Moroccan-Style Pork Stew with Couscous image

Couscous is often found in the dry bean or pasta aisle in many supermarkets. Serve this with fresh friuts.

Provided by Pork

Categories     Main Dishes

Time 1h10m

Number Of Ingredients 17

3 boneless pork chops cut into 3/4-inch cubes
1/2 cup flour
1 teaspoon chili powder
1 teaspoon turmeric
1 teaspoon cinnamon
3/4 teaspoon salt
1/4 teaspoon black pepper
2 teaspoons olive oil
1 onions large, halved crosswise and cut into thin wedges
2 green bell pepper seeded and cut into 1/2-inch slices
15 ounces garbanzo beans drained
14 1/2 ounces beef broth
14 1/2 ounces diced tomatoes in juice
11 ounces vegetable juice cocktail spicy hot
8 ounces tomato sauce
1/2 cup raisins
10 ounces couscous

Steps:

  • In a plastic bag combine the flour, onion salt, chili powder, black pepper, turmeric and cinnamon. Add the pork cubes, a few at a time, and shake to thoroughly coat with the flour mixture; set aside.
  • In a large nonstick skillet heat the oil; cook & stir onion and green pepper until tender but not brown. Add pork and cook, stirring occasionally, for 2-3 minutes or until browned. Transfer mixture to a 4-quart casserole, reserving drippings.
  • In a medium bowl stir together the beef broth and remaining flour mixture; stir into the drippings. Add the undrained tomatoes, vegetable juice, tomato sauce and raisins. Cook, stirring constantly, until the mixture thickens. Cook, stirring constantly, one minute longer.
  • Pour broth mixture over pork and vegetables and stir to combine. Bake, covered, in a 350 degree F. oven for 45 minutes or until vegetables are tender, stirring occasionally. Prepare couscous according to package directions. To serve, spoon the couscous into soup bowls. Ladle stew over the couscous.

MOROCCAN-STYLE BRAISED PORK WITH COUSCOUS

Moroccan-style braised pork with couscous image

This slow-cooked pork is braised over a low heat until really tender and served with herby couscous.

Provided by Matt Tebbutt

Categories     Main course

Yield Serves 4

Number Of Ingredients 29

2 tsp cumin seeds
2 tsp fennel seeds
3 tsp coriander seeds
3 garlic cloves
pinch saffron
2 dried red chillies, finely chopped
2 tbsp finely chopped fresh coriander
5 tbsp olive oil
2 slices pork shoulder, about 7.5cm/3in thick
1 tbsp olive oil
1 onion, finely chopped
1 garlic head, separated into peeled whole cloves
750ml/1¼ pints chicken or lamb stock
1 bay leaf
10-15 dried apricots
300g/10½oz couscous
1 cinnamon stick
1 tbsp red wine vinegar
1 tsp caster sugar
3 tbsp olive oil
1 tbsp finely chopped fresh mint
1 tbsp finely chopped fresh coriander
1 tbsp finely chopped fresh flatleaf parsley
1 unwaxed orange, zest only
1 unwaxed lemon, zest only
2 tbsp raisins
2 tbsp flaked almonds, toasted
2 tbsp pistachio nuts, toasted and roughly chopped
salt and freshly ground black pepper

Steps:

  • For the marinade, place all of the ingredients into a blender and blitz to a paste. Rub the marinade into the pork slices, cover and put in the fridge for 24 hours.
  • After 24 hours, heat the oil in a large frying pan, add the onion and garlic cloves and sweat for 2-3 minutes. Add the pork and its marinade, stock, bay leaf and apricots and braise very gently over a low heat for 2-3 hours, or until very tender.
  • For the couscous, place the couscous in a large bowl with the cinnamon stick. Cover with boiling water, place a plate over the bowl and leave for 10 minutes. Meanwhile, mix the vinegar, sugar and oil together in a small bowl. Fork the vinegar mixture though the cooked couscous. Stir in the chopped herbs, orange and lemon zests, raisins, almonds and pistachios and season with salt and pepper.
  • Cut the pork slices into four portions and place on warmed plates. Spoon some of the marinade with the onion, garlic cloves and apricots over the pork. Serve immediately, with the couscous alongside.

MOROCCAN BRAISED LAMB WITH COUSCOUS

Moroccan Braised Lamb with Couscous image

For Claude Lelouch and other French Jews from North Africa, couscous (a term that refers both to the stew and to the grain) is comfort food. When Suzon Meymy started cooking as a young bride living in Paris, her native Morocco seemed terribly far away, so she wrote to her mother, asking for recipes. "My mother was so unhappy that I was in France, so she sent me cooked chicken and flans. What she didn't know was that they didn't travel well, so we couldn't eat them when they arrived." When Suzon cooks lamb couscous today, in her small apartment in a Paris suburb, she uses her mother's techniques. "My mother, who was the couscous-maker of Mogador, spent all her time in the kitchen," she told me. "I watched her and my sisters cook for every festival in our town. They were exhausted from so much cooking. I saw them falling apart with fatigue." Suzon, a very good cook, takes the time to make this lamb stew only when her whole family is present. What I like about this amazing recipe for couscous is that the vegetables are not overcooked. Serve the lamb with couscous (see page 270) and a delicious Moroccan squash dish (see page 302)

Yield at least 12 servings

Number Of Ingredients 20

2 shoulders of lamb (about 5 pounds each, including the bone)
Salt and freshly ground pepper to taste
4 tablespoons vegetable oil
1 leek, cleaned and diced
2 onions, peeled and diced
4 turnips, halved
4 carrots, peeled and cut into rounds about 1/4 inch thick
2 teaspoons grated fresh ginger
1/2 teaspoon ground cinnamon
1 teaspoon ground turmeric
1/2 teaspoon ras el hanout
4 or 5 cloves garlic, diced
4 zucchini, each cut into 4 pieces
1 to 2 tablespoons harissa sauce, or to taste (see following recipe)
1 tablespoon harissa (see page 33)
1 cup couscous broth (see page 270)
Salt and freshly ground pepper to taste
1 heaping teaspoon ground cinnamon
1 hot Spanish pepper, diced
(about 1 cup)

Steps:

  • The day before serving, season the meat heavily with salt and pepper, and sear it in a frying pan with one tablespoon of the oil. Then preheat the oven to 250 degrees. Put the meat in a pot, add a little water, and braise, covered, for about 2 hours, or until tender. Set aside to cool, and then refrigerate overnight.
  • Also the day before serving, heat the remaining oil in another pot, and sauté the leek and the onions. When the onions are translucent, add the turnips, carrots, ginger, cinnamon, turmeric, ras el hanout, salt and freshly ground pepper to taste, and garlic. Cover the vegetables and spices with water, and simmer, covered, until the carrots are tender.
  • The next day, cut the lamb into 2-inch chunks, and put it in the pot with the vegetables. Add the zucchini. Simmer slowly until the zucchini is just cooked but still bright green. Adjust seasonings, and stir in the harissa sauce. (I also serve more at the table, so that people can adjust the heat to their taste.)
  • Stir together the harissa, couscous broth, salt and freshly ground pepper to taste, cinnamon, and Spanish pepper in a small bowl. Serve with the couscous.

MOROCCAN SPICED STEWED PORK BELLY IN A SLOW COOKER

Moroccan Spiced Stewed Pork Belly in a Slow Cooker image

Not something you would find on a real Moroccan menu. I love pork belly and I love Moroccan spices so I decided to combine the two and the results were delicious! To save time I didn't make the Ras el Hanout this time - I had some that I bought (Moroccan Spice Melange by Moustaffa - a wonderful blend) - you can do as well for cheaper by blending and grinding your own.

Provided by DoctorDave

Categories     Stew

Time 9h30m

Yield 4 serving(s)

Number Of Ingredients 15

2 lbs pork belly
2 medium yellow onions, diced
4 small yellow onions, peeled and quartered
4 garlic cloves, minced
1 1/2 inches fresh ginger, minced
1/2 cup dried mushroom (optional)
2 cups chicken stock
1 1/2 tablespoons ras el hanout spice mix
1 pinch saffron
1 teaspoon honey
salt
1 tablespoon argan oil (this is very expensive and hard to find, you can use any other oil you like but if you can get your )
200 ml strained yoghurt (I use Fage 2 %)
1/2 cup strained tomatoes
1 cup white wine (or light red if you have that on hand) (optional)

Steps:

  • Heat oil in a deep cast iron skillet (or a cast iron dutch oven) over medium high heat. Cube the belly with skin on and salt the meat. Add meat to oil and brown on each side. Work in batches if your skillet is small - don't crowd the meat. Remove the meat from the skillet and set aside in a bowl.
  • Add diced onions to the skillet and fry in the oil until they are beginning to brown (ie past translucent but not burnt). Add ginger and garlic and stir up and fry for one more minute.
  • Add wine and stock and deglaze pan (scrape up the browned bits into the liquid). Add tomato, spices, safron, honey and salt. Taste for saltiness - do not undersalt. The liquid will not be flavorful or even tasty at this stage so only judge the salt. Add the yoghurt slowly and stir as you add (this prevents it from curdling). Reduce the liquid if it looks like a lot (if you reduce too much, no worries, you'll add back just the right amount of water in the next step).
  • Pour the liquid from the skillet into your slow cooker. Add the meat with any juices from the bowl into your slow cooker. Add the quartered small onions and the dried mushrooms. Add water to almost cover the meat and stir the liquid. Cook on low setting for 9 hours. I do all the prep the night before and then refrigerate the uncooked food in the insert until I'm ready to place it in the base the next morning and turn it on. When I get home I have a gorgeous fragrant meal.
  • Serve ladled over couscous and garnish with chopped fresh cilantro.

PORK WITH CUCUMBER & APRICOT COUSCOUS

Pork with cucumber & apricot couscous image

Try this flavour-packed pork dish with couscous for dinner. It's healthy, full of nutrients and contains four of your 5-a-day

Provided by Sara Buenfeld

Categories     Dinner

Time 1h

Number Of Ingredients 17

30g fresh coriander
4 small garlic cloves, chopped
2 tsp sumac
1 tbsp olive oil
400g pork fillet
1½ tsp smoked paprika
drop of olive oil, for roasting
2 red onions, halved and sliced
1 aubergine, cut into 1cm cubes
200g wholemeal giant couscous
small bunch of spring onions (about 100g), sliced
½ large cucumber (about 320g), chopped
1 lemon, zested plus 2 tbsp juice
2 tbsp extra virgin olive oil
15g mint, leaves chopped
8 fresh apricots (about 320g)
25g toasted flaked almonds

Steps:

  • Heat the oven to 190C/170C fan/gas 5. Put the coriander in a small bowl with the garlic, sumac, oil and 2 tbsp water, then blitz using a hand blender until smooth. Rub a quarter of it all over the pork, then put the pork on a large baking tray and sprinkle over the paprika.
  • For the couscous, rub a drop of oil over the red onions and aubergine, then scatter around the pork. (If your tray isn't large enough, use two.) Roast for 25 mins. Check the pork and if it isn't cooked but the vegetables are, take the vegetables out of the oven and cook the pork for another 10-15 mins until the juices run clear.
  • Meanwhile, cook the couscous following pack instructions, then drain and tip into a bowl with the remaining garlicky herb mixture. Add the spring onions, cucumber, lemon zest and juice, extra virgin olive oil and mint. Quarter and stone the apricots. If ripe, add the apricots to the salad bowl, but if a little firm, add them to the tray in the oven first to cook for 10 mins until softened.
  • Set the pork aside to rest. Add the roasted red onions, aubergine, apricots and almonds to the couscous and toss everything together. Slice the pork, serve half with half the couscous, and chill the rest for another day to eat cold. Will keep chilled for two to three days.

MOROCCAN BRAISED CHICKEN

Moroccan Braised Chicken image

The prunes and spices are what makes this Moroccan dish.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken

Time 1h20m

Number Of Ingredients 8

4 tablespoons olive oil
6 whole chicken legs, (about 12 ounces each), drumsticks and thighs attached, skin removed
Coarse salt and ground pepper
1 large onion, halved and thinly sliced
1 teaspoon turmeric
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1 1/2 cups large pitted prunes, (dried plums)

Steps:

  • In a large (5-quart) heavy pot, heat 2 tablespoons oil over medium-high. Season chicken generously on all sides with salt and pepper. Place 3 chicken legs in pot; cook, turning once, until browned, about 10 minutes total. Transfer to a plate. Repeat with remaining chicken and oil.
  • Add onion and 1/4 cup water to pot; cook, stirring to loosen browned bits on bottom. Add turmeric, ginger, and cinnamon; cook, stirring occasionally, until onion has softened, about 5 minutes. Return chicken to pot. Add 2 cups water and half the prunes; bring to a boil. Reduce heat; partially cover, and simmer until chicken is cooked through and very tender, about 45 minutes.
  • Transfer chicken to a platter; cover tightly with aluminum foil to keep warm. Add remaining prunes to pot; raise heat to high. Continue to cook, stirring occasionally, until sauce has thickened, about 10 minutes more. If not serving immediately, top chicken with sauce, cover and refrigerate up to 1 day in an airtight container. Otherwise, divide chicken among serving plates, and top with sauce.
