PEA AND GAMMON FRITTATA



Pea and Gammon Frittata image

A fantastic way to use up the last of your Christmas Gammon. Make a delicious frittat with peas, gammon & caramelised onion.

Number Of Ingredients 8

1 onion (finely chopped)
1 garlic clove (crushed)
2 cups (left-over gammon, cubed)
1 cup cooked baby peas
½ tsp paprika
1 tsp salt
6 eggs (beaten)
50 ml cream

Steps:

  • Pre-heat the oven to 220°c.
  • In an oven-proof pan, fry the onion until soft and translucent. Add the garlic and fry for another minute.
  • Add the gammon and peas and fry for another 2 minutes. Add the paprika and salt and stir.
  • To the beaten eggs, add the cream and pour over the gammon and peas.
  • Allow to cook for 5 minutes on the stove and pop into the oven for 5 minutes to finish the cooking
  • Serve with toasted sourdough/watercress salad. (This is great served at room temperature)

Ham and Swiss Frittata image

Diced deli ham and grated Swiss cheese flavor this savory frittata that's great for breakfast, lunch or dinner. A simple green salad makes the perfect light side.

1 tablespoon unsalted butter
1 shallot, sliced
Kosher salt and freshly ground black pepper
1/4 cup half-and-half
8 large eggs
1 cup grated Swiss cheese
1 cup diced deli ham
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chives, plus more for garnish (optional)
[For Serving:] Green salad (optional)

Steps:

  • Preheat the oven broiler. Melt the butter in a medium nonstick skillet over medium heat. Add the shallot and sprinkle with 1/4 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until soft, about 5 minutes. Remove from the heat and cool. Reserve the skillet for cooking the frittata.
  • Meanwhile, whisk the half-and-half and eggs together in a medium bowl with 1/4 teaspoon salt and a few grinds of pepper until smooth. Add the cooled shallots, cheese, parsley and chives and stir to combine.
  • Heat the reserved skillet over medium heat. Pour the egg mixture into the skillet and stir a few times. Cook, undisturbed, until the bottom sets, about 5 minutes. Transfer the skillet to the oven and broil until the eggs are just set, about 5 minutes more. Remove from the oven and let stand for 5 minutes. Slide the frittata out onto a large plate or cutting board. Cut into wedges and sprinkle with more chives and serve warm or room temperature with a green salad if desired.

8 eggs
4 oz. OSCAR MAYER CARVING BOARD Slow Cooked Ham, chopped
1 cup frozen peas
1 Tbsp. chopped fresh thyme
1/4 tsp. ground black pepper
3/4 cup KRAFT Finely Shredded Sharp Cheddar Cheese, divided

Steps:

  • Heat oven to 350ºF.
  • Whisk 1/2 cup cream cheese spread and eggs in medium bowl until blended. Add ham, peas, thyme, pepper and 1/2 cup cheddar; mix well.
  • Pour into 10-inch ovenproof nonstick skillet.
  • Bake 30 min. or until knife inserted in center comes out clean. Spread with remaining cream cheese; top with remaining cheddar. Bake 3 min. or until cheddar is melted.

12 large eggs
1/3 cups heavy cream
Kosher salt and freshly ground black pepper
1 1/2 cups frozen broccoli florets, thawed
1/2 cup chopped deli ham (about 2 1/2 ounces)
1/2 cup shredded mild Cheddar
1/2 cup shredded Monterey Jack cheese

Steps:

  • Preheat the oven to 300 degrees F. Whisk the eggs, cream, 1 teaspoon salt and a few grinds of black pepper together in a large bowl until smooth. Fold in the broccoli, ham, Cheddar and Monterey Jack until well combined.
  • Pour the mixture into an oven-safe, 10-inch nonstick skillet. Bake until the eggs are just set and no longer jiggly in the middle, 50 to 55 minutes. Let sit for 5 minutes before sliding the frittata out of the skillet onto a serving platter. Slice into wedges to serve.

2 tablespoons unsalted butter
1 large onion, sliced
3/4 teaspoon kosher salt
Freshly ground black pepper
8 large eggs
1/4 cup milk
1 cup diced ham
1 tablespoon chopped fresh herbs, like parsley, thyme, or dill
1 cup grated Swiss or cheddar cheese

Steps:

  • Position a rack about 8 inches from the broiler and preheat.
  • Melt the butter in a medium non-stick skillet over medium heat. Add the onions and season with 1/2 teaspoon salt and some pepper. Cook, stirring occasionally, until the onions get very soft, about 15 minutes. Meanwhile, whisk the eggs and milk in a medium bowl with the remaining 1/4 teaspoon salt and some pepper until smooth. Transfer onions to a bowl to cool. Reserve the skillet.
  • Stir the onions, ham, herbs and cheese into the eggs.
  • Heat the non-stick skillet. Pour the frittata mixture into the pan and stir to make sure the fillings are evenly arranged. Cook, stirring gently a couple times in the first minutes of cooking. Then let the mixture cook undisturbed until the bottom sets, about 5 minutes. Transfer the skillet to the oven and broil until the eggs are just set and brown, about 5 minutes. Take care not to overcook or the eggs will be dry. Remove from the oven, cover, and set aside for 5 minutes.
  • Invert the frittata onto a large plate or platter. Cut into wedges and serve warm or at room temperature.

2 potatoes, cubed

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Beat eggs and milk in a bowl.
  • Melt butter in a large, oven-safe skillet over medium heat; cook and stir potatoes, ham, onion, and garlic in melted butter until potatoes are tender, about 15 minutes. Add water if vegetables become dry. Season with salt and pepper.

Use up leftovers with this easy mint, pea and pasta frittata, which takes just 20 minutes. It keeps really well - pack into lunchboxes for the next day

5 large eggs
200ml milk
80g parmesan (or vegetarian alternative), finely grated
200g pasta shells, cooked following pack instructions
½ pack mint , chopped
200g frozen peas
1 tbsp butter
green salad , to serve

Steps:

  • Heat the grill to its highest setting. Crack the eggs into a large bowl, whisk in the milk, then combine with half the cheese, the mint, cooked pasta shells and peas, and add a big pinch of seasoning. Melt the butter in a medium ovenproof non-stick frying pan over a medium heat. Tip in the pasta and egg mixture and leave to set for about 5 mins.
  • Scatter the remaining parmesan on top and put under the grill for 10 mins until cooked through, then slide onto a plate. Cut into slices and serve with a green salad.
