HALLOWEEN COOKIES AND CREAM WHOOPIE PIES
These handheld desserts are more than just a fun name. Soft, cakey cookies are stuffed with marshmallow cream cheese, then dipped in chocolate and festive sprinkles for a delightful Halloween treat.

- Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
- Pulse the cookies in a food processor to fine crumbs. Remove 1/3 cup crumbs to a medium bowl and reserve the remaining crumbs for the filling.
- Whisk the flour, baking powder, salt and baking soda into the medium bowl with the 1/3 cup crumbs. Set aside.
- Beat together the sugar, butter and vanilla in a large bowl of a stand mixer fitted with the paddle attachment on medium-high speed until light and fluffy, about 2 minutes. Add the egg and beat until combined. Reduce the speed to low and add the flour mixture in 3 batches, alternating with the milk, beginning and ending with the flour mixture; beat after each addition until just combined.
- Spoon 2 tablespoon-mounds of the batter (a 1-ounce ice cream scoop works well here) onto the prepared baking sheets about 1 inch apart. You should have about 12 cookies per baking sheet.
- Bake, rotating the baking sheets halfway through, until the tops of the cookies spring back when lightly touched, 14 to 16 minutes. Let cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely, about 30 minutes. Reserve the parchment-lined baking sheets.
- While the cookies cool, prepare the filling. Spray a measuring cup and rubber spatula with nonstick cooking spray, then measure out the marshmallow cream and transfer to a medium bowl. Add the cream cheese and orange gel food coloring and combine using a handheld electric mixer. Gently fold in the remaining sandwich cookie crumbs.
- Flip half of the cooled cookies so they are flat-side up; spread each with 1 to 2 tablespoons of the cream cheese filling. Sandwich them with the remaining cookies flat-side down.
- Melt the chocolate in the microwave, stirring halfway through, 1 minute to 1 minute 30 seconds. Dip half of each whoopie pie into the chocolate, letting the excess drip off into the bowl, immediately dip into the sprinkles, then place on the parchment-lined baking sheets to harden, about 15 minutes.
SURPRISE SNOWBALL COOKIES

- Preheat oven to 350*F In a bowl, cream together butter and 1 cup powdered sugar. Add egg and mix well, scraping sides of bowl. Add vanilla and salt and mix well. Add pecans and blend again. Finally add flour 1/2 cup at a time blending after each addition until all flour has been added. Scoop out a tablespoon of dough and flatten in your hand. Place a chocolate kiss in the center of flat dough and wrap dough around kiss. Once wrapped, gently roll in your hands to create a ball. Place on a greased cookie sheet. Bake for 10 - 12 minutes or until a hint of golden. Allow to cool completely. Once cooled, toss in a large plastic bag with 1 cup powdered sugar. Seal bag and shake well until all cookies are covered in powdered sugar. This may require multiple batches. Will keep in a sealed container for up to a week.
HALLOWEEN SURPRISE FILLED COOKIES

- Preheat oven to 200 degrees.
- In a large mixing bowl, combine flour, salt, baking soda and sugar.
- Gently cut in shortening and butter then blend in egg.
- Beat dough mixture until evenly combined and lastly add the oatmeal.
- Roll out dough to about ¼" thick between 2 plastic wraps.
- Using a 2 ½ round cutter, cut dough to circles on ungreased cookie sheet 1" apart.
- Prepare filling by simply mixing filling ingredients together.
- Put a teaspoonful of filling at the center of each and cover with remaining dough circles.
- Seal the edges by pressing down with fingers or by a fork.
- Bake for 10-15 minutes.

SURPRISE -FILLED COOKIES
These little gems of cookies are a family tradition. Use any kind of jam you like to fill them. For Christmas, red jam (strawberry or raspberry) and green jam (mint) look cute, but I'm not fond of the taste of mint jelly. But it is festive. But like I said, use whatever floats your boat. :)

Steps:
- Preheat oven to 300.
- In medium bowl, combine flour and baking powder. Mix well with whisk and set aside.
- In medium bowl with an electric mixer cream butter and sugar. Add egg and vanilla and beat on medium until smooth. Add the flour mixture and blend at low speed until thoroughly combined. Dough will be firm.
- Scoop tablespoons of dough, roll into 1-inch-diameter balls and place on ungreased cookie sheets, 1 inch apart. Witht he small end of a melon baller, scoop out the center of the dough balls. Be careful to not scoop all the way through the cookie. Place 1/2 teaspoon of jam in the center of each dough ball. Place scooped out dough back into the bowl to use to form more cookies.
- Bake 22-24 minutes or until light golden brown. Transfer to a cool flat surface.
