Guava jam mixture:
1 5 pound canned ham
1 jar of Guava jam (18 oz) - I used 10 oz and it was okay!
1 block of butter or margarine
1 c. brown sugar

Steps:

  • Preheat oven to 300F. Score the top of your ham (even better would be cutting into it with serving sized cuts). Place into oven for 20 minutes. Guava jam mixture: Mix together all ingredients. Baste ham with half of the mixture, then put back into the oven for another 20 minutes. Baste it then with the second half of the mixture and put back into the oven for a final 10 minutes.

This recipe for our Holiday Ham is made every year at either Thanksgiving or Christmas. The original recipe is my mom's, but this recipe here has a little twists and tweaks that I've made. It's sooooo delicious! The photo is not mine, but will soon be replaced with one of my own.

HAM:
1 can(s) ham (5 lb.) or a smoked ham
whole cloves
5 Tbsp yellow mustard
1 c brown sugar
1 can(s) pineapple rings
toothpicks
maraschino cherries
GLAZE:
1 c guava jelly
2 Tbsp dark brown sugar
1 Tbsp dijon mustard
1/4 c white wine
1/2 c pineapple juice
1/4 c ketchup
1/4 tsp ground cloves
SAUCE:
1 c ham glaze that was set aside
1 can(s) cherry pie filling, (21 oz.)
1/2 c raisins (opt.)

Steps:

  • 1. Place the ham and the drippings in a deep dish roasting pan.
  • 2. Score the top of the ham, diagonal cuts about 1/4 inch deep and an inch apart. In each diagonal point (like a grid), push a whole clove in each point of the ham. Poke whole cloves around the sides of the ham.
  • 3. Spread the yellow mustard onto the top of the ham and the cloves.
  • 4. Pack the brown sugar on the top of the ham, making a slight mound.
  • 5. Arrange the pineapple rings on top of the brown sugar, over lapping them for a nice arrangement. Pour the pineapple juice into the roasting pan. Toothpick a maraschino cherry into the center of each pineapple ring to hold it there during the baking process.
  • 6. Bake the ham at 275 degrees for 2 hours, tenting the ham with foil during the last 30 minutes of baking.
  • 7. GLAZE:
  • 8. Combine all the ingredients and cook over medium-low heat till well incorporated.
  • 9. Set aside a cup of the cooked glaze mixture for the sauce.
  • 10. Pour the remaining glaze over the ham during the last 1/2 an hour of baking.
  • 11. SAUCE:
  • 12. Combine the juices in the roasting pan with the ham glaze, cherry pie filling and raisins (opt.), in a saucepan and warm it over low heat. Remove from heat.
  • 13. Slice the ham, use the pineapple rings and arrange it on a serving platter. Pour the hot sauce over the ham slices or serve it on the side.

This is a delish jam for breakfast, peanut butter and jam sandwiches, or for baking.

2 pounds ripe guavas, washed and trimmed
4 cups white sugar, or as needed
4 tablespoons lime juice, or as needed
1 (3 ounce) pouch liquid pectin

Steps:

  • Cut each guava into 8 pieces. Place in a pot and fill with water until guavas are just covered; bring to a boil. Reduce heat and simmer until fruit is very soft, about 1 hour. Remove from the heal and let cool for 10 to 15 minutes.
  • Strain contents of the pot through a fine mesh sieve into a 1-quart liquid measure, using a spatula to push fruit through the sieve so only seeds and skins remain. Take note, you should get about 4 cups fruit. Clean the pot and pour the fruit back in.
  • For every cup of fruit, add 1 cup sugar and 1 tablespoon lime juice. Stirring constantly, bring to a simmer and continue to cook until sugar is dissolved and jam has thickened, 15 to 20 minutes. If the jam thickens on its own and drips very slowly off a spoon, do not add pectin. However, if it does not thicken up enough, add liquid pectin and simmer for 1 minute longer. Pull off the heat.
  • While jam is cooking, inspect six 1/2-pint jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until jam is ready. Wash new, unused lids and rings in warm soapy water.
  • Fill hot, sterilized jars to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any residue. Top with lids and screw rings on tightly.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
  • Remove the jars from the stockpot and let rest, several inches apart, for 12 to 24 hours. Press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

Now considered a classic Hawaiian dessert, guava cake was created at Dee Lite Bakery in Honolulu, where it became widely popular. This version is adapted from blogger Alana Kysar's "Aloha Kitchen: Recipes From Hawai'i," a cookbook of traditional Hawaiian dishes. Outside of Hawaii and California, pink guava concentrate can be tough to find, but you can also use white guava concentrate or 100 percent guava juice. (If using juice, you'll need to reduce it; see Tip below.) To mimic that lovely pink color, add a few drops of red food coloring. If you don't, the cake will still taste like guava, but will look more like a vanilla cake.

2 1/2 cups/320 grams cake flour
2 1/2 teaspoons baking powder
3/4 teaspoon kosher salt
1/2 cup/115 grams unsalted butter (1 stick), at room temperature
1 1/4 cups/250 grams granulated sugar
6 large egg whites
1/4 cup/60 milliliters neutral oil, like canola or vegetable oil
1 cup/240 milliliters whole milk
1 cup/240 milliliters guava concentrate or reduced guava juice (see Tip)
2 teaspoons vanilla extract
4 drops of red food coloring (optional)
1 cup/240 milliliters heavy whipping cream
8 ounces/230 grams cream cheese, at room temperature
1/2 cup/100 grams granulated sugar
Pinch of kosher salt
3 drops of red food coloring (optional)
1/2 cup/120 milliliters guava concentrate or reduced guava juice (see Tip)

Steps:

  • Heat the oven to 350 degrees. Line a 9-by-13-inch baking pan with a parchment sling, leaving some over hang on the long sides.
  • Make the cake: In a large bowl, whisk the cake flour, baking powder and kosher salt until combined. In the bowl of a stand mixer fitted with the paddle attachment, combine the butter and sugar and beat on medium until well combined, about 3 minutes. Add the egg whites, in three additions, beating about 1 minute after each. Reduce speed to low, add the oil and mix until combined, about 1 more minute.
  • In a separate bowl, whisk together the milk, guava concentrate, vanilla and food coloring (if using). On low speed, alternate between adding the wet and dry ingredients to the bowl of the stand mixer, mixing well after each addition.
  • Pour the mixture into the prepared pan and bake until a toothpick inserted into the center comes out clean, 25 to 30 minutes. Let the cake cool in the pan for 10 to 15 minutes before transferring it to a wire rack to cool completely.
  • Make the frosting: In a stand mixer fitted with the whisk attachment, whip the cream on medium speed until frothy, 1 to 2 minutes. Gradually increase the speed to high and whip until it's light and fluffy with stiff peaks, another 2 to 3 minutes. (Don't overwhip!) Transfer the whipped cream to a bowl.
  • Replace the bowl on the stand mixer and fit the machine with the paddle attachment (there's no need to clean the bowl). Place the cream cheese in the bowl and mix on medium until smooth, 2 to 3 minutes. Add the sugar and kosher salt and increase the speed to high. Beat until light and fluffy, 2 to 3 minutes.
  • Lower the speed to medium and add the food coloring (if using). Add the guava concentrate in four additions, mixing well after each addition, and scraping down the sides of the bowl with a rubber spatula after the second and the final additions. Increase the speed to high and beat until smooth and well incorporated, 1 to 2 minutes. Remove the bowl from stand and, using the spatula, gently fold in the whipped cream in three additions, incorporating completely after each addition.
  • Spread the frosting on the cooled cake, using an offset spatula to smooth it over the edges. Chill for at least 2 hours before serving. Cut into 24 pieces and serve immediately.

1 (10- to 12-pound) fully cooked, trimmed, bone-in smoked ham (shank end), room temperature
2 cups freshly squeezed orange juice
1/2 cup packed dark brown sugar
3/4 cup bourbon
1/2 cup guava or apple jelly, warmed
2 large shallots, peeled and thinly sliced
3 whole allspice
3 whole cloves
Zest of 1 orange plus 2 oranges cut into 1/4-inch-thick slices
1 (2-inch-long) piece fresh ginger, peeled and grated
Special Equipment
1 (10- by 14-inch) roasting pan; toothpicks; pastry brush

Steps:

  • Position a rack in the lower third of oven and preheat to 325°F.
  • Using a sharp knife, score the fat covering the ham in a 3/4-inch-wide diamond pattern (do not cut into the meat). Place the ham in a 10-by-14-inch roasting pan and add 1 cup water. Roast the ham for 2 hours.
  • While the ham is roasting, prepare the glaze: In a heavy, medium saucepan over moderately low heat, combine 1 cup orange juice, brown sugar, and bourbon. Bring to a simmer and continue simmering for 10 minutes. Add the guava or apple jelly, shallots, allspice, and cloves, and continue simmering until slightly reduced, about 5 minutes. Add the orange zest and the remaining 1 cup orange juice, and bring to a boil. Continue boiling until thickened, about 5 minutes. Add the orange slices and fresh ginger, and cook until the orange slices are tender, about 2 minutes.
  • Once the ham has been in the oven for two hours, drape the glazed orange slices over the ham, securing them with toothpicks, and brush the ham and oranges with about 1/2 cup of glaze, reserving the remainder for serving. Continue roasting the ham until an instant-read thermometer inserted into the thickest part registers 145°F, about 30 minutes.
  • To Serve:
  • Remove the toothpicks from the ham and arrange the orange slices on a platter. Slice the ham and arrange on top of the oranges. Warm the remaining glaze and serve alongside.
