BROCCOLI HAM ROLL-UPS

- Cook broccoli according to package directions; drain. In a bowl, combine the soup, bread crumbs, cheese, onion, pimientos and seasonings. Add broccoli; mix well. Spoon 1/4 cup onto each ham slice and roll up., Arrange in an ungreased 13-in. x 9-in. baking dish. Cover and bake at 350° for 40 minutes or until heated through.

- In a small saucepan, melt butter; stir in flour. Stir in the mustard, horseradish, Worcestershire sauce, onion and salt. Combine the pineapple juice, milk and egg yolk. Gradually stir into butter mixture. Bring to a gentle boil; cook until thickened. Remove from the heat and set aside. , Top each piece of ham with a cheese slice and two to three broccoli spears. Spoon 1 tablespoon sauce over broccoli. Roll-up, securing with toothpicks if necessary. Place, seam side down, in a greased shallow baking dish. Top with remaining sauce. , Cover and bake at 350° for 15-20 minutes or until heated through. Discard toothpicks.

- Unroll crescent roll dough and place triangles on a 12-in. pizza pan, forming a ring with pointed ends facing outer edge of pan and wide ends overlapping. Lightly press wide ends together. , In a large bowl, combine the remaining ingredients; spoon over wide ends of rolls. THis recipe came from the Junior League of Cobb-Marietta, Georgia. The name of the cookbook is "Georgia on My Menu". I got it out of our Georgia Magazine, September 2004. DH does not like horseradish so I decreased the amout to 1 teaspoon. (he never knew it was used...hehehe)

Steps:
- Preheat oven to 350 degrees.
- Place one slice of cheese on top of each slice of ham; top with 1 to 2 spears of broccoli and set aside.
- In medium saucepan, melt butter, blend in flour, salt horseradish, mustard, Worcestershire and onion.
- Combine egg youlks and pineapple juice; gently stir into butter mixture.
- Stir in milk and cook over low heat, stirring constantly until thick and bubbling.
- Spoon 1 tablespoon sauce over broccoli; roll ham and cheese around broccoli and secure with wooden toothpick.
- Place roll-ups in baking dish; cover and cook at 350 degrees for 25 to 30 minutes.
- Spoon remaining hot mustard sauce over ham rolls just before serving.

- In a large saucepan, bring 1 in. water, broccoli and onion to a boil. Reduce heat; cover and simmer for 5-8 minutes or until vegetables are crisp-tender; drain. , In a greased 1-1/2-qt. baking dish, layer the rice, ham and broccoli mixture. Combine the soup, cheese and milk; spoon over broccoli. Bake, uncovered, at 350° for 20 minutes. , Meanwhile, coarsely crumble bread. - Mix soup, sour cream, milk and first amount of cheese in a bowl.
- Pour about 1/3 of this mixture in a 9x9 ungreased pan.
- Beat together egg and milk.
- Add broccoli, parmesan cheese., onion powder and mix.
- Lay cooked lasagna noodles on work surface.
- Place 2 slices of ham on each.
- Divide broccoli mixture evenly between the noodles and spread out.
- Roll each one up and cut them each in half crosswise.
- Place cut side down in baking dish and spoon the remaining sauce over all.
- Sprinkle other amount of cheese over along with the French Fried onions.
- Bake in 350°F oven for 1 hour. Uncover and bake an additional 5 minutes.

- Preheat oven to 350°F (180°C).
- Finely chop the broccoli florets, and then transfer to a large bowl.
- Add the cheddar, cream cheese, ham, onion powder, and mix evenly until combined. Set aside.
- In a bowl, mix together the salt, pepper, garlic powder, onion powder, oregano, and paprika, then stir to combine.
- Place the chicken breasts on a cutting board and slice across horizontally, making sure not to cut all the way through.
- Season both sides of the chicken liberally with the spice mix.
- Place each chicken breast on a double layer of plastic wrap, then cover with more plastic wrap.
- Use a meat pounder to thinly pound the chicken breast and form into a rectangular shape.
- Repeat with the remaining chicken breasts.
- Lay down two of the flattened chicken breasts into a greased loaf pan lined with parchment paper, slightly overlapping them.
- Place the ham slices evenly across the bottom and sides, hanging the ham over the sides of the loaf pan.
- Spread broccoli mixture evenly on top of the ham, pressing it flat into the edges of the pan.
- Fold over the flaps of ham to completely seal the mixture.
- Place the third flattened chicken breast on top. Use a fork to tuck in the edges, creating a seal.
- Bake for 25-30 minutes, until the loaf looks slightly brown and red on top.
- Cool the loaf in the pan. Release any juices from the pan. Remove the chicken loaf using the parchment paper.
- Slice into 1-inch (2-cm) slices, and serve!
