Bake our indulgently boozy chocolate puddings with just five ingredients. Perfect for a dinner party if you're celebrating on St Patrick's Day - or at any time of year

150g unsalted butter , plus extra for the ramekins
200g dark chocolate (70% cocoa), roughly chopped
90g golden caster sugar
3 large eggs
90ml Guinness or other stout
clotted cream or thick double cream, to serve (optional)

Steps:

  • Butter four 9 x 5cm ramekins and set aside. Tip the butter, chocolate and a generous pinch of salt into a heatproof bowl. Set over a small pan of just-simmering water and stir until melted, then remove from the heat and leave to cool a little.
  • Put the sugar and eggs in a large mixing bowl and beat with an electric whisk until pale, almost doubled in volume and thick enough to leave a trail when the beaters are lifted up. Gently fold in the melted chocolate and the Guinness. Spoon the mixture into the ramekins, then chill in the fridge for 1 hr. Heat oven to 200C/180C fan/gas 6 and put a baking tray on the top shelf to heat up.
  • Place the ramekins on the hot baking tray and bake for 18 mins. Remove from the oven and leave to stand for a minute, then serve with a dollop of cream, if you like.

Soaking the fruit in Irish stout really plumps it up and gives a rich, dark pudding without the bitterness of brandy or rum

140g raisin
140g sultana
140g currant
140g date , chopped
50g mixed peel
1 large Bramley apple (about 125g), peeled and finely chopped
250ml stout Extra stout
zest 1 orange
zest 1 lemon
100g cold butter , plus extra for the basin
100g dark muscovado sugar , plus 2 tbsp
100g fresh white breadcrumb
50g self-raising flour
½ tsp ground cloves
½ tsp ground cinnamon
½ tsp ground ginger
½ tsp nutmeg
2 eggs , beaten

Steps:

  • Mix the dried fruit and apple, then add the stout, orange and lemon zests and stir. Cover and leave overnight to soak. Butter a 1.25 litre/2 pint pudding basin, then spoon in 2 tbsp dark muscovado sugar. Turn the bowl at an angle, jiggling the sugar around as you go to coat the inside of the bowl.
  • Mix the remaining dry ingredients in a large bowl. Grate the butter, then add to the bowl along with the eggs and fruit, and stir well. Spoon into the basin and level the top.

8 large egg yolks
1 cup sugar
One 14.9-ounce can Guinness Draught
3 cups heavy cream
7 ounces high-quality bittersweet (70 to 72% cacao) chocolate, finely chopped

Six 8-ounce old-fashioned glasses

Steps:

  • In large nonreactive mixing bowl, whisk together egg yolks and sugar.
  • Open can of Guinness and slowly pour into 4-cup measuring cup, pouring down side of cup to reduce foaming. Pour half of Guinness (about 7/8 cup) into heavy-bottomed 3-quart saucepan. Add 2 1/4 cups cream and whisk to combine. Set over medium heat and heat, whisking occasionally, until bubbles just begin to form at edges. Remove from heat, add chocolate, and whisk until smooth.
  • Slowly pour hot chocolate mixture into eggs, whisking constantly to prevent curdling. Return mixture to saucepan and set over moderately low heat. Cook, whisking constantly, until mixture thickens and coats back of spoon, about 15 minutes. (Pudding will look separated.) Pour into blender and blend on high for 1 minute. Divide pudding among glasses, leaving at least 1 inch of space at top of each. Cover with plastic wrap and refrigerate until chilled and set.
  • Meanwhile, pour remaining Guinness into small saucepan and bring to boil over medium heat. Reduce heat to moderately low and simmer, uncovered, until reduced to 1 tablespoon, about 20 minutes. Pour syrup into small bowl and let cool.
  • Beat remaining cream until soft peaks form. Add Guinness syrup and beat until combined. Divide cream among 6 glasses of pudding and serve.

1 (15 ounce) can Guinness draught
3 cups heavy cream
7 ounces high-quality bittersweet chocolate, finely chopped (70 to 72% cacao)

  • ~The higher the cacoa content of the chocolate, the more you'll taste it, rather than the Guinness.
  • ~Do NOT substitute half and half for heavy whipping cream--pudding and topping won't set up correctly.

4 eggs
2 1/4 cups nonfat milk
7/8 cup Guinness stout
1 cup sugar
7 ounces bittersweet chocolate
1/4 cup cornstarch
1 1/2 cups milk
1/4 cup sugar
1/8 cup cornstarch
1 egg
3 ounces white chocolate
1/2 cup Baileys Irish Cream

Steps:

  • Guinness Pudding:.
  • Mix sugar and eggs in a large bowl.
  • Pour Guinness into heavy 3 quart saucepan (if you pour the Guinness down the side of the pan it will not foam).
  • Add milk and cornstarch and whisk to combine.
  • Cook over medium heat whisking until bubbly.
  • Remove from heat and add chocolate.
  • Whisk until smooth.
  • Add chocolate mixture to egg mixture whisking constantly so it does not curdle.
  • Pour mixture back in saucepan and cook over low heat, whisking constantly, until thick (about 10 minutes).
  • Pour evenly into 6 small wine glasses leaving about one inch at top for Bailey's pudding.

  • Place cornstarch, egg, and milk in saucepan and cook over medium heat whisking until bubbly.
  • Turn heat down to low and add white chocolate whisking until smooth.

  • Top off the 6 wine glasses with this pudding.

500g mixed dried fruit
100g stoned date or prunes, chopped
100g stem ginger , drained and chopped, plus 2 tbsp syrup
zest and juice 2 oranges
225ml Guinness
a little butter , for greasing
50g whole almond , roughly chopped
200g suet
2 eating apples , grated
100g dark muscovado sugar
5 tbsp black treacle
100g self-raising flour
85g soft white breadcrumb
100g ground almond
1 tbsp mixed spice
1 tsp ground ginger
½ tsp ground cloves
3 large eggs
brandy , to serve (optional)

Steps:

  • Mix together the dried fruit, ginger, orange zest and juice, and Guinness in a bowl. Cover and leave to soak overnight.
  • Grease 2 x 1.2-litre pudding basins. Boil a kettle of water. To prepare your steamers, put a snug-fitting upturned bowl or plate in the base of 2 large, deep saucepans, big enough to hold your pudding basins. Add the remaining ingredients (except brandy) to the fruit mixture and stir well, making sure there are no pockets of flour. Divide between your prepared basins and cover with buttered baking parchment and a foil lid. Tie with string to secure and make a handle for easy lifting.
  • Stand the puddings on the upturned bowls or plates in your saucepans. Pour in enough boiling water to come halfway up the sides of the basins, cover with a tight-fitting lid and steam for 6 hrs, topping up with water if necessary. If your lids start to rattle as the puddings cook, place a couple of heavy cans on top to hold them down. Once cooked, the puddings can mature for up to 1 year in a cool dark place, so if you only eat one this year, that's fine.
  • To serve, reheat in a steamer for 1 hr until piping hot all the way through. Flame with brandy, if you like, as you bring it to the table.
