1 (16 ounce) package Velveeta cheese, cubed
1/4 cup butter
6 large eggs, lightly beaten
1/2 cup milk
3 large green onions, finely chopped
2 teaspoons baking powder
seasoning salt (or use white salt)
black pepper

Steps:

  • Set oven to 350 degrees.
  • Butter a 13 x 9-inch baking dish.
  • In a large skillet cook the bacon until crisp; remove to paper towels and reserve some bacon fat in the skillet to saute the onions and ham.
  • Crumble bacon when cool enough to handle; set aside.
  • Brown the ham with green onions in the skillet; set aside.
  • Cook the grits according to package directions; remove from heat; add in the cubed Velveeta cheese and butter; stir until melted and well combined.
  • Stir in bacon, ham with green onions, eggs, milk and baking powder; season with seasoned salt or white salt and black pepper to taste.
  • Transfer into prepared baking dish.
  • Bake for about 45 minutes or until set.
