1 cup orange juice
1/4 cup firmly packed brown sugar
1/4 cup country-style Dijon mustard
1/4 cup honey
1 Half Stick (1/4 cup) Land O Lakes® Butter melted

Steps:

  • Heat oven to 350°F.
  • Place ham into ungreased 13x9-inch baking pan. Pour orange juice over ham.
  • Combine remaining ingredients in bowl. Spoon sauce over entire ham. Bake, basting every 15 minutes with pan juice, 70-80 minutes or until heated through. Serve ham with pan juices.

One 8- to 10-pound bone-in smoked fully cooked ham (shank portion)
1/2 cup orange marmalade
1/2 cup whole-grain mustard
1/2 cup loosely packed light brown sugar
2 tablespoons sherry vinegar
1 teaspoon ground coriander
1 teaspoon ground ginger
1/2 teaspoon ground allspice
Freshly ground black pepper
Fresh rosemary sprigs, for serving
Oranges, cut into quarters, for serving

Steps:

  • Let the ham sit at room temperature for 30 minutes to 1 hour. Preheat the oven to 325 degrees F. Trim off any skin from the ham. Score the ham in a diagonal crosshatch pattern (about 1-inch apart) without cutting through into the meat. Place the ham, flat-side down, fattier side up, on a rack in a roasting pan. Pour a 1/2-inch of water in the bottom of the pan. Cover with aluminum foil and roast, about 1 hour. Remove the foil, add more water if the water has dried up and recover loosely with the foil. Continue to bake until the ham reaches 130 degrees F, adding more water if needed to keep the roasting pan from burning, 1 hour to 1 1/2 hours more (about 15 minutes per pound).
  • Increase the oven temperature to 400 degrees F. Whisk the marmalade, mustard, brown sugar, vinegar, coriander, ginger, allspice and a generous amount of black pepper in a liquid measuring cup. Spoon off about 1/4 cup of the pan juices from the ham and whisk into the glaze mixture. Brush about half of the glaze all over the ham. Continue to bake, brushing the ham with the glaze twice more until the surface of the ham is caramelized and the internal temperature in the center of the ham reads 140 degrees F on an instant read thermometer, adding more water if the bottom of the pan dries out and begins to burn, 40 to 45 minutes. Transfer the ham to a cutting board or platter and let rest for 20 minutes before slicing. Serve with the rosemary, oranges and any additional glaze on the side.

Shape into 1-in. balls; place in a single layer on greased 15x10x1-in. baking pans., For glaze, cook and stir all ingredients in a small saucepan over medium heat until sugar is dissolved. Spoon over ham balls. Bake until ham balls are just beginning to brown, 30-35 minutes, rotating pans and carefully stirring halfway through. Gently toss in glaze. Serve warm.

1 lb ground ham - i took a package of ham chunks and shred in my food processor
1/2- 3/4 lb ground pork
1 - 1 1/2 c crushed cracker crumbs - i use a whole sleeve of crackers
2 eggs
1/2 tsp dried mustard
1/2 c minced onion
1/2 tsp pepper
1/4 tsp salt
1/2 c milk
GLAZE - CAN HALVE RECIPE, I DOUBLE, AS WE LOVE THE SAUCE AND I FREEZE LEFTOVERS - RECIPE IS FOR SINGLE BATCH
1/3 - 1/2 c packed dark brown sugar
1 1/2 Tbsp corn starch
1/4 tsp each - dried mustard & ground cloves
1 1/2 c orange juice
some minced red or green peppers - optional

Steps:

  • 1. Preheat oven to 350 degree F. Spray a 9 x 13 baking dish with non stick cooking spray. Set aside In a bowl, add the ground ham, pork, onion, mustard, eggs, crackers, salt, pepper and milk - mix well.
  • 2. Make balls about the size of a golf ball and place in prepared dish. It's okay if touching.
  • 3. Place on oven for 30 minutes or until firm and browning some.
  • 4. While ham balls bake, make the glaze. In a dutch oven or large saucepan - mix brown sugar, mustard,cloves and cornstarch. Over medium heat, stir in the orange juice, whisk until well blended and continue cooking until sauce thickens.
  • 5. When ham balls are finished baking, drain if need be. Place in the sauce and simmer for 15 minutes.
  • 6. Serve hot. I've also prepared these ahead and kept warm for parties in crock pot on low setting.

1 cup packed brown sugar
2 tablespoons orange juice

Steps:

  • Drain the juice from the can of mandarin oranges into a microwave-safe bowl. Eat the oranges, or reserve for other uses. Stir in the brown sugar and orange juice. Cook in the microwave for 5 minutes on full power, then stir and cook for another 5 minutes. Glaze will be runny.

1/2 cup chopped onion
1/4 cup milk
1/8 teaspoon ground cloves

2 tablespoons light corn syrup

Steps:

  • In a large mixing bowl combine the first six ingredients.
  • Add ground ham and pork; mix well.
  • Shape into 12 balls, using about 1/3 cup mixture for each ball.
  • Place balls in baking dish. Bake, uncovered at 350° for 30 minutes.
  • Meanwhile, for glaze, in a small mixing bowl combine remaining ingredients and pour over ham balls. Bake 15 minutes more.
  • *Note: To make ahead, cover and chill uncooked ham balls for up to 12 hours. Prepare glaze, cover and chill up to 12 hours. Uncover and bake as directed. Ham balls and glaze can also be frozen separately.

1 bone-in partially cooked wet-cured
shank-end ham, 6 to 8 pound
FOR THE ORANGE GLAZE: 1 cup orange marmalade
2 tablespoons fresh orange juice
1/4 cup cream sherry
1/4 cup mild mustard
Whole cloves for studding ham (optional)

Steps:

  • 1 Preheat an oven to 350°F. 2 3 Using a small knife, remove the skin from the ham, leaving a layer of fat about 1/4 inch thick. Set the ham, fat side up, in an oiled heavy roasting pan just large enough to hold it comfortably. Roast the ham for 1 hour. 4 5 Meanwhile, to make the orange glaze, in a small saucepan over low heat, combine the orange marmalade and orange juice. Cook, stirring frequently, until the marmalade is melted. Remove from the heat and stir in the sherry and mustard. 6 7 Remove the ham from the oven and, using a sharp knife, score the fat in a diamond pattern. Stud the center of each diamond with a clove. Brush the ham with some of the orange glaze. Return the ham to the oven and roast until completely heated through and an instant-read thermometer inserted into the center of the ham registers 160°F, about 1 hour more. Brush the ham with the glaze twice during the last hour of cooking. 8 9 Transfer the ham to a carving board, cover loosely with aluminum foil and let rest for 10 minutes. Let the pan juices cool for 5 minutes, then pour them into a small saucepan and skim off the fat. Cook over medium-low heat until heated through, 2 to 3 minutes. 10 11 Slice the ham and arrange on a warmed platter. Pour the warm pan juices into a bowl and serve alongside the ham.

Steps:

  • In a saucepan, combine the first 3 ingredients.
  • Remove 1/4 cup of mixture and combine with cornstarch, stirring until mixture is smooth.
  • Add the cornstarch mixture to the orange juice mixture in the saucepan; stir until smooth.
  • Add in the dry mustard and next 3 ingredients; stir to combine.

(I was given this recipe a few years ago). It is one everyone will ask for. I took it once to a Birthday Party and was asked for the recipe by at least 5 people including the host. These can be served for dinner on rice or taken to parties and kept warm in a crockpot until serving. They can also be made ahead of time and frozen.

1 lb ground ham (if needed you can get a ham steak or chunk at the deli counter to grind)
1 lb ground pork
2/3 cup crushed cracker crumb
1/2-3/4 cup milk
1 green pepper, very finely chopped
2 eggs
1 medium onion, very finely chopped
1 1/2 cups brown sugar
3/4 cup catsup
1 teaspoon dry mustard
1/2 cup molasses
1 teaspoon Worcestershire sauce

Steps:

  • (3 batches of sauce is best when filling a crockpot with a double batch of balls) Ham Balls: Mix all together, gradually adding milk at the end to moisten enough to form balls.
  • Bake balls on a cookie sheet for 20 minutes at 350 degrees, drain fat and cool.
  • Sauce: Mix togther, heat and simmer 10 minutes until well blended.
