1/3 cup zesty Italian dressing
1/2 teaspoon salt
1/2 teaspoon garlic-pepper blend
1/2 teaspoon dried basil leaves
4 halibut fillets, about 3/4 inch thick (about 2 lb)
2 cups refrigerated cooked new potato wedges (from 1-lb 4-oz bag)
1 medium zucchini, cut into 1/2-inch pieces (1 cup)
1 cup small whole fresh mushrooms

Steps:

  • Heat oven to 425°F. Spray 15x10x1-inch pan with cooking spray.
  • In small bowl, mix dressing, salt, garlic-pepper blend and basil. Place fish and vegetables in pan. Drizzle with dressing mixture, turning fish and vegetables to coat.
  • Bake uncovered 30 to 35 minutes, turning vegetables once or twice, until fish flakes easily with fork and vegetables are tender.

Halibut is a favorite fish for many people because of it's mild taste and meaty texture. It certainly is one of mine. Here is a wonderful recipe for halibut baked with vegetables.

2/3 cup onion (thinly sliced)
1 pound halibut ( or other similar meaty fish)
1 yellow pepper (sliced)
1 red pepper (sliced)
1 cup mushrooms (sliced)
1/4 cup fresh parsley (chopped)
1/2 cup white wine
2 tablespoons lemon juice
Fresh dill
1/8 teaspoon pepper

Steps:

  • Preheat oven to 400ºF.
  • Arrange onion slices in the bottom of a baking dish sprayed with non-stick spray and place the fish on top. Combine the next four ingredients and spread over the fish. Combine wine, lemon juice, dill and pepper and pour over the whole thing.
  • Cover and bake for 20 minutes.
  • Serve with lemon wedges.

3/4 cup finely chopped toasted walnuts
1/2 cup panko (Japanese breadcrumbs)*
1/4 cup (packed) chopped fresh Italian parsley
2 tablespoons finely chopped fresh basil
2 tablespoons finely chopped fresh chives
6 8-ounce halibut fillets (each about 1 inch thick)
6 tablespoons butter, melted
Lemon wedges

Steps:

  • Preheat oven to 450°F. Spray rimmed baking sheet with nonstick spray. Mix walnuts, panko, and all herbs in small bowl; sprinkle with salt and pepper. Brush each fish fillet with 1 tablespoon melted butter; sprinkle with salt and pepper. Place fish on prepared baking sheet. Sprinkle panko-herb mixture atop fish, dividing equally and pressing to adhere. Roast fish until just opaque in center, about 8 minutes. If crisper topping desired, preheat broiler and broil fish about 1 minute, watching carefully to prevent burning. Transfer fish to plates; garnish with lemon wedges.

1 tablespoon lemon juice

¼ cup dry white wine

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a shallow baking dish.
  • Rub the halibut fillets with 1 tablespoon of lemon juice, then season with salt and pepper. Place the fillets into the prepared baking dish, then press the cilantro leaves onto the top of the halibut. Bake the halibut in the preheated oven until the fish flakes easily with a fork, 15 to 20 minutes.
  • Meanwhile, melt the butter in a skillet over medium heat. Stir in the green onions, red bell pepper, garlic, and red pepper flakes until the vegetables have softened, about 5 minutes. Pour in the white wine, and season with dill and tarragon. Simmer for 2 minutes, then add the chicken broth, half-and-half, Parmesan cheese, and remaining 1 tablespoon of lemon juice; season with salt and pepper to taste. Bring to a boil over medium-high heat, then dissolve the flour into the water, and stir into the boiling sauce. Return to a boil, then reduce the heat to medium-low, and simmer until the sauce has thickened, about 10 minutes. Spoon the sauce over the halibut to serve.

Steps:

  • For the lemon butter: Whisk together the lemon juice, salt, pepper, lemon zest and butter in a deep medium bowl until well blended (mixture will be like a thick sauce). Set aside until ready to use.
  • For the halibut and crispy shallots: Combine the olive oil, lemon juice, garlic, salt, pepper and garlic in an 8-by-8-by-2-inch glass dish. Whisk the marinade to blend. Add the halibut and turn several times to coat evenly. Let stand 15 to 20 minutes.
  • Combine the grapeseed oil and shallots in a medium heavy saucepan over medium-high heat. Cook, stirring often, until the oil heats up and the shallots turn golden brown, 5 to 7 minutes. Transfer the shallots with a slotted spoon to several layers of paper towels to drain and crisp. Sprinkle with salt and pepper just before using.
  • Heat a large dry nonstick skillet over medium-high heat. Lift the halibut from the marinade, letting the excess drain off. Add the halibut to the hot skillet and sear 3 minutes. Turn the fish over using a flexible metal spatula. Sear until still slightly pink in the center, about 3 minutes longer, depending on thickness. Transfer the halibut to plates.   • Halibut is one of my favorite fish to cook. I love the texture and the mild flavor, and it’s an easy fish to find. Best of all, Halibut in pretty “forgiving” when it comes to cooking. Don’t get me wrong, you need to be careful not to over or under cook it, but I think you’ve got a bit more room to play with than some other fish. In this recipe video, I cook an herb crusted halibut filet, served with a shitake mushroom broth, over mashed potatoes. The crispy herb crust gives the dish a nice texture, the mushrooms an earthiness, and the creamy mashed potatoes hold everything together. Recipe Overview and Keys to Success For this herb crusted halibut recipe there are just a couple things you need to be careful of. Don’t worry though, each is shown in the video:
  • Most importantly, don’t overcook the halibut. While it is a forgiving fish, you still need to be careful. Watch for the doneness clues, primarily the color around the edges – which I describe below and show in the video. The mushroom broth has very few ingredients, and is subtle. To extract the most flavor I use more mushrooms than I’ll actually want to eat, and cook them thoroughly to extract their flavor; and use a good chicken stock as it carries the broth.
