This recipe came from an old Lithuanian cookbook. Takes 11 days to make with standing time and fermentation time.

Yield 1 gallon

Number Of Ingredients 5

Ingredients

10 medium beets
1 gallon water
2 1/2 lbs sugar
1 cake yeast
1/4 teaspoon pepper

Steps:

Pare and quarter beets.
Boil in water till tender.
LET STAND 24 HOURS.
Remove beets.
Add enough water to make one full gallon of liquid.
Add sugar and pepper.
Boil 10 minutes.
Strain through cloth into clay crock.
Spread yeast on a slice of bread which has been thoroughly dried in the oven.
Place in lukewarm liquid.
Let ferment 10 days.
Bottle.
Do not cork tightly.

Chop the cleaned beets into small pieces and place them in a pot with 3 quarts of boiling water. Simmer 15-20 minutes until cooked. Remove from heat.
Allow the beet liquid to cool completely and then pour it into a 2-gallon fermenting bucket. Add the sugar and remaining ingredients, along with a full gallon of water.
Cover the bucket with a towel and allow it to ferment out of direct sunlight for about 7-10 days until fermentation slows.
