SLOW-COOKER POTATO & HAM SOUP

Steps:
- In a 4- or 5-qt. slow cooker, combine broth, potatoes, onion and pepper. Cook, covered, on low 6-8 hours or until vegetables are tender., Mash potatoes to desired consistency. Whisk in cream cheese until melted. Stir in ham and milk. Cook, covered, until heated through, 15-20 minutes longer. Serve with sour cream and green onions if desired.

Steps:
- Combine ham hock, onions, carrot, water, chicken base, sage, thyme, and rosemary in a large slow cooker. Cover and cook on Low, 8 hours to overnight.
- Stir potatoes and tomatoes into the soup and cook on Low, 3 to 4 hours more.
- Remove ham hock, shredding with 2 forks, leaving behind any meat. Add cubed ham.
- Meanwhile, melt butter in a saute pan over medium heat. Whisk in flour until it is thick, aromatic, and slightly browned, 15 to 20 minutes. Add half-and-half until it is gravy consistency. Add mixture to the slow cooker and mix well. Serve with Cheddar cheese.

- Combine all ingredients in a large slow cooker. Cover and cook on low-heat setting for 4 to 6 hours or until potatoes are tender. To serve garnish with diced green onions.

Here's what you need: bacon, onion, carrot, celery, flour, ham, potatoes, fresh thyme, black pepper, chicken broth, bay leaves, heavy cream

- In a 6-quart (5.7 liters) dutch oven, cook bacon over medium-high heat until fat is rendered out and the pieces begin to get crispy.
- Add onion, carrot, and celery, and cook until just tender, about 3 minutes.
- Reduce heat to medium and add flour, stirring constantly for 1-2 minutes to avoid lumps.
- Add ham, potatoes, thyme, and black pepper. Stir to coat the meat and potatoes in the roux/vegetable mix.
- Add the chicken broth and bay leaves.
- Cover and bring to a boil. Then reduce heat to medium-low and cook covered for 25-30 minutes.
- Remove bay leaves and stir in cream. Return to a simmer and serve.
- Enjoy!
