Easy Swedish Meatballs (IKEA Copycat) image

IKEA style Swedish Meatballs are so easy to make at home! My Easy Homemade Swedish Meatballs recipe can be ready in just 30 minutes... Serve with creamy gravy, mash and lingonberry jam for the full IKEA experience at home!

250 g beef mince ((see note 1))
250 g pork mince ((see note 1))
1 small onion (grated)
1 garlic clove (grated or crushed)
¼ teaspoon nutmeg ((ground))
¼ teaspoon allspice ((ground))
1 tablespoon dill (chopped finely (plus extra for garnish))
Salt and pepper to taste
2 tablespoons cornflour
550 ml beef stock ((From a cube is fine - I used 2 Kallo organic beef stock cubes))
50 ml double (heavy) cream
Mashed potatoes
Lingonberry Jam (or Cranberry Sauce)
Pickled Cucumbers

Steps:

  • Start by placing all the ingredients for the meatballs into a large bowl and mixing together with your hands until well combined.
  • Divide the mixture into quarters and then make 5 meatballs from each quarter (so 20 meatballs in total). Each meatball will weigh approximately 25g (I like to weigh my first meatball as a guide and then try to make the others about the same size).
  • Put the meatballs on an oiled grill rack over a tray covered in foil and place under a medium hot grill (broiler) for 7 minutes on each side, or until golden brown and cooked all the way through.
  • While the meatballs are cooking, get your creamy gravy started... In a large jug, mix the cornflour with a small amount of cold water to make a paste, then add the beef stock. Pour into a large wide saucepan or frying pan and cook over a medium heat until nicely thickened. Add the double cream and mix together thoroughly.
  • Finally add the meatballs to the creamy gravy. Cook the meatballs in the cream sauce for 1 more minute and then serve with the mashed potatoes, lingonberry jam (or cranberry sauce) and picked cucumber. Garnish with dill.

Some people drive for hours to get to an Ikea store, and we know they aren't making the trek just for the $9.99 chairs. They're going for the Swedish meatballs. The dish has been a main attraction at Ikea Restaurants since an in-store chef developed the recipe in Switzerland in 1985. Although Ikea's Real Swedish Food Book, published in 2000, included a meatball recipe, reps confirmed that it is not the one served at their restaurants. Ikea is keeping that baby a secret, so chefs in Food Network Kitchens hit a nearby store for a tasting, then created this spot-on copy.

1 cup breadcrumbs
2 tablespoons unsalted butter
1/3 cup minced white onion
2 cloves garlic, minced
1/4 teaspoon ground allspice
Kosher salt and freshly ground white pepper
1/2 cup milk
1 teaspoon Worcestershire sauce
3/4 pound lean ground beef
1/2 pound lean ground pork
1 large egg plus 1 egg white, beaten
Vegetable oil, for brushing
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 1/2 cups low-sodium beef broth
1 teaspoon Worcestershire sauce
1/4 cup heavy cream
Kosher salt and freshly ground black pepper
2 tablespoons chopped fresh parsley (optional)
Lingonberry jam, for serving (optional)

Steps:

  • Make the meatballs: Put the breadcrumbs in a large bowl. Heat the butter in a skillet over medium heat. Add the onion, garlic, allspice, 2 teaspoons salt and 1/4 teaspoon white pepper and cook, stirring, until soft, about 5 minutes. Add the milk and Worcestershire sauce and bring to a simmer. Pour the milk mixture over the breadcrumbs and stir to make a thick paste; let cool. Add the beef, pork, egg and egg white to the bowl and mix until combined.
  • Brush a baking sheet with vegetable oil. Roll the meat into 1-inch balls and arrange on the prepared baking sheet. Cover with plastic wrap and refrigerate at least 1 hour.
  • Preheat the oven to 400 degrees F. Bake the meatballs until cooked through, about 20 minutes.
  • Make the gravy: Melt the butter in a large skillet over medium heat. Add the flour and cook, whisking, until smooth. Whisk in the beef broth and Worcestershire sauce and bring to a simmer. Add the cream and meatballs. Reduce the heat to medium low and simmer until the gravy thickens, about 10 minutes. Season with salt and black pepper. Transfer to a serving dish; sprinkle with the parsley and serve with lingonberry jam, if desired.

1/2 cup finely chopped onions, divided
1 pkg. (24 oz.) ORE-IDA STEAM N' MASH Cut Russet Potatoes
1 tsp. oil
1 jar (12 oz.) HEINZ HomeStyle Savory Beef Gravy
1/4 cup whipped cream
1 Tbsp. LEA & PERRINS Worcestershire Sauce

Steps:

  • Heat oven to 375°F.
  • Cover rimmed baking sheet with foil; spray with cooking spray. Mix beef, pork, coating mix, ketchup, cheese, egg and 1/4 cup onions just until blended.
  • Shape into 32 meatballs, using about 1 Tbsp. meat mixture for each meatball.
  • Place on prepared baking sheet.
  • Bake 20 to 25 min. or until done (160ºF).
  • Meanwhile, prepare potatoes as directed on package. While potatoes are cooking, heat oil in large nonstick skillet on medium heat. Add remaining onions; cook and stir 3 min. or until crisp-tender. Add gravy, cream and Worcestershire sauce; mix well. Cook 3 min. or until heated through, stirring frequently.
  • Serve meatballs over potatoes topped with gravy mixture.

½ pound ground pork
½ cup chopped onion
¾ cup bread crumbs
1 egg
½ cup milk

¼ cup all-purpose flour
1 teaspoon paprika
1 tablespoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a large bowl, combine ground beef, ground pork, chopped onion, bread crumbs, egg, and milk. Season with parsley, Worcestershire sauce, 2 teaspoons salt, and 1 teaspoon pepper. Mix well with your hands. Shape into walnut-size balls, and place on baking dish.

  • When meatballs have cooked 30 minutes, pour sauce over the top, and return to the oven for 20 minutes, stirring occasionally.

A very old Swedish recipe. We always have this on Christmas. The recipe says to serve this with a separate gravy-we just make a simple gravy from the pan drippings. I have substituted venison for the beef.

2 medium potatoes, raw, peeled and grated
1 slice bread, crumbled
2 whole eggs, beaten
