Simply spiced ground turkey or chicken made into patties with seasonings readily available in most pantries. I used Ritz crackers and minced sweet onion instead of the onion flakes. You can cook these patties up to 2 days before serving. Wrap in plastic wrap and refrigerate until ready to cook. When you want to serve, microwave on HIGH for 30 to 45 seconds. Originally from a Family Circle magazine clipping. Excellent served with French Toast and fruit for breakfast or brunch. I have also made these patties into a breakfast sandwich with a fried egg and slice of cheese on top of a toasted English muffin.

1 lb ground turkey or 1 lb ground chicken
1/2 cup butter flavored cracker, finely crushed (about 12 crackers,like Ritz)
1 tablespoon onion flakes or 1 tablespoon onion, minced
1 teaspoon poultry seasoning
3/4 teaspoon garlic salt or 3/4 teaspoon garlic powder
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
1 tablespoon olive oil

Steps:

  • In a large bowl, mix ground turkey or chicken, crushed crackers, onion flakes, poultry seasoning, garlic salt or garlic powder, thyme, and black pepper.
  • Shape into six patties each about 1/2 inch thick and 3 inches in diameter or other size as desired. Adjust cooking time if changing size or thickness of patties.
  • Heat oil in a large nonstick skillet over medium-high heat.
  • Add patties and cook on all sides for a total of 10 minutes or until nicely browned and internal temperature reaches 160 degrees Fahrenheit on an instant-read thermometer. Or,cut into one cooked patty to make sure it is no longer pink inside.

1 tsp Worcestershire sauce
¼ tsp salt

6 whole wheat pitas or hamburger rolls

Steps:

  • Combine chicken, bread crumbs, milk, chopped green onions, Worcestershire sauce and salt and pepper and form into patties.
  • barbecue or fry for approximately 5 minutes per side or until meat thermometer registers 165°F (74°C).
  • Serve on a whole wheat bun or in a pita shell garnished with sliced tomato, cucumber, green onion, lettuce and mayonnaise.

1 lb. (0.4 kg) ground chicken, thaw to room temperature
1 egg, use only egg yolk
1 scallion, cut into rounds
1/4 teaspoon salt
3 dashes ground white or black pepper
3 dashes cayenne pepper
1 tablespoon Japanese mirin (sweet cooking wine), optional
1 teaspoon toasted sesame oil
2 tablespoons cooking oil
1/3 cup Japanese mirin (sweet rice wine)
2 tablespoons soy sauce, low sodium preferred
1 tablespoon sugar

Steps:

  • Combine all the ingredients together. Stir to mix well.
  • To shape the ground chicken mixture into patties, wet both hands with water. Scoop up the chicken mixture, shape into a ball and flatten with your hands. Set aside.
  • Heat up a skillet on medium-low heat. Add the cooking oil. Transfer the chicken patties onto the skillet, pan fry for about 1-2 minutes on each side. Turn over and pan fry the other side for another 1-2 minutes. If the center is not cooked through, keep turning back and forth and continue to cook.
  • Combine all the ingredients of the Teriyaki Sauce in a sauce pan. On low heat, simmer and reduce it to a thicker consistency, about 10 minutes. Serve the chicken patties with teriyaki sauce, optional.

  • Combine all ingredients (except oil) in a bowl and mix until combined. Don't overmix.

  • Heat oil in a large skillet over medium-high heat.
  • Add burgers to the hot skillet and cook for 5 minutes. Flip over and cook another 5 minutes, until cooked through. 1 garlic clove, (minced)
1 egg
¾ cup panko breadcrumbs
2 packed cups broccoli (, soft cooked & finely chopped (1 head)(Note 2))
¾ cup finely chopped shallots
1 1/2 - 2 cups shredded mozzarella ((or other cheese of choice))
3/4 tsp salt ((reduce to 1/2 tsp if using a flavoured cheese)(Note 3))
Black pepper
Oil spray
2/3 cup plain yoghurt
1/8 tsp EACH dried dill, parsley and chives
¼ tsp onion powder
½ garlic clove, minced
1 - 2 tsp extra virgin olive oil
Squeeze of lemon juice, (optional)

Steps:

  • Preheat oven to 200C/390F. Line a baking tray with baking paper (or spray with oil).
  • Place Fritter ingredients in a bowl, mix to combine.
  • Measure out about ¼ cup of mixture and pat into fritter shapes about 6 cm / 2.25" wide, 1cm / 2/5" thick (they shrink a bit and become thicker).
  • Place on tray. Spray the top (generously) with oil.
  • Bake for 15 minutes, flip, spray with oil again then bake for a further 8 - 10 minutes until golden on top. Serve immediately with Sauce.

2 lbs raw boneless and skinless chicken breasts or thighs (cubed)
1 large egg
1/2 small onion (cut in chunks)
1 garlic clove
1 slice of bread (I use sprouted whole grain)
1/2 tsp salt
Ground black pepper (to taste)
3 tbsp oil (for frying)
12 hamburger buns
Lettuce, tomato, red onion (for toppings)

Steps:

  • In a food processor or high speed blender, add chicken and process until ground. Work in batches and transfer to a large mixing bowl.
  • Return blender to its base, add egg, onion and garlic.
  • Quickly soak bread in water, squeeze well and add to the blender along with salt and pepper. Process until well combined and add to the bowl with ground chicken meat. Using your hands, mix well.
  • Preheat large ceramic non-stick skillet or grill on medium heat and swirl some oil to coat (spray the grill).
  • Form into a ball size of a tennis ball for a burger or somewhere between golf and tennis size for "naked" patty, then flatten.
  • Pan fry or grill for about 4-5 minutes per side (grills vary). It is time to flip when white edges appear and patty is brown on the bottom. Please note that second and third batches will take less time to cook as the skillet (grill) will be hotter.

1 pound ground white meat chicken
2 cups coarse to fine fresh bread crumbs, divided (not canned)
1/2 cup low-fat milk
3 tablespoons grated sweet onion (or finely, finely minced)
1/4 teaspoon cayenne pepper
3/4 teaspoon coarse grained salt
Cracked black pepper
1 teaspoon olive oil

Steps:

  • Be sure to use ground white meat chicken. If you're buying your ground chicken from the grocery story, ring the bell and ask them if they've got what you're looking for or if they'll grind some chicken breast for you. You can also grind it yourself in a food processor. Remove all excess fat and cartilage from boneless, skinless chicken breast and tenders, cut into 1-inch cubes and pulse until coarsely chopped.
  • Use fresh bread crumbs. It only takes a few extra minutes. Remove crusts from good bread or don't remove the crusts, tear into chunks and pulse in a mini chopper or food processor. Make a giant batch and freeze them so next time you can skip this step.
  • Place chicken in a mixing bowl. Using a rubber spatula, fold in milk, 1/2 cup bread crumbs, onion, cayenne, salt and pepper. The mixture will be very wet which means it will be a tiny bit icky forming it into patties but forge ahead. Place remaining 1 1/2 cups bread crumbs on a dinner plate or cookie sheet. Divide chicken meat into 4 or 5 piles (you decide which portion size is best for you) and using your hands, shape into patties. Coat each patty with bread crumbs. Heat olive oil in a large non-stick skillet over medium heat and fry patties until golden and cooked through, about 5 minutes per side. Serve immediately.

1 teaspoon Dijon mustard
2 teaspoons lemon juice
1/2 teaspoon smoked paprika

2 tablespoons fresh oregano (chopped)
Juice of 1/2 lemon
1/2 cup breadcrumbs (I used Italian flavored)
2 tablespoons mayo

Steps:

  • Make the burger sauce by mixing the sauce ingredients together (mayo, mustard, lemon juice, smoked paprika, and salt & pepper). Taste and adjust as needed.
  • Oil and pre-heat your grill to medium-high heat.
  • Chop the chives and oregano, and prepare your toppings.
  • In a medium to large bowl, add the ground chicken, chives, oregano, minced garlic, lemon juice, breadcrumbs, mayo, and salt & pepper. Using your hands, gently mix everything together, taking care to not over handle the mixture.
  • Form burger patties one by one and place them on a sheet of wax paper. You should be able to make six average-size burger patties or four larger ones. Using your thumb, create a depression in the center of each patty so they cook evenly.
  • Cook the burger patties until internal temperature is at least 165F. Cooking time really depends on your grill and the thickness of the patties. Mine took 5 minutes on the first side and 4 minutes on the second side (gas BBQ).
  • Once the burgers are cooked, you can toast the buns for about 30 seconds on each side if desired.
  • Assemble burgers by spreading the sauce onto each bun and adding the burger patties and toppings.
