1¼ lb. fat-free lean ground turkey
1 Tbsp olive oil
1 clove garlic, minced
1/8 tsp. ground ginger
4 green onions, thinly sliced
1 (8 oz) can sliced water chestnuts, drained and coarsely chopped
3 Tbsp hoisin sauce
2 Tbsp lower-sodium soy sauce (green top)
1 Tbsp rice vinegar
2 tsp. roasted red chili paste
Pinch of salt
12 Boston lettuce leaves

Steps:

  • Heat 1 tablespoon of oil in a large nonstick skillet over medium-high heat. Add turkey, garlic and ginger to the pan and cook for about 6 minutes or until turkey is browned. Stir to crumble.
  • Combine turkey mixture, onions and chopped water chestnuts in a large bowl, stirring well, and set aside.
  • Meanwhile in a small bowl, whisk together hoisin, soy sauce, rice vinegar and roasted red chili paste and drizzle over the turkey mixture. Toss to coat completely.
  • Add about ¼ cup turkey mixture to each lettuce leaf, serve and enjoy!

1 avocado, sliced
8 sprigs cilantro

Steps:

  • For the enchilada sauce: Heat the oil in a small saucepan over low heat. Whisk in the flour until combined. Whisk in the chili powder, paprika, garlic powder, 1/2 teaspoon salt, cumin and oregano until combined. Gradually add the broth, whisk constantly, and simmer until the mixture thickens, about 5 minutes.
  • For the tacos: Heat the oil in a large skillet over medium-high heat. Add the turkey and cook, breaking up the meat with a wooden spoon, until cooked through, 3 to 5 minutes.
  • Add the diced pepper and Enchilada Sauce to the cooked turkey. Taste and season with salt and pepper, if desired.
  • To serve, spoon the turkey filling into the lettuce leaves and top with the shredded red cabbage, sliced avocado and cilantro sprigs.

1 small yellow onion, chopped
5 mushrooms, halved and sliced

¼ teaspoon dried thyme
¼ teaspoon ground black pepper

This easy one pot meal is hard to mess up. I use Iceberg lettuce but you can use your favorite. If you don't care for sesame oil, you can substitute with Kikkoman Mirin Style Sweet Cooking Seasoning. It has a different flavor but it works out well. Also, fresh ginger may be used in place of the pickled ginger. Just thought I'd mention that the chili sauce is hot. You may want to start with less and add to your taste. The total prep/cooking time is around 30 minutes...I was prepping as I was cooking (adding to the pan as I went along.

1 lb ground turkey (or chicken)
1 tablespoon cooking oil
1 teaspoon cornstarch (mixed in 2-3 Tbsp water)

2 tablespoons fresh garlic
1 tablespoon low sodium soy sauce
1/3 cup lee kum lee hoisin sauce
2 teaspoons pickled ginger, minced
1 tablespoon nishiki rice wine vinegar
1 tablespoon asian chili-garlic sauce (to taste)
1 (8 ounce) can water chestnuts, drained and chopped
1 bunch green onion, chopped
2 teaspoons sesame oil

Steps:

  • Rinse lettuce leaves and pat dry. Set aside.
  • Brown ground turkey in the oil in a medium skillet over high heat, stirring often. Drain excess liquid. Add cornstarch mixture; mix in well. Continue cooking, over med heat.
  • Add chopped onion.
  • Add garlic, soy sauce, hoisin sauce, ginger, wine vinegar, and chili sauce.
  • Add water chestnuts, green onions, and sesame oil.
  • Continue cooking until onions are transluscent in appearance (about 2 minutes or so).
  • Arrange lettuce leaves around the outer edge of a large serving platter and place the meat mixture in a separate container in the center.
  • To serve, allow each person to spoon 2 portions of meat onto a lettuce leaf ... wrapping the lettuce around the mixture like a burrito.

1 1/2 tsp sesame oil
1 tsp honey ((optional))
1 Tbsp minced fresh garlic ((3 cloves))
1 Tbsp peeled and minced fresh ginger
2/3 cup sliced green onions, (white and light green portion, plus more green portion for serving)
1 medium carrot, (peeled and shredded (1/2 cup))
1 (8 oz) can water chestnuts, (drained and chopped small)
1 large head Bibb lettuce or iceberg lettuce

Steps:

  • Heat 1 1/2 tsp oil in a 12-inch non-stick skillet over medium-high heat.
  • Add turkey or chicken in large crumbles then let cook until slightly browned on bottom, about 3 minutes, then break up and continue to cook until it's fully cooked through, about 3 minutes longer.
  • Meanwhile while turkey is cooking in a mixing bowl whisk together hoisin sauce, soy sauce, sriracha, rice vinegar, sesame oil and honey, set aside.
  • Drain of excess liquid from turkey (if there is any) then push to one far side of pan and pull that side of pan off heat.
  • Heat remaining 1 1/2 tsp oil in now empty side of skillet.

I made up my own taco seasoning, but to make it easier you can buy the packets of pre made seasonings. However, I recommend controlling your sodium intake and have fun creating your own!
  • While the meat is finishing cooking, your water should be coming close to a boil. Boil your washed corn for 5 minutes, then remove from water. Once cooled down, cut the corn off like you would do if you had braces.
  • Now, you are ready to assemble your tacos however you would like. I put my seasoned ground turkey first, corn and bell pepper next, Pico de Gallo, parsley and green onion and cheese on top and garnished with the lime. Enjoy just like a taco, or if you prefer cut up and eat like a taco salad. Enjoy!
