Here's what you need: eggs, avocados, lime juice, salt, pepper, tomato, red onion, fresh cilantro, garlic, jalapeño, tortilla chip, fresh cilantro

12 eggs
2 avocados
2 tablespoons lime juice
salt, to taste
pepper, to taste
1 tomato, diced
½ cup red onion, diced
2 tablespoons fresh cilantro
1 tablespoon garlic, minced
1 tablespoon jalapeño, minced
tortilla chip
fresh cilantro

Steps:

  • Place the eggs in a large pot and cover with 1 inch (2cm) of cold water. Cover with a lid.
  • Bring to a rolling boil, and remove from heat. Let the eggs sit, covered for 8-10 minutes.
  • Remove from water and immediately place in bath of ice water for a few minutes.
  • Remove shells and cut the egg in half, vertically.
  • Remove the yolk and place in a bowl.
  • Set the cooked whites aside on a serving tray.
  • In the bowl with the yolks, add all the ingredients for guacamole. Mash until well incorporated.
  • Spoon guacamole mixture into the bowls of the cooked egg whites.
  • Garnish with a broken piece of a tortilla chip and cilantro.
  • Enjoy!

1/2 cup KRAFT Real Mayo Mayonnaise
5 cherry tomatoes, chopped
1/4 cup finely chopped red onions
1 Tbsp. chopped seeded jalapeño peppers
2 tsp. lime juice
2 Tbsp. chopped fresh cilantro

Steps:

  • Cut eggs lengthwise in half. Remove yolks; mash with fork in medium bowl.
  • Add avocados; mash lightly. Stir in mayo, tomatoes, onions, peppers and lime juice.
  • Spoon into egg white halves; sprinkle with cilantro.

15 large uncooked eggs
1/2 small red onion, very finely chopped
1 small plum tomato, seeded and finely chopped
1/2 cup mayonnaise or 1/2 cup Miracle Whip (if you like the zip)
1 tablespoon lime juice
1/2 teaspoon garlic salt
2 dashes hot sauce
2 medium-ripe avocados, peeled
1 small jalapeno, seeded and chopped (optional)

Steps:

  • Place eggs in large saucepan, fill with cold water to cover eggs.
  • Bring to boil over medium heat.
  • Boil 12 minutes, drain.
  • Rinse with cold water.
  • Let cool to room temperature.
  • In small bowl, combine onion, tomato and mayonnaise, lime juice, garlic salt and hot sauce.
  • Add jalapeno if using.
  • Mix until well combined.
  • Place avocados in medium bowl and mash.
  • Add 1/4 cup the the onion mixture and stir until combined.
  • Once eggs have cooled, peel shells.
  • Slice eggs in half lengthwise and remove yolk.
  • Spoon or pipe guacamole into half the egg halves.
  • With yolk, mash, add other remaining onion mixture.
  • Spoon into other halve of egg yolk.
  • Refrigerate at least 1 hour.
  • I have also mashed the egg yolk and added to quacamole.
  • Good that way also.

While making deviled eggs and guacamole for a party some years back. I thought I wonder what the devilled eggs would taste like if I mixed the the guacamole with the devilled egg filling. Well the rest you probably can guess. Everybody loved my guacamole deviled eggs. Now they are on my table all the time for family gatherings and holidays.

5 large whole eggs, hard boiled
2 small has avacados or one large ripe avacado
1 teaspoon(s) cilantro chopped fine
1 teaspoon(s) green onion minced (scallion)
2 teaspoon(s) jalapeno pepper (seeded & minced)
1/2 large tomato seeded and diced fine
1/2 teaspoon(s) salt or to suit your taste
1 teaspoon(s) dijon mustard
1 teaspoon(s) worcestershire sauce or to taste
3 dash(es) louisiana hot sauce
2 pinch(es) spanish paprika
3 tablespoon(s) mayonaise
2 large limes, juiced
10 small capers one for each egg as garnish

Steps:

  • Place the eggs in a saucepan and pour enough water to cover them. Boil the water for three minutes time it. Remove the pan from the heat and let the eggs stand in the hot water for 10 minutes covered.
  • Rmove the eggs from the pan and under a stream cool water crack eggs and begin to peel them. Slice the eggs in half and remove the yolks. Place the yolks in a mixing bowl and add the avacado mash both together. Next add the cilantro, green onion, jalapeno, diced tomato, and mix gently. Pour in the lime juice, mix again and add the mayonaise, and dijon mustard. mix again
  • Season with salt, Louisana hot sauce, worcestershire sauce stir well. Fill empty egg white halves with the guacamole mixture. Garnish each one with a caper. Chii in the refrigerator until serving. Remove and sprinkle with paprika. Serve cold.
  • Note: above cook time should be 13 minutes. unable to put thirteen minutes in. ( 3 minutes boil time and 10 minutes setting in the hot water)

1 tablespoon fresh lime juice
1 teaspoon salt
tortilla chip, crushed
fresh cilantro, for garnish

Steps:

  • Place the eggs in a pot and fill with cold water until the eggs are just covered. Bring the pot to a boil, then cover, remove from heat, and let sit for about 12 minutes.
  • Transfer the eggs to a bowl of ice water for about 3 minutes, then peel them and cut them in half. Transfer the egg yolks to a bowl, and set the cooked egg whites aside.
  • Mix the avocado, cilantro, jalapeño, red onion, tomato, garlic, cumin, lime juice, and salt with the yolks and transfer to a piping bag. (Alternatively, use a zip-top bag with a corner cut off.)
  • Pipe the mixture into the eggs, garnish with cilantro and crushed tortilla chips, and serve chilled.
  • Enjoy!

12 hard boiled eggs
1 ripe avocado
1 small lime
1/4 teaspoon onion powder
1 clove of fresh garlic, pressed
Pinch of salt
Pinch of pepper
1 Tablespoon finely cut cilantro leaves.
1/4 teaspoon paprika (you can use regular or smoked - I prefer regular)
2 slices of crispy cooked bacon, crumbled

Steps:

  • Half each of the hard boiled eggs and place yolks into a bowl. Using a fork, mash yolks until fine and powdery. Add avocado, juice from small lime, onion powder, garlic salt and pepper. Mix well. and mash until silky smooth. Add finely cut cilantro and mix well. Place entire guacamole contents into a ziploc bag and seal shut. Cut tip off of bag and pipe guacamole into each egg. Top with crumbled bacon and additional cilantro if desired. Sprinkle with paprika. Serve immediately or chill and serve.
