HAM AND CABBAGE SOUP

Ham and Cabbage Soup image

This easy cabbage soup recipe is hearty, healthy, easy to make, and tastes fantastic. Before adding to the soup, taste your ham to see how salty it is. Depending on the salt level, you may not need to add any additional salt to the soup. Taste and adjust the seasoning of the soup a few times during cooking.

Time 30m

Yield Makes about 8 cups of soup or 4 to 6 servings

Number Of Ingredients 14

3 tablespoons olive oil
2 cups chopped onion (1 medium)
2 cups chopped carrot (4 medium)
1 1/2 cups cubed lean ham steak (7.5 ounces)
1 tablespoon minced garlic (3 cloves)
1 tablespoon chopped fresh rosemary or use 1 teaspoon dried rosemary
1/2 teaspoon fresh ground black pepper
Pinch crushed red pepper flakes
8 cups chopped cabbage (1 1/2 pounds)
1 (15-ounce) can diced tomatoes with juices
6 cups low sodium chicken, ham or vegetable stock/broth, see our chicken stock recipe
2 bay leaves
Salt, to taste
3 lemon slices or more to taste

Steps:

  • Heat two tablespoons of the olive oil in a stockpot pot or Dutch oven over medium heat. Add the onions, carrots, and the ham. Cook, stirring every once and a while until the vegetables have softened and the onions are translucent; 8 to 10 minutes.
  • Add the garlic, rosemary, black pepper, and the red pepper flakes. Cook, while stirring, for one minute. Stir in the cabbage, and then pour in the canned tomatoes and their juices as well as the stock. Add the bay leaves.
  • Raise the heat to medium-high and bring the soup to a boil. Taste then adjust with salt. The ham does add some salt to the soup so you may not need a lot of additional seasoning.
  • Partially cover the pot with a lid, and then reduce the heat to maintain a low simmer. Simmer for 20 minutes or until the cabbage, and other vegetables are tender.
  • Remove the pot from the heat and remove the bay leaves. Stir in the lemon slices and the remaining tablespoon of olive oil. Taste and season with more salt and pepper. Serve.

SMOKED HAM HOCK AND CABBAGE SOUP

Smoked Ham Hock and Cabbage Soup image

Got this recipe from an Amish neighbor years ago, but she doesn't remember where she got it. I have had this at the Hoss's steakhouse chain as an appetizer or with a big salad. This is more about the broth than the ham or cabbage. Be careful of the salt as some ham hocks can be very salty, but on the plus side they are available at any grocery store.

POTATO CABBAGE SOUP WITH HAM

Potato Cabbage Soup With Ham image

I found this in a magazine and fell in love with it. It is a great thing to have for leftover ham, quick to fix, and very tasty.

Provided by Suseme

Categories     Ham

Time 45m

Yield 4 serving(s)

Number Of Ingredients 11

5 -6 cups cabbage, shredded (about 1/2 med. head)
3 medium potatoes
2 medium carrots
6 -8 scallions (One bunch)
1/4 lb lean ham, chopped
4 tablespoons butter
3 tablespoons flour
2 cups water
1 (13 3/4 ounce) can chicken broth
1 teaspoon dill
1/2 teaspoon pepper

Steps:

  • Peel potatoes and cut them into 1/4" dice. Cut carrots into 1/4" dice. Coarsely chop scallions. Cut ham into 1/4" dice. Shred cabbage.
  • In a medium saucepan, melt butter over medium heat until hot but not smoking. Add potatoes, carrots and scallions and saute until scallions are wilted, about 5 minutes.
  • Stir in flour and cook, stirring, for 1 minute.
  • Add cabbage, water, broth, dill and pepper, and bring the mixture to a boil over medium-high heat. Reduce heat to medium-low, cover and simmer 20 minutes, stirring occasionally.
  • Just before serving, gently mash vegetables with a potato masher to thicken liquid if desired. Stir in the ham. .
  • (Notes: I don't mash the potatos because I prefer potato soup that way, and it is already pretty thick for me. I also have used chicken bullion and water to make the broth called for, and it has worked fine for me.).

BESS FEIGENBAUM'S CABBAGE SOUP

Bess Feigenbaum's Cabbage Soup image

Provided by Elaine Louie

Categories     dinner, one pot, soups and stews, main course

Time 3h

Yield 8 servings

Number Of Ingredients 14

2 tablespoons olive oil
2 tablespoons minced garlic
1 cup minced or grated onion
1 cup peeled thinly sliced carrots
1 28-ounce can plum tomatoes in purée
1 cup tomato paste
1/2 cup tomato ketchup
1/2 cup dark brown sugar
1 bay leaf
1/2 cup lemon juice
3 pounds cabbage (tough outer leaves, core and ribs removed), sliced into 1/4-inch-wide ribbons
1/2 cup golden raisins
Fresh ground (preferably medium grind) black pepper
Sour cream, optional

Steps:

  • In a 6-quart pot over medium-low heat, heat olive oil and add garlic. Cover and cook until garlic is tender but not browned, about 2 minutes. Add onion, and sauté until translucent. Add 3 cups water, carrots, tomatoes and purée, tomato paste, ketchup, brown sugar and bay leaf. Simmer at a lively bubble for 10 minutes, then crush whole tomatoes with potato masher or fork. Continue to simmer until carrots are tender, about 10 minutes. Discard bay leaf.
  • Using an immersion blender, or working in batches with a stand blender, process mixture until it is coarse, not puréed. Return sauce to pot and add lemon juice, cabbage ribbons and 3 cups water. Place over medium-high heat and cook at a lively simmer until cabbage is cooked to taste, from al dente to meltingly soft, 1 to 2 hours. Add 3 to 6 cups water, to thin to desired consistency. Ten minutes before serving, stir in raisins and a few twists of black pepper. If desired, garnish each serving with a dollop of sour cream.
