DR. FUHRMAN'S WALNUT VINAIGRETTE DRESSING
This is from a recipe on drfuhrman.com. It is the best vinaigrette I have ever tasted, healthy or not. Everyone who has tasted this salad dressing asks for the recipe. You need a high speed blender or food processor to make the dressing so the raisins and nuts blend with the rest of the ingredients. We have this dressing every day for lunch on a salad of romaine lettuce with extra toppings like green or red pepper, avocado, cucumber, grape tomatoes, pumpkin seeds, sunflower seeds, raw nuts, raisins, sesame seeds, ground flax seed, etc. We like the nuts left whole and put on the salad instead of putting them in the dressing but they should be included in the salad one way or the other to help the absorption of the nutrients in the salad. When I make it, I usually quadruple the dressing recipe and store it in glass jars in the refrigerator.

- Place all of the ingredients, except the oils, in a blender and process on high speed. With the machine running, gradually add the olive and walnut oils until the vinaigrette is emulsified, about 1 minute. Refrigerate until ready to serve. (The vinaigrette can be prepared up to 1 week in advance, covered and refrigerated.)
- Note: To toast walnuts, place the walnuts in a single layer on a baking sheet. Bake in a preheated 350 degrees F. oven, stirring occasionally, until toasted, 8 to 12 minutes. Cool completely.

- Preheat the oven to 350 degrees F (175 degrees C). In a shallow dish, stir together the flour, salt, pepper, parsley, and dill. Rinse chicken breasts, and pat dry. Dredge chicken in the flour mixture.
- In a large skillet, heat 2 tablespoons of the butter over medium-high heat. Place chicken into the hot buttered skillet, and fry until brown on both sides. Transfer chicken breasts to a 1 quart glass baking dish. Add remaining butter to skillet, and fry the mushrooms and onion until wilted and lightly browned. Stir in the white wine, and reduce heat to medium. Simmer for 3 minutes to blend flavors. Pour the mushroom mixture over the chicken in the dish.
- Cover dish, and bake for 20 minutes in the preheated oven. After 20 minutes, remove cover, and sprinkle with shredded cheese. Continue baking for 10 more minutes, or until cheese is lightly browned and bubbly.

- For the vinaigrette:
- Combine the vinegar, mustard and honey in a small mixing bowl; whisk to combine thoroughly.
- Add the oils in a slow, steady stream, whisking continuously, until the vinaigrette is creamy and emulsified.
- Add the parsley and season to taste with salt and pepper; set aside until needed.
- For the Chevre:.
- Preheat oven to 400 degrees Farenheit.
- Finely chop parsley, chives and walnuts.
- Season chevre lightly with salt and pepper.
- Spread parsley/chive/walnut mixture on a plate and roll chevre in it, pressing down lightly to coat it completely.
- Wrap in plastic wrap and refrigerate at least 10 minutes.

- Combine the salad greens, onion, walnuts and berries and toss gently to mix.
- Add just enough dressing to lightly coat each leaf.

- Mound salad on plates and place one or two rounds of warm chevre on top of each salad and serve immediately.

- Bring a medium pot of water to a boil and drop in the beans. Boil for a couple of minutes or just until crisp/tender. Drain and run under cold water to halt cooking. Pat very dry.
- In a large mixing bowl toss together the beans, chicken, Gruyere, tomatoes and basil. Lightly dress with salad dressing of choice and serve on a bed of lettuce. You can also store the salad without the lettuce overnight in an airtight container in the fridge. I actually like it after it has been stored with dressing, but you could also store the dressing separately and combine right before eating.
