Vanilla Ice Cream with Sesame Candies and Halvah image

Number Of Ingredients 5

3 1/2 ounces sesame candies*
1 1/2 pints vanilla ice cream
Crumbled halvah*
Honey
*Sesame candies (such as Joyva's Sesame Crunch) and halvah (a Middle Eastern sweet) are available at some supermarkets and a Middle Eastern markets.

Steps:

  • Start by placing sesame candies in a large resealable plastic bag. Crush the candies with a rolling pin until broken into small pieces. Divide ice cream among 6 bowls. Top with crushed candy and crumbled halvah. Drizzle with honey.

3 large egg yolks
1/2 cup sugar
1 tablespoon cornstarch
1 1/2 cups milk, scalded
1 teaspoon vanilla extract
1 1/2 cups well-chilled heavy cream
1/4 pound halvah (a ground sesame-seed and honey candy), cut into bits
1/2 cup Orange Honey Syrup as an accompaniment

Steps:

  • In a bowl whisk together the egg yolks, the sugar, the cornstarch, and a pinch of salt and add the milk in a slow stream, stirring. In a heavy saucepan cook the custard over moderate heat, stirring constantly with a wooden spoon, until it comes to a boil, boil it, stirring constantly, for 2 minutes, and strain it through a fine sieve into a metal bowl set in a larger bowl of ice and cold water. Stir in the vanilla, let the custard cool, stirring, and chill it, covered, until it is cold. Stir in the cream, freeze the custard in an ice-cream freezer according to the manufacturer's instructions, and stir in the halvah. (Alternatively, the halvah may be stirred into 1 quart of softened premium vanilla ice cream.) Transfer the ice cream to a metal bowl, freeze it until it is frozen solid, and scoop it into glasses. Spoon the orange honey syrup over the ice cream.

200 g halva

Steps:

  • Separate eggs and whisk whites until stiff.
  • Add in sugar, a spoonfull at a time and whisk.
  • Pour yolks and vanilla essence into mixture and carefully mix through.
  • Beat up cream in separate bowl.
  • Fold cream into egg mixture.
  • Chop up halva - crumble it - and then fold into egg/cream mixture.
  • Pour into loaf pan lined with wax paper (or use silicon container)and freeze.
  • Before serving, turn out onto serving plate and drizzle with melted chocolate (optional).

1/4 lb. halva candy, crumbled, optional

Steps:

  • Gather the ingredients.
  • In a large bowl, whisk together the whole milk, heavy cream, granulated sugar, vanilla, salt, and sesame paste (tahini).
  • Pour the mixture into your ice cream maker's pre-frozen bowl and follow the manufacturer's instructions to churn for 35 to 40 minutes.
  • Freeze for at least 4 hours before serving and garnish with the crumbled halva pieces, if desired, for a fun texture and flavor boost!

12 phyllo pastry sheets
1/2 cup unsalted butter, melted
1 1/2 lbs cream cheese, room temperature
4 eggs
1 egg yolk
1 teaspoon vanilla extract
1/2 teaspoon sesame seed oil
2 tablespoons plain yogurt
1/4 cup honey
1/4 cup granulated sugar
1/4 cup all-purpose flour
1/3 cup pistachio nut, coarsely chopped (optional)
1/4 cup halvah, vanilla, coarsely chopped
3 tablespoons honey, to taste
1/4 cup sesame seeds, lightly toasted
1/2 cup pistachio nut, finely chopped

Steps:

  • Preheat oven to 350 degrees F.
  • FOR THE CRUST: Spread 1 sheet of phyllo lightly with melted butter & with it line a 10-inch springform pan, allowing the excess to overhang.
  • Repeat the process with another 4 sheets of phyllo, pressing each one into the pan, starting at the center & allowing the excess to drape over the sides~ If the phyllo you use is smaller, overlap the sheets to create the same effect. Reserve the remaining sheets of phyllo for garnishing the top after baking.
  • FOR THE FILLING: In a bowl, cream the cheese with the 4 whole eggs, the 1 yolk, vanilla, sesame oil, yogurt, honey, sugar & flour, & combine until smooth, then stir in the nuts & halvah.
  • Pour into the prepared shell, trim the phyllo overhang to rest just on the rim of the pan, then bake about 45 minutes or until the cake is set.
  • Meanwhile, cut the remaining phyllo sheets in quarters & brush them with butter.
  • Remove the cake from the oven & increase the temperature to 400 degrees F, then arrainge the butteres filo sheets on top of the cake in an irregular patchwork, but covering the surface of the cake.
  • Return the pan to the oven to brown the top phyllo, about 8-10 minutes, then remove & chill the cake until set.
  • FOR THE TOPPING: When ready to serve, warm the honey & drizzle it over the cake, before topping that with the toasted sesame seeds & chopped pistachio nuts.
