Steps:
- Heat 1 tablespoon of oil in a large nonstick skillet over medium-high heat. Add turkey, garlic and ginger to the pan and cook for about 6 minutes or until turkey is browned. Stir to crumble.
- Combine turkey mixture, onions and chopped water chestnuts in a large bowl, stirring well, and set aside.
- Meanwhile in a small bowl, whisk together hoisin, soy sauce, rice vinegar and roasted red chili paste and drizzle over the turkey mixture. Toss to coat completely.
- Add about ¼ cup turkey mixture to each lettuce leaf, serve and enjoy!

- For the tacos: Heat the oil in a large skillet over medium-high heat. Add the turkey and cook, breaking up the meat with a wooden spoon, until cooked through, 3 to 5 minutes.
- Add the diced pepper and Enchilada Sauce to the cooked turkey. Taste and season with salt and pepper, if desired.

This easy one pot meal is hard to mess up. I use Iceberg lettuce but you can use your favorite. If you don't care for sesame oil, you can substitute with Kikkoman Mirin Style Sweet Cooking Seasoning. It has a different flavor but it works out well. Also, fresh ginger may be used in place of the pickled ginger. Just thought I'd mention that the chili sauce is hot. You may want to start with less and add to your taste. The total prep/cooking time is around 30 minutes...I was prepping as I was cooking (adding to the pan as I went along.
