1 tbsp olive oil
1/2 onion ((1/2 cup chopped))
1 10-ounce package frozen chopped spinach (thawed and squeezed dry)
4 oz diced ham (about 3/4 cup)
1 cup Swiss cheese (shredded) (optional)
12 egg (beaten)
1/2 tsp Cajun Spice Mix

Steps:

  • Preheat the oven to 400 degrees. Spray a 9x13-inch baking pan with nonstick cooking spray.
  • In a large nonstick skillet, heat the oil until shimmering. Add the onion and cook, stirring, until it is tender and translucent, about 7 minutes.
  • Sprinkle the bits of spinach around the bottom of the pan. Layer the ham over the spinach. Sprinkle the onions over the ham. Sprinkle the cheese, if using, over the onions.
  • In a large mixing bowl, beat together the eggs and spice blend. Pour this mixture over the filling in the pan. Bake for 25 minutes or until the eggs are set. Serve immediately.

2 tablespoons extra-virgin olive oil (EVOO) (twice around the pan)
4 tablespoons unsalted butter
8 small red potatoes
Salt and freshly ground black pepper
1 tablespoon fresh thyme leaves, chopped (from 4 sprigs)
1/4 teaspoon crushed red pepper flakes
1 medium red onion, chopped
1 large ham steak, finely chopped
4 extra-large eggs
2 cups baby spinach leaves, chopped
10 fresh basil leaves, chopped or torn
1/2 cup grated Parmigiano-Reggiano (a couple of generous handfuls)
2 plum tomatoes, seeded and chopped

Steps:

  • Preheat a large nonstick skillet over medium-high heat with the EVOO and 2 tablespoons of the butter. While the pan is getting hot and the butter is melting, cut the potatoes in half and then thinly slice them. Add them to the hot skillet and season with salt, pepper, the thyme, and the red pepper flakes. Cook, stirring every now and then, for about 10 minutes, or until the potatoes have browned and are tender. Add the onions and ham and continue to cook for 3 to 4 minutes.
  • Preheat another skillet over medium-high heat with the remaining 2 tablespoons of butter. Once the butter has melted and the bubbles have subsided, crack the eggs into the pan, season with salt and pepper, and fry to the desired doneness.
  • While the eggs are frying, finish off the hash by adding the spinach and basil to the potatoes. Toss to wilt the spinach. Sprinkle the hash with the cheese and remove from the heat. Transfer the ham and spinach hash to plates. Top each portion with some tomatoes and a single fried egg.

1 store-bought baked thin-crust pizza shell, preferably whole-wheat, such as Boboli
4 cups (about 4 ounces) baby spinach leaves, thinly sliced
2 teaspoons olive oil
3 ounces prosciutto di Parma, thinly sliced
1/2 cup grated Parmesan (1 1/2 ounces)
3 cloves thinly sliced garlic
4 eggs

Steps:

  • Preheat oven to 450 degrees F. Place the pizza shell on a cookie sheet. Scatter spinach all over crust. Drizzle with oil. Evenly distribute prosciutto, Parmesan and garlic on top of spinach. Crack eggs onto pizza, roughly positioning 1 yolk on each pizza quarter. Bake for 12-15 minutes, until spinach is wilted and egg whites are just fully cooked. Cut into 4 large slices.

1/4 cup plus 3 tablespoons canola oil
3 cups cooked long grain rice, cooled
1/2 onion, diced
4 thick slices deli ham, cut into bite-size pieces
3 eggs
1 tablespoon milk
Kosher salt and freshly ground black pepper

2 cups baby spinach

Steps:

  • Heat 1/4 cup of the canola oil in a large nonstick saute pan set over medium-high heat. Add the rice and spread it out in an even layer. Cook the rice without stirring to crisp it up, 3 to 4 minutes. Stir the rice and continue to cook until lightly browned and crispy, about 4 minutes.
  • While the rice is cooking, heat the remaining 3 tablespoons canola oil in a medium saute pan over medium heat. Add the onions and saute until translucent, 2 to 3 minutes. Add the ham and cook until the edges start to brown, 3 minutes.
  • In a medium bowl beat together the eggs and milk. Add a pinch each of salt and pepper.
  • Add the spinach to the rice and cook until wilted, about 2 minutes. Then add the sauteed onions and ham. Add the eggs and give it a good stir. Cook, stirring occasionally until the eggs are cooked through, 2 to 3 minutes. Season with salt and pepper. Serve immediately.

Bump up the richness of this from-scratch quiche by adding Monterey Jack to the ham-and-spinach filling.

1 3/4 cups all-purpose flour, plus more, for dusting
2 tablespoons sugar
Fine salt
12 tablespoons (1 1/2 sticks) unsalted butter, diced and chilled
4 teaspoons cider or white vinegar
1/3 cup ice water, plus more if needed
1/2 cup thinly sliced red onions
1 cup shredded Monterey jack cheese
1/2 cup chopped ham
1/2 cup chopped thawed frozen spinach, squeezed dry
1 1/4 cups half-and-half
2 tablespoons chopped fresh parsley
3 large eggs
Kosher salt and freshly ground black pepper

Steps:

  • Pulse together the flour, sugar and 1/2 teaspoon salt in a food processor. Add about a 1/3 of the chilled butter cubes and process until the butter is absorbed. Add the remaining butter and pulse until the butter is the size of peas, 5 or 6 pulses. Add the vinegar. Then, pulsing quickly a few times as you do it, add the ice water through the tube. Squeeze some dough between your fingers; it should just hold its shape without feeling wet. If it is crumbly, add more ice water a tablespoon at a time. Pulse quickly; do not overwork or the dough will be tough. Wrap the dough loosely in a large piece of plastic wrap, then firmly press and flatten the dough into a thin round. Refrigerate for 1 hour.
  • Lightly dust a work surface with flour, roll the dough out into an 11- to 12-inch round, about 1/8 inch thick. Center the dough in a 9-inch pie plate, with an even overhang all around. Fold the edges and flute or crimp. Chill for at least 30 minutes.
  • Preheat the oven to 375 degrees F.
  • Press a piece of foil over the chilled crust, fill with pie weights, raw beans or rice. Bake to set the crust, about 20 minutes. Remove the foil and weights and bake until the crust is light brown, 5 to 10 minutes more. Let cool slightly before adding the filling.
  • Adjust the oven temperature to 350 degrees F.
  • Sprinkle the onion evenly into the crust. Combine the cheese, ham and spinach in a small bowl and sprinkle it in an even layer over the onion.
  • Whisk together the half and half, parsley, eggs, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl.
  • Pour the custard over the filling and bake until the quiche is set, 35 to 50 minutes. Let cool at least 30 minutes before serving warm or at room temperature.

3/4 pound small white potatoes, cut into 1/2-inch pieces
Coarse salt
3 tablespoons unsalted butter
1 medium yellow onion, diced small
1 large red bell pepper, seeded and diced small
1/2 teaspoon red-pepper flakes
1 package (10 ounces) frozen chopped spinach, thawed and excess liquid squeezed out
8 large eggs
1 ounce grated Parmesan (1/4 cup)
1 tablespoon chopped fresh parsley

Steps:

  • In a large cast-iron or other heavy skillet, bring potatoes to a boil in salted water over high. Cook until potatoes are tender when pierced with a knife, about 6 minutes. Drain.
  • In skillet, melt 2 tablespoons butter over medium. Add onion and bell pepper and cook until softened, about 10 minutes. Add potatoes and red-pepper flakes; season with salt. Cook until potatoes are golden, 3 minutes. Add spinach and 1 tablespoon butter and cook, stirring, until butter is melted. Make four wells in potato mixture. Crack 2 eggs into each well and reduce heat to medium-low. Cover and cook until whites are set but yolks are still runny, about 6 minutes. Sprinkle with Parmesan and parsley and serve immediately.

1 tbsp olive oil
1 small onion , finely chopped
1 garlic clove , crushed
1 small green chilli , deseeded and finely chopped
400g can chopped tomato
100g ready-roasted pepper from a jar, drained and sliced
180g pack ham , torn, or shredded ham hock
50g baby spinach
2 medium eggs
pinch cayenne pepper
crusty bread , to serve

Steps:

  • Heat oven to 180C/160C fan/gas 4. Heat the oil in a small ovenproof sauté pan. Add the onion and cook for 6 mins until softened. Stir in the garlic and chilli, and cook for a couple mins more. Add the tomatoes and 100ml water. Season well and stir through the peppers and ham. Bring to a simmer and cook for 10 mins until the sauce has started to thicken. Add the spinach, stirring through to wilt.
  • Make 2 hollows in the sauce and crack your eggs into them. Add a pinch of cayenne, transfer to the oven and bake for 10 mins until the whites of the eggs have set. Serve straight away with crusty bread.

Makeover your fry-up with this low-fat, low-calorie ham hash brown and healthier 'fried' eggs - a great brunch or weeknight dinner

600g potato , diced
1 Cal cooking spray , for frying
2 leeks , trimmed, washed and sliced
175g lean ham , weighed after trimming and discarding any fat, chopped
2 tbsp wholegrain mustard
5 eggs
2 x 415g cans reduced sugar & salt baked beans

Steps:

  • Bring a large pan of salted water to the boil. Add the potatoes and boil for 5 mins until just tender. Drain well and leave in the colander to steam-dry.
  • Meanwhile, spray an ovenproof pan with cooking spray. Add the leeks with a splash of water and fry until very soft and squishy. Add a few more sprays of the oil, tip in the potatoes along with the ham, and fry to crisp up a little. Heat oven to 200C/180C fan/gas 6.
  • Stir in the mustard, 1 egg and a good amount of seasoning with a fork - break up some of the potatoes roughly as you do. Flatten down the mixture, spray the top with oil, and bake in the oven for 15-20 mins until the top is crisp.
  • When the hash is nearly ready, heat 200ml water in a non-stick frying pan with a lid (or use a baking sheet as a lid). When it is steaming (but before it simmers), crack in the remaining 4 eggs and cover with a lid. Cook for 2-4 mins until the eggs are done to your liking. Meanwhile, heat the beans.
  • Lift an egg onto each plate, add a big scoop of hash and spoon on some beans.
