SLOW COOKER ROOT VEGETABLES WITH HAM
Steps:
- Gather the ingredients.
- Peel the potatoes and cut them into bite-size pieces.
- Place the potatoes in the slow cooker along with the onions, carrots, celery, chicken stock, parsley, butter, and ham.
- Cover and cook on low for 6 to 8 hours, or until the vegetables are tender.
- Gently stir in evaporated milk during the last hour.
- If desired, mix the optional flour and water and add the mixture into the pot 20 minutes before the cooking time is up. This will thicken the mixture.
- Carefully stir well before serving and enjoy!.

- Place cooking rack in pressure cooker. Add the potatoes, beans, carrots, broth, onion and salt. Place ham over vegetables. Close cover securely; place pressure regulator on vent pipe., Bring cooker to full pressure over high heat. Reduce heat to medium-high and cook for 4 minutes. (Pressure regulator should maintain a slow steady rocking motion; adjust heat if needed.) Immediately cool according to manufacturer's directions until pressure is completely reduced.

I haven't made this yet but with Easter around the corner this will be great with leftover ham. I received this recipe in with my electric bill. Let me know how it is if you try it before I do.

- Layer carrots, potatoes, onions, and ham in crockpot.
- In skillet, melt butter.
- Stir in flour.
- Gradually add milk.
- Stir frequently until sauce is smooth and thickened.
- Add pepper, parsley, mustard, and cheese.
- Continue stirring until cheese melts.
- Pour over vegetables and ham in crockpot, try to cover them all.
- Cook on low for 6 hours.
