2 teaspoons vegetable oil
4 slices deli ham, chopped into small pieces
2 eggs
2 teaspoons chopped fresh chives, divided
¼ teaspoon salt
freshly ground black pepper to taste
¼ cup shredded Cheddar cheese

Steps:

  • Heat oil in a skillet over medium heat. Add ham and cook until browned and crispy, stirring frequently, about 7 minutes.
  • Beat eggs with 1 teaspoon chives, salt, and pepper in a small bowl and add to skillet, tilting skillet to distribute egg evenly on bottom of skillet. Cook until omelette has set at the edges. Sprinkle Cheddar cheese on top and fold omelette in half. Flip and cook until egg is entirely set and cheese inside has melted, 30 seconds to 1 minute. Slide onto a plate and sprinkle with remaining 1 teaspoon chives.

1 tablespoon unsalted butter
1/2 cup ham pieces
3 medium fresh free-range eggs
Kosher salt and black pepper
3/4 cup cheddar cheese

Steps:

  • Gather the ingredients.
  • Heat butter in an 8-inch skillet or omelet pan over medium heat. Add ham pieces and cook gently to warm through for 3 to 4 minutes.
  • Break eggs into a small bowl. Gently mix with a fork. As mentioned above, do not whisk.
  • Tip gently stirred eggs over ham in skillet over medium heat. Using a fork, gently move egg around pan, pushing cooked egg from the pan's bottom and allowing uncooked, liquid egg to run into its place. Gradually, all the eggs will start to set.
  • Immediately once egg starts to set, sprinkle cheese and stop stirring. Let omelet sit for about one minute for heat to start to reach cheese. Sprinkle over a tiny pinch of salt and black pepper.
  • Once cheese is starting to warm, take a spatula and carefully nudge omelet's lower edge two-thirds of the way over.
  • Take a warmed plate, hold skillet over plate and gently tip pan away from you and roll omelet out and over onto plate, so the seam is underneath. This is easier to do than it sounds. Serve omelet immediately.

4 bacon strips
2 cups frozen shredded hash brown potatoes
1/4 cup chopped onion
1/4 cup chopped green pepper
4 large eggs, lightly beaten
1/4 cup whole milk
1/2 teaspoon salt
Dash pepper
1 cup shredded sharp cheddar cheese

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain. Crumble bacon and set aside., Add the potatoes, onion and green pepper to drippings. Cook and stir over medium heat for 7-10 minutes or until potatoes are lightly browned and vegetables are tender., In a large bowl, whisk the eggs, milk, salt and pepper. Pour egg mixture into a large non-stick skillet (mixture should set immediately at edges). , As eggs set, push cooked edges toward the center, letting uncooked portion flow underneath. 1 tablespoon Dijon mustard
1 teaspoon salt

1 1/2 cups cooked ham, sausage or 1 1/2 cups bacon
1 1/2 cups cheddar cheese or 1 1/2 cups American cheese

Steps:

  • Preheat oven to 350 degrees.
  • Line bottom of a jelly roll type pan with parchment paper, leaving a 1-inch overhang on the two shorter sides. Grease parchment paper. Do not skip the parchment paper on this recipe. You need it to roll the omelet.
  • In a bowl, whisk together milk and flour. Add eggs, mustard, 1 teaspoon salt, and teaspoon pepper; whisk to combine. Pour into pan. Sprinkle meat over top in an even layer.

2 eggs
50 ml milk
1 slice ham
1/2 stalk green onion
5 ml margarine
50 ml cheddar cheese
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Wash and chop green onion.
  • Wash and slice ham.
  • In a mixing bowl, combine eggs, ham, milk, onion, salt and pepper. Beat well.
  • Heat skillet on medium and melt margarine.
  • Pour egg mixture into skillet. As the omelette begins to set, lift up edges with egg flipper so uncooked portion of egg can flow under the cooked portion.
  • When eggs are set but the top is still moist, sprinkle ¾ of the cheese over it.

4 slices bacon
2 cups refrigerated hash brown potatoes (about half of a frozen 20-oz. package, thawed)
1/4 cup chopped onion
1/4 cup chopped green bell pepper
4 eggs
1/4 cup milk
1/2 teaspoon salt
fresh ground black pepper, to taste
1 cup mild cheddar cheese, shredded (4 oz.)
sliced green onion (optional for garnish)

Steps:

  • In large frying pan, cook bacon until crips.
  • Drain bacon on paper towels and drain all but 2 tablespoons drippings in pan.
  • Combine potatoes, chopped onions, and bell pepper.
  • Press down in even layer in pan.
  • Cook, uncovered over low heat until crisp and brown on bottom.
  • (About 7 minutes) While potatoes are cooking, crumble bacon and set aside.
  • Carefully turn over.
