2 cups small fresh broccoli florets
1 cup water
1-1/2 cups instant white rice, uncooked
6 oz. VELVEETA, cut into 1/2-inch cubes

Steps:

  • Bring ham, broccoli and water to boil in large skillet on medium-high heat; cover. Cook on medium heat 3 min.
  • Add rice and VELVEETA; mix well. Cover. Remove from heat; let stand 7 min.
  • Stir until VELVEETA is melted.

1 cup cheddar cheese (4 ounces, shredded)
Optional: 1/2 cup onion (finely chopped)
1/2 cup sour cream
1/4 teaspoon ground black pepper
Kosher salt (to taste)
3/4 cup breadcrumbs
1 1/2 tablespoons melted butter

4 tablespoons unsalted butter
½ onion, chopped
4 tablespoons all-purpose flour
5 cups milk
2 cups shredded Colby-Jack cheese
salt and ground black pepper to taste
3 cups chopped, cooked broccoli
2 cups chopped, cooked ham
2 cups cooked white rice
1 cup crushed buttery round crackers
½ cup sliced almonds
6 slices cooked bacon, crumbled

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Melt butter in a large skillet over medium heat. Add onion; cook until fragrant and almost translucent, about 4 minutes. Sprinkle flour over onion, then cook and stir for 3 minutes. Add milk gradually, whisking constantly to keep mixture from becoming lumpy. Cook and stir until the mixture is thick and smooth, about 15 minutes.
  • Add Colby-Jack cheese and cook and stir until cheese is melted and sauce begins to bubble, 4 to 5 minutes. Remove from heat.
  • Combine broccoli, ham, and rice in a large bowl. Add cheese mixture and stir to combine. Pour into the prepared baking dish. Top with crushed crackers, sliced almonds, and crumbled bacon.
  • Bake, uncovered, in the preheated oven until filling is bubbly, about 30 minutes. Serve warm.

I received a request for this recipe so I decided to post it. I've made this for years and have made a few adjustments in the ingredients to suit my family's tastes. It's still just a Ham and Broccoli casserole, but It's also a quick and easy dinner. I sometimes add waterchestnuts to give it a little crunch or sliced mushrooms. Feel free to add whatever you like and enjoy.

2 cups cooked ham, Diced (I often use pre-packaged ham as a timesaver)
1 (10 ounce) package frozen broccoli florets
2 (10 ounce) cans broccoli cheese soup or 2 (10 ounce) cans cream of broccoli soup
1/2 cup milk
1 cup cooked white rice or 1 cup brown rice
1/4-1/2 cup onion, chopped Fine (or to taste)
1 cup cheddar cheese, shredded
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1/4 cup plain breadcrumbs
1/4 cup grated parmesan cheese
1/4 cup butter, softened

Steps:

  • Preheat oven to 350'.
  • In a Large Bowl, Combine all of the casserole ingredients and mix until blended.
  • Spoon into a large, buttered casserole dish.
  • In a medium, microwave safe dish, add butter and microwave butter about 20 seconds at a time, take out and stir well before placing back in microwave, until butter is melted.
  • Add bread crumbs and parmesan to butter and blend with a fork until it becomes crumbly, top casserole with crumb mixture.
  • Cover and bake for 30 minutes, uncover and bake another 10-15 minutes or until casserole is hot and bubbly and topping has lighlty browned.
  • Let stand 5 minutes, serve.

1-1/2 cups chopped fresh broccoli
1/2 cup finely chopped onion
1-1/2 cups cooked rice
1-1/2 cups diced fully cooked ham
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1-1/2 cups shredded cheddar cheese
1/4 cup whole milk
2 slices bread, crusts removed
2 tablespoons butter

Steps:

  • In a large saucepan, bring 1 in. water, broccoli and onion to a boil. Reduce heat; cover and simmer for 5-8 minutes or until vegetables are crisp-tender; drain. , In a greased 1-1/2-qt. baking dish, layer the rice, ham and broccoli mixture. Combine the soup, cheese and milk; spoon over broccoli. Bake, uncovered, at 350° for 20 minutes. , Meanwhile, coarsely crumble bread. In a small skillet, cook crumbs in butter over medium-high heat until lightly browned. Sprinkle over casserole. Bake 15 minutes longer or until heated through.

3 Tablespoons Butter
1 Small White Onion (peeled and diced)
1 Tablespoon Finely Minced Garlic
1 teaspoon Onion Powder
Pinch Salt
½ teaspoon Black Pepper
1 Cup Long Grain White Rice
2 ¾ Cup Chicken Broth
2 Heads Broccoli (cut into bite size florets (about 3 cups))
1 16 Ounce Pack Cooked Diced Ham
8 Ounces Shredded Cheddar Cheese

Steps:

  • Add the butter to a deep skillet or a soup pot over medium heat. Add in the onion and cook until it becomes translucent.
  • Then add the garlic powder, onion powder, salt and pepper and stir to combine.
  • Cook for another minute then add the rice and sauté until the rice starts to turn a light golden color.
  • Pour in the chicken broth and bring it to a boil over high heat. Then cover the pot with a lid and reduce the heat to low medium and cook for 10 minutes.
  • While the rice is cooking, cut the large pieces of ham into smaller pieces and set aside.
  • Once the 10 minutes have passed, remove the lid from the rice and gently stir in the broccoli and ham.
  • Place the lid back on the pan and cook for another 8 minutes then add the freshly grated cheese and stir to combine.
  • Place the lid back on the pot and remove it from the heat.
  • Let the cheese melt before serving with fresh parsley if desired.
