4 lbs corned beef brisket, Flat cut with seasoning packet
2 onions, peeled and cut into eights
15 ounces Guinness stout
2 cups water

Steps:

  • Remove excess fat from corned beef.
  • Place onions in a crock pot then brisket with season packet on top of onions.
  • Pour beer and water over place lid on.
  • Set crock pot on low for 6 hours.
  • Place cabbage on and cook on high for 1-2 more hours.
  • Remove meat carefully. It is very tender and can fall apart easily.
  • Slice any excess fat. It should slide right off.
  • Then Proceed with Recipe #57813 if desired.
  • Serve with cabbage, onions and your favorite Irish sides. Do check the menu above.

I discovered this tasty St. Patrick's day treat when I attended an Irish Rovers Concert. My family and friend insist that it is a staple at get togethers any time of the year. Roast this Corned Beef slowly at a low setting for a melt in your mouth delight. The aroma is fantastic!

4 pounds corned beef brisket
1 cup brown sugar
1 (12 fluid ounce) can or bottle Irish stout beer (e.g. Guinness(r))

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Rinse the beef completely and pat dry.
  • Place the brisket on rack in a roasting pan or Dutch oven. Rub the brown sugar on the corned beef to coat entire beef, including the bottom. Pour the bottle of stout beer around, and gently over the beef to wet the sugar.
  • Cover, and place in preheated oven. Bake for 2 1/2 hours. Allow to rest 5 minutes before slicing.

I found this recipe on All Recipes many years ago. I've changed the temp and cooking time and it turns out better. I have not made corned beef any other way since first trying it this way. The sugar helps to cut the saltiness of the corned beef and the beer adds a great flavor.

4 lb corned beef brisket
1 pkg seasoning that comes with corned beef
1 c brown sugar
1 - 12 oz bottle guinness dark beer

Steps:

  • 1. Preheat oven to 350 degrees F. Rinse the beef completely in water and pat dry.
  • 2. Place the brisket on rack in a roasting pan or Dutch oven. Rub the brown sugar on the corned beef to coat entire beef, including the bottom. Pour the bottle of Guinness beer around, and gently over the beef to wet the sugar. Sprinkle the seasoning packet over top.
  • 3. Cover, and place in preheated oven. Bake for 3 hours. Allow to rest 5 minutes. The last hour you can add carrots, red potatoes, and cabbage wedges. Cover with foil and bake 1 more hour.
  • 4. Note: I find some corned beef takes longer to get tender so just cook until it is done. Over the years, I have found this recipe works well in the slow cooker. I have never made it on a rack, as the original recipe states.

I select medium size onions and potatoes for this and I don't cut or peel the potatoes. This recipe came out delicious and my company loved the flavor of the corned beef brisket.

2 quarts water
2 tablespoons brown sugar
3/4 cup kosher salt
1/2 cup apple cider vinegar
1 (3 lb) beef brisket
4 garlic cloves, smashed
2 tablespoons pickling spices
1 teaspoon peppercorn, whole
1 teaspoon mustard seeds
2 teaspoons paprika

Steps:

  • Fill 4 quart crock or plastic bag with 2 quarts water. (use any type of non-metallic container) Dissolve brown sugar in additional 1/4 cup warm water. Add Kosher salt and vinegar, stir to dissolve and add remaining ingredients. Be sure the meat is beneath the surface of the liquid. Refrigerate for three weeks.
  • After 3 weeks, remove brisket and rinse. Add to 8-10 quart pot, (depending on the amount of vegetables you will use) fill with water and add 1 teaspoon mustard seeds, 1 teaspoon peppercorns, 3 cloves garlic, smashed, 1 Tablespoon apple cider vinegar, 1/2 Tablespoon Kosher salt and 1 Tablespoon of pickling spice. Bring to a boil, cover and simmer for 3 hours or until tender. Add (whole, unpeeled) potatoes, carrots and onions, turnips and parsnips, if desired. Continue to simmer covered for 15 minutes. Add cabbage wedges, simmer additional 6-10 minutes or until cabbage is soft and tender.
  • Serve with nice mustard and a horseradish sauce.

3 ½ cups Irish stout beer (such as Guinness®)

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • Mix salt, black pepper, paprika, basil, oregano, garlic powder, and onion powder in a bowl; rub spice mixture over brisket.
  • Arrange onion rings in the bottom of a roasting pan; lay brisket, fat-side up, atop onions. Scatter bay leaves around brisket. Pour beer over brisket. Cover roasting pan with an oven-proof lid or aluminum foil.

OMG, this rocked my world! Baking is the best way to retain all the flavors of a corned beef. I was raised on boiled corned beef. This by far blows that method "out of the water"! I don't think there is any turning back to the old way after this! This is a combination of recipes that I have previously posted. Corned beef needs to be baked long and at a low temperature in order to break down the connective tissue. *Please note: if your corned beef does not come with a flavor packet there are additional seasonings needed, as notes in step #2 below. 2 -4 lbs corned beef brisket, retaining the fat layer, do not trim away
1 spice flavor packet included with corned beef
1/2 tablespoon onion powder
1 teaspoon thyme leaves, dried
1 teaspoon paprika
1 teaspoon garlic powder
heavy aluminum foil

Steps:

  • Preheat oven to 275°.
  • NOTE: 3/14 This will be salty. If you would like to reduce the saltiness of your corned beef before baking, please follow this recipe recommendations recipe#361142.
  • NOTE: *If your corned beef does not include a flavor packet add 2 T peppercorns and 1/2 T coriander seeds to the dried seasonings listed above.
  • Combine the flavor packet with other dried ingredients. Using a spice grinder or a mortar and pestle, grind to desired texture. I prefer medium or med-fine. Set aside.
  • Rinse corned beef brisket well with cold water. Pat dry.
  • Get out your 9 x 13 baking dish.
  • Tear off a large sheet of HEAVY aluminum foil, enough to wrap, tent and enclose the corned beef.
  • Place the corned beef on the foil, in a baking dish, fat side up.
  • Sprinkle with seasoning mix and pat into the brisket.
  • Bring the foil up & around the corned beef, do not close up the foil.
  • Bake, unwrapped, for 2 hours.
  • After 2 hours, wrap the brisket tightly and tenting the foil but sealing it for the remainder of the time, an additional 2 hours. Feel free to check and make sure there is moisture in the foil, re-wrap and continue baking. Approximate baking time is 1 1/5 hours per pound. It may take longer depending on desired level of tenderness.
  • Bake to an internal temperature of 185°. Check for tenderness. Continue baking until the brisket is fork tender. It may take additional time depending on the thickness of the brisket.
  • Allow the meat to rest before slicing. Cut against the grain.
  • I prefer to use an electric knife to get nice thin slices.
  • Serve with horseradish, a hearty rye bread, Colleen's Colcanon potatoes, and Irish Soda bread (see suggestions in the intro).
  • Enjoy!

4 -5 lbs corned beef brisket (flat cut)
1 head cabbage, cut in four wedges
1 (1 lb) bag baby carrots
4 large potatoes, cut in four wedges, coated with
olive oil
2 large onions, cut in four wedges, coat with

1 cup brown sugar
2 tablespoons prepared mustard
1 teaspoon ground cloves

Steps:

  • Slow boil Corn Beef Brisket about 3 hours or until fork tender along with spices that come normally packaged with the Corn Beef.
  • Remove the cooked Brisket and place it in a shallow baking dish lined with tin foil, fatty side up.
  • Score the fatty side of the Corn Beef.
  • In a small bowl mix all the glaze ingredients together and spread on the scored Brisket.
  • Bake in hot oven 400 degrees approx 45 minutes or until the glaze bubbling has almost stopped.
  • In the mean time get a head start on the veggies.
  • The cabbage and carrots cooked in slow boiling water until firm tender.
  • The potato's and onions are placed on a cookie sheet lined with tin foil.
  • Bake potato's and onions in hot oven 400 degrees 35 minutes, or until potatos and onions are fork tender.
  • Season potato's and onions with kosher salt or seasoning salt and pepper while hot.
  • Butter the hot cabbage and carrots if you wish.
  • Suggestion.
  • Arranged on a large platter with all the veggies surrounding the hot sliced Corn Beef, this always looks so appetizing-- ENJOY!

The Irish butcher at my market gave me a new (to me anyway) recipe for corned beef & cabbage; he told me to cook it in Guinness Draught. (Guinness stout will make the dish bitter). Since everyone raved about it, I thought I'd share the recipe he gave me. Note: Some reviewers have mentioned that the broth/sauce is very salty. It is important to rinse your corned beef in cold water before cooking it to remove some of the excess salt from the corning process. (I usually soak mine in cold water for a bit depending on the brand - some are much saltier than others). --- I have tried 5 times today to change the wording of the last ingredient on the list from "1-2lbs carrot, peeled and cut into 3-inch pieces" to "1 - 2 pounds of carrots, peeled and cut into 3-inch pieces". Every time the change "goes through," it does not reflect the new wording. Grrrrrrr!

4 lbs flat cut corned beef brisket
1 (12 ounce) bottle Guinness draught (make sure you use Guinness draught, not stout as it will turn it bitter!)
1 medium yellow onion, peeled and cut into wedges

1/4 teaspoon ground cinnamon
1/8-1/4 teaspoon ground cloves (to taste)
1/4 teaspoon ground allspice

1 head cabbage, cut into wedges, rinsed and drained
6 medium white potatoes, peeled and quartered
1 -2 lb carrot, peeled and cut into 3-inch pieces

Steps:

  • Rinse corned beef under cold water, and pat dry.
  • In a Dutch oven, or other large pot with a cover, brown corned beef well on all sides over high heat.
  • Pour Guinness over the meat, and add enough water to just cover the brisket.
  • Add the onion, garlic, bay leaf, cinnamon, cloves, allspice and pepper to the pot.
  • Bring pot to a boil and skim off any foam.
  • Reduce heat to a simmer. Cover pot and simmer for 3 hours.
  • Add carrots, then potatoes and then the cabbage wedges to the pot.
  • Cover pot, and continue cooking until meat and vegetables are tender (about 20-30 minutes).
  • Remove meat and vegetables to warm serving platter/dishes, leaving the cooking liquid/sauce in the pot.
  • Over high heat, bring the cooking liquid to a boil, and cook until the amount of liquid is reduced by half (about 10 minutes).
  • Slice the corned beef; serve with the vegetables and the sauce on the side.
  • Note: Corned beef should always be sliced across the grain.

  • TIPS in Kevin's own words: Please read first. Process begins the night before the actual baking. Please plan accordingly.
  • Here is a recipe that has the proper spice mixture. You will need to soak the corned beef! Between 2 and 4 hours and change the water every 30 minutes. The reason you never hear people talk about this is because it is usually boiled.which takes the salt out. But roasting is a whole different technique. I would leave it UNFOILED for the first couple of hours. This will create a nice bark -- the outside area that will be intensely flavored. Then you can foil and finish cooking.
  • Cook it to an internal temperature over 185º. Unless you have a meat slicer and can slice VERY thin, cooking it to 150º will result in a VERY tough piece of meat. The connective tissue needs to breakdown and that takes much time and occurs around 170+º. To test for doneness, use a meat thermometer or simply poke the meat -- use a fork and twist it -- it should offer no resistance.OK, that's about it! Enjoy!
  • BEGIN DIRECTIONS:.
  • Soak corned brisket for 2-4 hours, changing water every 30 minutes.
  • Grind peppercorns and coriander seeds. Add remaining ingredients.
  • Remove brisket from water, pat dry and Rub spice mixture on the corned beef brisket.
  • Wrap tightly in plastic wrap and let sit overnight in the refrigerator.
  • Preheat oven to 250-275°.
  • Slow cook brisket uncovered for the first 2 hours. (At this point I add approximately 4 oz of beer) , then cover with foil. You will be slow baking for an additional 1 1/2 hours per pound until done.
  • Internal meat temperature needs to be near 185º or above when done. It is important to use a thermometer for this part. If it is above this temperature, now worries. Just recover and keep warm until ready to eat.
  • Allow meat to rest before slicing. Be sure to cut against the grain of the meat.
  • My personal note: I personally like to use an electric knife for slicing. Slice and thin or thick as you like.
  • In the photo: I served with boiled yukon gold potatoes (or baby reds), cabbage and carrots, the dump on the melted parsley butter (melt butter and add chopped parsley).
