A Delicious recipe for Cornmeal and Coriander Crusted Fish ( halibut, sea bass, black cod) OR Tofu with a Fava bean and Corn Succotash, with cilantro and lime.

2 x 6 ounce Halibut Filets ( or seabass, black cod, or tofu filets)
1 tablespoon flour
1 tablespoon cornmeal
1 tablespoon coriander
¼ teaspoon, plus extra pinch of salt
¼ teaspoon smoked paprika - optional
Summer Succotash:
2 Tablespoons olive oil
½ cup onions- diced
10-12 fava bean pods, shelled
1 poblano, pasilla or bell pepper, diced
3 garlic cloves- minced
½ a jalapeno- finely diced ( optional)
2 ears of corn, shucked, kernels cut off
½ cup chicken broth or stock
1 lime- juice
1 tablespoon cumin
1 teaspoon coriander
2 large pinches kosher salt
Pinch cayenne, or chipotle powder- optional
2 tablespoons or more, fresh cilantro
Optional additions- bacon crumbles, butter, other veggies like zucchini, red bell pepper,

Steps:

  • Preheat oven to 350F
  • Mix flour, cornmeal, salt and spices together in a wide shallow bowl, big enough for dredging the fish or tofu.
  • To make fish ( or tofu) heat oil in a skillet, over medium high heat. Dredge fish or tofu in the Cornmeal mixture and place in the hot skillet, searing until golden brown, about 3 minutes. Turn over, turn heat down to medium. Cook 2-3 more minutes, and place in a warm oven, until cooked to your desired "done-ness".
  • Make the succotash - In a large skillet, heat oil over medium high heat. Add onions, and sauté for 2-3 minutes. Turn heat down to medium, add fava beans and poblano pepper and and cook for 5 minutes, stirring occasionally, lowering heat if necessary.
  • Add garlic, jalapeño, fresh corn and salt and spices and cook 2-3 minutes. Add broth, and simmer until reduced. For extra richness, you could add bacon crumbles or a dollop of butter.
  • Squeeze a half of a small lime, and fold in the cilantro .
  • Taste and adjust salt and lime. Turn heat off.
  • Divide among bowls and place the fish or tofu over top, garnishing with fresh lime and cilantro

2 tablespoons butter or margarine
2 cups frozen diced O'Brien potatoes
1 package (9 oz) frozen baby lima beans
1 cup frozen whole kernel corn (from 1-lb bag)
1/2 teaspoon garlic pepper blend
1/2 teaspoon seasoned salt
1/2 teaspoon dried thyme leaves
1/8 teaspoon ground red pepper (cayenne)

Steps:

  • Heat oven to 425°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray. Cut halibut into 4 serving-size pieces. Place halibut in baking dish. Melt 1 tablespoon of the butter; brush over halibut.
  • In 10-inch nonstick skillet, melt remaining 1 tablespoon butter over medium-high heat. Cook potatoes in butter 5 minutes, stirring occasionally. Stir in lima beans and corn. Cook 3 to 5 minutes or until vegetables are crisp-tender. Spoon mixture around halibut in baking dish. Sprinkle halibut and vegetables with remaining ingredients; stir vegetables slightly.
  • Bake uncovered 20 to 25 minutes or until halibut flakes easily with fork and vegetables are tender.

POTATO-CRUSTED HALIBUT

1 1/2 cups extra-virgin olive oil
6 garlic cloves, smashed
1 thyme bundle
2 bay leaves
1 lemon, zest removed from the lemon with a vegetable peeler in wide strips
Pinch crushed red pepper flakes
1 tablespoon fennel seeds
3 Yukon gold potatoes, scrubbed
4 (6-ounce) Pacific halibut fillets
Kosher salt

Steps:

  • In a small saucepan over medium heat, combine the olive oil, garlic, thyme, bay leaves, lemon zest, crushed red pepper flakes and fennel seeds. Bring to a boil then turn the heat off and let it sit for at least 1 hour. (*Big tip: This can be done ahead and used for LOTS of different things.)
  • Using a mandoline, slice 1 potato extremely thin, (paper thin), in elongated rounds. Lay a piece of parchment paper on a clean, dry work surface. Arrange 3 potato slices in an overlapping vertical line pressing them together as you put them on the parchment. Repeat this process until you have a 4 by 6-inch overlapping potato rectangle that replicates fish scales. Brush the potato "scales" with the infused oil and sprinkle with salt. Season the halibut with salt. Lay the halibut fillet closer to 1 end of the potato rectangle than the other and then roll the fish up in the potato slices, using the parchment to help facilitate the rolling. Press to compact and really adhere the potatoes to the fish. Brush the outside of the potatoes with the infused oil to seal the potatoes and to prevent the potatoes from turning brown, this will also help make a nice tight "fish package". Reserve the fish in the refrigerator while preparing the remaining fillets. Refrigerate the fillets for at least 1 hour before cooking.
  • To cook the fish:
  • Add the infused olive oil to a large nonstick saute pan until the bottom is generously covered and bring the pan to a medium-high heat. Season the fish with salt and add to the pan. Cook the fish on both sides for 3 to 4 minutes frequently spooning the excess oil over the fish to "baste" it. The potatoes should be crispy golden brown and very well flavored and the fish will be succulent inside its crispy "scales". Transfer to serving plates and serve.
  • This will make a fish lover out of anyone!

This is a great method for roasting any type of firm-fleshed fish fillet. The seasoning mimics one often used for pork chops, and all the cooking is done in the oven, except for the initial boiling of the potatoes. The result ticks all the boxes - it is easy to prepare; it uses a minimum of pots and pans; and most important, it is utterly delicious.

1 1/2 pounds fingerling potatoes
Kosher salt
Extra-virgin olive oil
4 (6- to 8-ounce) halibut fillets (or substitute other firm-fleshed white fish), about 1-inch thick
Black pepper
2 garlic cloves, minced
1 teaspoon roughly chopped rosemary, plus 1/2 teaspoon finely chopped rosemary, for garnish
Pinch of red-pepper flakes
1/2 teaspoon crushed fennel seeds (optional)
3 tablespoons chopped parsley
1/2 teaspoon grated lemon zest
Lemon wedges, for serving

Steps:

  • Heat oven to 400 degrees. Boil potatoes in well-salted water for 15 minutes, until tender. Rinse with cold water to cool, then cut each potato in half lengthwise.
  • Transfer potatoes to shallow roasting pan, or rimmed baking sheet large enough to hold potato halves in 1 layer.
  • Drizzle potatoes generously with 2 to 3 tablespoons olive oil. Using your hands, massage the potatoes to coat with oil and turn potatoes cut-side up. Sprinkle lightly with salt. Roast potatoes, uncovered, until nicely browned, 20 to 25 minutes.
  • As potatoes cook, prepare the fish: Season fish fillets on both sides with salt and pepper. Sprinkle with garlic, rosemary, red-pepper flakes and crushed fennel seeds, if using. Drizzle with 1 tablespoon olive oil, then rub seasoning into fillets.
  • When potatoes are brown, use a spatula to push them to the sides of baking dish, leaving room in the center for the fish. Lay fillets side by side in 1 layer. Roast fish until opaque and just cooked through, about 15 minutes. It should flake when pressed gently.
  • Transfer fish and potatoes to a warm platter or individual plates. In a small bowl, mix together parsley, lemon zest and finely chopped rosemary. Sprinkle parsley mixture over fish and potatoes. Serve with lemon wedges.

Roasted Halibut over Braised Potatoes, Tomatoes and Olives image

1 tablespoon extra-virgin olive oil
2 Yukon gold potatoes, sliced into 1/4-inch rounds
Kosher salt and freshly ground black pepper
1 small lemon, thinly sliced, seeds removed
1 medium shallot, thinly sliced
1 pint cherry or grape tomatoes, halved
1/2 cup dry white wine
1/4 cup pitted Kalamata olives, halved
1 tablespoon capers, drained
2 teaspoons fresh thyme leaves
2 tablespoons unsalted butter, cubed
Four 6-ounce center cut halibut fillets (about 1 1/2 inches thick)
1/4 cup fresh parsley leaves, chopped, for garnish

Steps:

  • Preheat the oven to 425 degrees F.
  • Add the oil to a large cast-iron skillet over medium heat, then line the bottom with the potato rounds. Season with salt and pepper, add enough water to cover and bring to a boil. Cook until softened, about 5 minutes. Once the potatoes are softened, drain off the excess water so there is only a small amount left on the bottom. Scatter the lemons, shallots, tomatoes, wine, olives, capers and thyme over the potatoes. Dot with the butter. Season the fish with salt and pepper on both sides and put on top of the potatoes.
  • Make a parchment lid for the skillet by cutting a piece of parchment paper that's larger than your skillet. Fold it in half, then fold it in half again in the other direction so you have creases on 2 sides of the paper. Starting with the folded tip, fold on the diagonal 3 times, like a fan, to form narrow triangles. Measure how large your parchment lid should be by placing the tip of the triangle above the center of the skillet and cutting it where it hits the edge of the skillet. Cut off the folded tip to make a small hole in the center. Open up the parchment and set aside.
  • Open the parchment lid and place it over the skillet. Transfer the skillet to the oven and bake until the potatoes are soft and the halibut is fully cooked and no longer translucent, 15 to 20 minutes.
  • Remove the parchment lid. Serve, drizzled with some of the sauce from the skillet and some oil, then sprinkle with the parsley.

East Coast Halibut and Potato Chowder image

2 tablespoons canola oil
1 1/2 cups finely chopped onion
1 1/2 tablespoons minced garlic
1 tablespoon finely chopped shallots
1 bay leaf
2 teaspoons ground tumeric
2 cups peeled potatoes, cut into small to medium cubes
6 cups bottled clam juice
1/4 teaspoon of tabasco or other hot sauce
Fresh black pepper to taste
3 tablespoons roux (1 tablespoon of butter and 2 tablespoons of flour that is cooked)
2 pounds boneless, skinless halibut cut into 1/2-inch cubes
2 cups milk
1 cup heavy cream
2 tablespoons chopped parsley

Steps:

  • In a large sauce pot over medium heat place canola oil. Add onion, garlic, shallots, bay leaf and tumeric and saute for 2 to 3 minutes. Add potatoes, clam juice, hot sauce, black pepper and bring to a boil and reduce heat and simmer for 20 minutes. After 20 minutes, check to see if potatoes are done. Add roux and mix well to thicken. Add fish and simmer for 1 minute. Stir in the milk and cream and increase the heat to bring to a boil. Garnish with parsley and serve.

Herb and Potato Crusted Halibut with Cucumber Noodles and Zucchini Blossoms image

6 large heirloom tomatoes, cored and chopped
1/2 English cucumber, peeled and chopped
1 clove garlic, smashed
Kosher salt
1/2 cup fish sauce
1/2 cup rice wine vinegar
2 1/2 teaspoons sugar
1 teaspoon sambal
3 English cucumbers, peeled
2 sprigs thyme, stems removed and leaves chopped
1/2 bunch chives, thinly sliced
1/2 bunch flat-leaf parsley, stems removed and leaves finely chopped
1 cup instant mashed potato flakes
Four 6-ounce halibut fillets, skin removed
Kosher salt
2 large eggs, beaten with 1 tablespoon water
Extra-virgin olive oil
2 cloves garlic, smashed
4 baby zucchini, diced
2 ears corn, kernels removed
3 large heirloom tomatoes, 2 sliced 1/2-inch thick and 1 diced
Canola oil, for frying
1 cup all-purpose flour
1 cup white wine, plus more as needed
4 zucchini blossoms
Micro basil, for garnish

Steps:

  • For the tomato water: Line a hand strainer with cheesecloth and set over a large bowl. Add the tomatoes, cucumbers, garlic and a nice big pinch of salt to the bowl of a food processor. Pulse a few times, scrape down the sides with a spatula, and pulse again. Pour the mixture into the cheesecloth-lined strainer. Set aside to strain for 2 hours, giving it an occasional stir to redistribute the juices.
  • For the cucumbers: Add the fish sauce, rice wine vinegar, sugar and sambal to a large bowl and stir to combine. Trim the ends of the cucumbers so they are even in size. Using a mandoline, shave the cucumbers lengthwise on all sides, turning the cucumber when you get to the seeds. Discard the center with the seeds. Stack the shaved cucumber and slice lengthwise into noodles, about the width of linguine. Add to the dressing and sit for 30 minutes. Drain and set aside.
  • For the fish: Preheat the oven to 350 degrees F.
  • Add the thyme, chives, parsley and potato flakes to a small bowl and mix to combine. Sprinkle the halibut with salt, then brush with the egg wash. Dip each piece of fish into the herb and potato flake mixture, pressing firmly to ensure the crust is tightly adhered. Place onto a sheet tray with the crusted side up and set aside.
  • Heat a large saute pan with some olive oil and the smashed garlic over medium-high heat. Swirl the pan to infuse the oil with the garlic. Cook until the garlic is golden brown, a few minutes, then remove from the pan. Add the zucchini and cook to soften, 2 to 3 minutes, then toss in the corn and cook for another minute. Finally, add the diced tomatoes and season with salt. Cook for just a minute, then turn off the heat.
  • Heat a large nonstick pan with some olive oil over medium-high heat until the oil shimmers. Add the fish, crusted side down. Cook until the crust is golden brown and crispy, about 5 minutes. Flip the fish, then transfer onto a sheet tray lined with a rack. Arrange the sliced tomatoes next to the halibut. Place into the oven and bake until it reaches an internal temperature of 125 to 130 degrees F when inserted with a thermometer, 5 to 7 minutes.
  • Set up a deep fryer and heat canola oil to 350 degrees F. Combine the flour and wine in a small bowl and stir to make a batter. It should be the consistency of a thin pancake batter. If it's too thick, add a bit more wine. Dip the zucchini blossoms into the batter, then fry until golden brown, 1 to 2 minutes, flipping halfway through. Drain on a paper-towel-lined plate and season with salt.
  • To serve: Place a slice of the roasted tomato on the bottom of a shallow bowl and top with the cucumber noodles. Add some of the sauteed zucchini, corn and tomatoes over the top, followed by the fish, crust side up. Garnish with the fried zucchini blossoms and micro basil. Pour some of the tomato water around the edge of the plate right before serving.

Steps:

  • Preheat oven to 425'
  • In a 2 quart glass baking dish, lighty sray with a cooking spray.
  • Cut fish into 4 serving pieces.
  • Place fish in baking dish, brush with melted butter.
  • In a medium skillet, heat oil over medium-high heat. Cook potatos in oil 5 minutes, stirr occasionally. Add in lima beans and corn. Stir well and cook for 5 more minutes or until vegetables are tender and still crisp.
  • Place veggies around fish and sprinkle with each of the garlic-pepper blend,seasoning salt,thyme and red pepper or(cayenne).
  • Bake in oven for 20-25 minutes or until fish and veggies are tender.

  • At least once a week, I try to make a fish dish, and since my wife and I both really like Halibut, it’s on the menu quite often. As such, I’m always looking for new ways to cook halibut, so I can keep it interesting. Fortunately, clean, light flavored fish (like halibut) go with a tremendous variety of foods, so it’s easy to change up the dish with the kinds of sides and other flavors you can bring to the plate. In this recipe video, I do a very simply seared halibut filet, and serve it over a vegetable succotash, that provides body, texture, and flavor. It’s easy to make, and you can do it in less than an hour. Hope you enjoy it! Recipe Overview and Keys to Success For best seared Halibut and Vegetable succotash, just follow these few things:
  • Cooking the fish properly is very important. Use high heat to make sure you get a good sear on both sides, and remember it won’t take long to cook. Overcooked halibut is dry, and tough, so better a bit under than a bit over. You want to just cook it through, which you can tell by making a small cut and testing the center; once it's opaque it's done. The vegetables will take much more time than the fish (which only takes a few minutes), so get them just about totally cooked before starting the fish Cook the mushrooms separately, and get them well cooked; with the moisture mostly evaporated. That concentrates the flavor and gives them a great texture; then add them at the last minute Season and taste as you go
