2 onions, chopped
3 garlic cloves, minced (or pressed)
1 tablespoon butter
2 tablespoons olive oil
3 tomatoes, chopped
1 1/2 lbs lean ground beef
1 tablespoon herbes de provence (or other herbs to your taste)
salt & pepper, to taste
1 egg yolk
2 tablespoons parmesan cheese
4 -5 cups mashed potatoes (instant is fine)
3/4 cup gruyere cheese, grated (can also use emmental or similar)

Steps:

  • In a large frying pan, cook the onions & garlic in the butter & olive oil on medium heat for about 5 minutes. Stir in the tomatoes, ground beef, herbs, salt & pepper. Cook until the meat is browned thoroughly. Turn off heat & add egg yolk & Parmesan cheese, stirring to mix completely.
  • Spread the meat in the bottom of a lightly oiled oven proof dish (a 9x13 would be perfect). Spread the potatoes on top of the meat mixture. And finish by sprinkling the grated cheese on top.
  • Bake in 400 deg oven for 15 to 20 minutes, until the cheese is melted & the potatoes lightly browned.

2 cups chopped leftover pot roast or beef stew
1/2 cup beef gravy
2 cups chopped cooked vegetables, like carrots, leeks, spinach, Swiss chard, etc.
Salt and freshly ground black pepper
3 cups mashed potatoes, heated
2 tablespoons freshly grated horseradish
1/2 to 3/4 cup fresh bread crumbs
1/4 cup grated Parmesan
2 tablespoons butter, cut into pieces

Steps:

  • Preheat the oven with 350 degrees F.
  • Combine the meat, gravy, and vegetables in a large saute pan and cook over medium heat just until everything is heated through. Season with salt and pepper.
  • Pour the heated mixture into a large glass pie plate or a round glass baking dish. Add the horseradish to the heated potatoes. Spread the mashed potatoes over the meat mixture, smoothing with a spatula and spreading to the edges of the pie dish.
  • Sprinkle the top with the bread crumbs and the Parmesan. Dot the top with butter. Bake for 45 minutes on the top shelf of the oven. Raise the oven temperature to broil and broil just until the crumbs are browned, about 1 minute. Serve.

6 potatoes (, about 3 lb / 1.2 kg)
1 lb shredded or knife-chopped beef (, ideally leftover stew meat)
1 carrot (, finely diced)
1 onion (, grated)
2 cloves garlic (, pressed)
2 tablespoons olive oil
1 tablespoon thyme
½ cup heavy cream
4 oz. grated cheese ((Gruyère, Emmental or Comté))
Salt
Black pepper (, freshly ground)
Slotted spoon
Potato masher
Baking dish

Steps:

  • Peel and cut the potatoes into pieces and cook them for about 25 minutes in a pot with salted water.
  • Remove them from the heat using a slotted spoon and reserve the cooking water.
  • In a large bowl, mash the potatoes using a potato masher and add any cooking water to obtain a less compact purée (do not use a food processor to mash the potatoes).
  • Add the heavy cream and mix.
  • Preheat the oven to 350 F (180°C).
  • Pour olive oil into a small skillet and heat over medium heat.
  • Add the onion and carrot and sauté, stirring regularly, until tender.
  • Add the beef, thyme, and garlic.
  • Add salt, pepper and mix.
  • Cook over medium heat for 3 minutes, stirring frequently.
  • In the bottom of a baking dish, spread the meat mixture and spread the mashed potatoes on top.
  • Sprinkle grated cheese and cook for 25 minutes.
  • Finish cooking with 3 to 5 minutes under the grill to brown the cheese and for the surface to be golden brown.
