GUACAMOLE WITH CRABMEAT
This is divine! A must have for get-togethers, picnics or just as a treat for yourself or your family! I like to serve my own salsa with this, http://www.recipezaar.com/recipe/Salsa-My-Way-218314, although there are tomatoes and just about everything you'd need to make salasa! lol I'm just a salsa person! I like this so much, I even put this on a piece of bread, the small, party loaves.You could also toast a couple of slices of bread, take the crusts off, and put a little on those as appetizers! Yummy!!!

CHERRY TOMATOES STUFFED WITH CRAB GUACAMOLE

- Cut a 1/4-inch cap off each tomato. Reserve the caps. Scoop out the seeds and pulp with a tiny spoon or melon-ball scoop. Season each hollowed tomato with salt and pepper. Set aside.
- Mash the avocado with a fork in a bowl, add the lemon juice, olive oil, hot pepper sauce, crabmeat, shallots, garlic, and chopped coriander and mix until smooth. Salt and pepper to taste.

SPICY CRAB CAKES TOPPED WITH GUACAMOLE

- Crab cakes: Mix the crabmeat, mayonnaise, egg, bread crumbs, scallions, the lime juice, 1/4 cup cilantro, and the hot sauce together in a small bowl. Season, to taste, with salt and pepper. Form the mixture into 8 (3/4-inch-thick) patties and refrigerate for 20 minutes.
- Breading: Mix the bread crumbs and 1/4 cup of cilantro on a plate. Carefully turn the patties in the bread crumb mixture until coated on both sides.
- In a large nonstick skillet, heat the olive oil over medium-high heat. In batches, fry the crab cakes until golden, about 3 minutes each side.
- Guacamole: Coarsely mash the avocados in a medium bowl. Lightly mix in the onion, cilantro, and lime juice. Season with salt and pepper, to taste.
- Transfer the crab cakes to a serving platter, top each cake with a tablespoon of guacamole, and serve.
