NORTH AFRICAN SPICED ALASKA HALIBUT
Steps:
- Heat oven to 400 degrees F. Mix all dry ingredients in a small bowl. Stir in harissa, garlic and olive oil.
- Rinse any ice glaze from frozen Alaska Halibut under cold water; pat dry with paper towel. Place halibut portions in spray-coated baking dish. Spoon and spread spice mixture over top of halibut. Cover dish with foil; seal. Roast 18 to 25 minutes for frozen halibut or 10 to 15 minutes for fresh/thawed fish. Cook just until fish is opaque throughout.
- Variation: Remove foil during last 10 minutes of cooking, until lightly browned.
HALIBUT IN FOIL PACKETS WITH NORTH AFRICAN FLAVORS

- Build a campfire and let it burn down until the embers glow; you don't want flames to cook the fish. Otherwise, heat an oven to 400 degrees.
- Quarter the preserved lemons. Slice away and discard the flesh and pith. Cut the remaining zest into strips and combine with the olives, sliced garlic, and cumin and coriander seeds.
- Place each halibut steak in the center of a large double layer of aluminum foil. Fold up the edges slightly, then lightly season the fish with salt and pepper. Top with 1/4 of the olive mixture and 1 tablespoon olive oil. Bring the edges of the foil together and pinch them firmly to create an airtight seal. The packets can be made a few hours ahead and refrigerated.
- Place the packets in the medium-hot embers of the fire, or if the fire is too fierce, on a rack above it. Leave to cook for 10 minutes or so, depending on the heat of the fire. The fish should feel just firm if prodded through the foil with a wooden spoon handle. Otherwise, cook in the oven for 15 minutes. Unwrap the packets carefully and scatter with chopped coriander, if you like.

EASY HALIBUT FILLETS
I made these quick and easy halibut fillets for my husband's birthday as halibut is his favorite fish. It's really important that the halibut is seared over really high heat. Serve with rice and green beans.

Steps:
- Combine melted butter, honey, lemon juice, liquid aminos, pepper, and garlic in a small bowl; mix to combine.
- Brush both sides of the halibut fillets with the butter sauce.
- Heat a cast iron skillet over very high heat. Add halibut filets and sear on each side for 90 seconds. Reduce heat to medium-high and cook on each side until fish can be easily flaked with a fork, 2 to 3 minutes per side.

HALIBUT IN FOIL
Steps:
- 1. Preheat oven to 350. Tear aluminum into 6 large squares. Brush each square with olive oil.
- 2. place halibut in the center of square. Drizzle each steak with wine. Put a thyme and parsley spring on each piece along with 1 slice of lemon and a few fennel seeds.
- 3. Grind pepper over each piece of fish and seal foil into a packet. Place all packets on a baking sheet and bake for 10-15 minutes.
SAFFRON HALIBUT PACKETS
Steps:
- For the tea: Add the saffron threads to the white wine, and let the flavors steep for 10 minutes.
- For the packets: Preheat the oven to 400 degrees F.
- Place the fillets onto a plate, and stain each one with a few steeped saffron threads from the tea, and refrigerate for 15 to 20 minutes.
- In a medium saute pan, pour in the remaining saffron tea, capers, carrots, orange zest, orange juice, and white wine. Bring the ingredients up to a simmer, and cook until the carrots are slightly tender, approximately 2 minutes. Stir in the butter, and season with salt, to taste, and remove the pan from the heat.
- Tear off 4 pieces of foil or parchment paper large enough to wrap up each fish fillet and vegetables (not too tight.)
- Place the whole green onion pieces in the center of the parchment. Lay a bed of carrot mixture over the whole green onions. Season the halibut with salt, and pepper, to taste, and place the fillets over the carrot mixture. Spoon the remaining sauce, and carrots over the fish, and fold up the parchment edges (not too tight), creating a sealed packet.
- Set the packets on a sheet tray, and bake until the fish is just cooked through, approximately 10 minutes.
- Once cooked, open the packets, and garnish the halibut with the green onion slivers.
- In a pot, melt the butter over medium heat, add the green onion whites, and garlic, and sweat until tender. Add in the saffron threads, and stir.
- Stir in the rice, ensuring the grains are well coated with the saffron-butter mixture.
- Pour in the water, and stir to combine.
- Bring the cooking liquid to a boil, cover, and reduce the heat to a simmer.
- Cook the rice until the rice is fully cooked, about 25 minutes.
- Season the rice with salt, to taste.
HALIBUT WITH SPICY SAUSAGE, TOMATOES, AND ROSEMARY
Nduja is a spicy, spreadable, fully cooked sausage; you'll find it at some Italian specialty stores.

- Prepare a grill for medium heat. (Or preheat an oven to 375°F.) Tear 4 sheets of heavy-duty foil to measure about 16x12". Set 2 sheets on a work surface; top each with a remaining sheet of foil (you are making 2 double-layer packets). Divide tomatoes, garlic, rosemary, and nduja between sheets, placing in the center. Season halibut generously with salt and pepper and set on top. Drizzle with wine and oil. Bring opposite sides of foil together in the center; crimp tightly, pressing out air, to close.
- Place foil packets directly on grill grates (or a rimmed baking sheet if using oven) and cook until tomatoes are beginning to burst and halibut is opaque all the way through, 14-16 minutes. Let rest at room temperature a few minutes, then carefully open and transfer fish to a platter. Top with tomatoes and cooking juices from packets.

- Packets can be assembled 1 day ahead. Chill.
