- To make this cranberry corn, melt 6 tablespoons butter in a saucepan with 1/2 cup fresh cranberries, 2 tablespoons each sugar and honey and 1/2 teaspoon each vanilla and salt. Cook until the cranberries pop, about 3 minutes. Toss with 12 cups popcorn and 1 cup chopped toasted almonds. Spread on a baking sheet and bake at 325 degrees F, stirring occasionally, until dry, about 8 minutes.
CRANBERRY-GINGER POPCORN BALLS

- Bring 1/4 cup light corn syrup, 2 tablespoons butter, 1 cup confectioners' sugar, 1/2 cup chopped crystallized ginger, 1 cup mini marshmallows and 1 tablespoon water to a boil in a large pot over medium heat, stirring. Stir in 3/4 cup each dried cranberries and white chocolate chips, and a pinch of salt. Remove from the heat; using a rubber spatula, stir in 12 cups popcorn until coated. Butter your hands, then shape into balls.
CRANBERRY BARS
If you're from Wisconsin you have to love cranberries. This is one of my favorite bar recipes and it mixes up very fast and is sooo good.

Steps:
- This is good with a powder sugar glaze or lightly sifted powder sprinkled on top.
- Beat together eggs, butter, sugar and vanilla.
- Add flour and baking powder and mix well.
- Fold in nuts and cranberries.
- Mixture will be cookie-consistency. Spread into prepared 8x8 pan. (If using 9x12, you will need 1.5 times the recipe.).
- Bake@ 350 degrees 40-45 minutes (but start checking after 35).

Steps:
- Line a 9x13-inch (22 x 33 cm) baking dish with parchment paper.
- In a large bowl, mix together the popcorn, oats, almonds, dried cranberries, and cinnamon.
- In a small pot over medium-high heat, combine the honey, brown sugar, and salt. Cook until the brown sugar dissolves, stirring frequently to avoid burning, 2-3 minutes. Let the mixture to come to a low boil for 1-2 minutes, stirring constantly, then remove the pot from the heat.
- Pour the honey and brown sugar mixture over the popcorn mixture. Using a rubber spatula, stir until the dry ingredients are well coated and beginning to stick together.
- Transfer the mixture to the prepared baking dish. Using lightly moistened hands, press the mixture into the baking dish in an even layer.
- Set aside in a cool place for 1 hour to set, then cut into 12 bars.
- Enjoy!

- Line a 13"x9" baking pan with aluminum foil; spray with non-stick vegetable spray and set aside. In a large bowl, toss together popcorn, chocolate chips, cranberries, coconut and almonds; set aside. In a saucepan over medium heat, stir marshmallows and butter until melted and smooth. Pour over popcorn mixture and toss to coat completely; quickly transfer to prepared pan. Lay a sheet of wax paper over top; press down firmly. Chill for 30 minutes, or until firm. Lift bars from pan, using foil as handles; peel off foil and wax paper. Slice into bars; chill an additional 30 minutes. Makes 16.

- In a saucepan, bring sugar and water to a boil. Add cranberries and cook until they pop, about 4-6 minutes. Add orange juice, orange zest, butter, cinnamon and salt. Cook 5 minutes longer or until mixture thickens. Remove from the heat; stir in walnuts and set aside. , For crust, combine the flour and salt in a bowl; cut in butter until mixture is crumbly. Add sugar and oats; mix well. Spoon half into an ungreased 13x9-in. baking pan; pat firmly into pan. Spread filling evenly over crust. Top with remaining crumb mixture; pat lightly. , Bake at 400° for 30-35 minutes. Cool on a wire rack. Cut into bars.

- Cut a 3m length of kitchen string and tie a fat knot 10cm from one end. Thread the other end onto a big, blunt needle, such as a tapestry needle. Thread on bay leaves, popcorn and cranberries, in a random pattern. Tie off when you get to the other end, leaving enough string to hang it up with.

- Grease an 8 x 8" square pan with cooking spray. 2. Combine popcorn, coarsely chopped almonds, and dried cranberries in a large bowl.
- Bring honey and coconut oil to a boil in a medium saucepan over medium heat. Once the edges are boiling, continue to boil for three minutes (it will foam up pretty well, and that’s ok!), stirring occasionally.
- Once ready, take the honey syrup off of the heat and pour directly over the popcorn mixture (if you let it sit in the pan, it might burn). Use a large spatutal to evenly coat the popcorn, nuts and cranberries with the syrup, making sure to watch your hands (this mixture is hot), and scrape all of the syrup and nuts/cranberries that might have floated to the bottom of the bowl up and through the mixture.
- Once combined, pour mixture into greased pan and press down with hands. It will look like a lot of popcorn, but just keep pressing until it is flat and even.
