Time 45m

Yield 10 servings

Number Of Ingredients 8

1 beef tenderloin (2 to 2 1/2 pounds)
Ground black pepper (optional)
1/2 of a 17.3-ounce package Pepperidge Farm® Puff Pastry Sheets (1 sheet), thawed
1 egg
1 tablespoon water
1 tablespoon butter
2 cups finely chopped mushrooms
1 medium onion, finely chopped (about 1/2 cup)

Steps:

  • Heat the oven to 425 degrees F. Place the beef into a lightly greased roasting pan. Season with the black pepper, if desired. Roast for 30 minutes or until a meat thermometer reads 130 degrees F. Cover the pan and refrigerate for 1 hour.
  • Heat the oven to 425 degrees F. Beat the egg and water in a small bowl with a fork or whisk.
  • Heat the butter in a 10-inch skillet over medium-high heat. Add the mushrooms and onion and cook until the mushrooms are tender and all the liquid is evaporated, stirring often.
  • Unfold the pastry sheet on a lightly floured surface. Roll the pastry sheet into a rectangle 4 inches longer and 6 inches wider than the beef. Brush the pastry sheet with the egg mixture. Spoon the mushroom mixture onto the pastry sheet to within 1-inch of the edges. Place the beef in the center of the mushroom mixture. Fold the pastry over the beef and press to seal. Place seam-side down onto a baking sheet. Tuck the ends under to seal. Brush the pastry with the egg mixture.
  • Bake for 25 minutes or until the pastry is golden brown and a meat thermometer reads 140 degrees F.
  • Serving Suggestion: Serve with green beans amandine. For dessert serve with cheesecake topped with sliced strawberries.

GROUND BEEF WELLINGON

Ground Beef Wellingon image

This is a great alternative when you want to impress guests but don't want to spend a fortune on a meal. Using ground beef is faster and easier on the pocketbook. The recipe makes one large beef wellington that you slice up into portions. This would be great with a homemade gravy. A Jamie Oliver recipe.

Time 1h30m

Yield 4-6 serving(s)

Number Of Ingredients 14

1 medium onion
1 large carrot (or 2 small)
1 celery (2 if small)
1 potato
2 garlic cloves
1 large portobella mushroom
2 tablespoons olive oil
4 sprigs fresh rosemary, opt. (I prefer it without)
3/4 cup frozen peas (this is my estimate. Jamie suggests a "big handful")
1 large egg
1 lb ground meat, good quality, I use ground round
sea salt & freshly ground black pepper
flour, for dusting
2 sheets puff pastry, defrosted

Steps:

  • Preheat oven to 350 degrees F.
  • Peel and chop the carrot, onion, potato and celery into 1/4 inch size dice.
  • Grate (or mince) the garlic.
  • Clean and roughly chop the mushroom so the pieces are about the same size as the other veggies.
  • Put all the veggies into a large frying pan on medium-low, with approximately 2 T. of olive oil.
  • If using the rosemary: Pluck the rosemary leaves off of the stems , finely chop them and add them to the pan.
  • Stir and cook for about 8 minutes or until the veggies soften and get slightly colored.
  • Add the frozen peas and cook for another minute.
  • Put the veggie mix into a large bowl and let cool completely.
  • Crack an egg into a separate cup or bowl and beat it.
  • Add the ground beef to the bowl of cooled veggies with a good pinch of salt and pepper and half of the beaten egg. Mix this all up well. Your clean hands are your best tool here!
  • Lightly dust a clean work surface and rolling pin with flour and lay the puff pastry sheets one on top of the other. Roll out the puff pastry so it is a 12 x 16 rectangle. ( Dust it with flour as you go.)
  • Turn the pastry so you have a long edge in front of you. Place the ground beef mixture along this edge. Mold it into an even, long sausage shape and brush the edges of the pastry with a little of the beaten egg. Roll the ground beef up in the pastry until it is completely covered. Squeeze the ends together to tightly seal.
  • Jamie says to dust a large cookie sheet with flour and put your Wellington on top of it. I did it using nonstick foil and omitted the flour dusting. Or you could use parchment. Brush the Wellington all over with the rest of the beaten egg.
  • Bake in your preheated oven for about 40 minutes to an hour, until golden. If the crust is golden by 40 or 45 minutes, then you can take it out.
  • To Serve:.
  • Let the Wellington rest for about 5 minutes or so, once out of the oven.
  • Slice the Wellington up into portions and enjoy!
  • Note there will be a little bit of moisture that comes out after slicing. You may want to move your slices onto a serving platter or plates right after slicing.

BEEF WELLINGTON

Beef Wellington image

This puff pastry-wrapped and pâté-packed dish is de rigueur for any character in a book, movie, or television show who is trying to impress someone with an über-elegant meal. The classic is rich beyond measure and fussy as hell. I've minimized its artery-clogging character-by about 77 grams of fat and 777 calories-and the fuss factor, too. It remains über-elegant.

Yield serves 4

Number Of Ingredients 9

One 1 1/4-pound piece lean filet mignon, trimmed of all visible fat
Salt and freshly ground black pepper
Nonstick cooking spray
1 pound button mushrooms, sliced
2 large shallots, chopped very fine (about 1/3 cup)
3 tablespoons fresh thyme, chopped
1 ounce dry sherry
1 ounce duck liver pâté
4 sheets frozen phyllo dough, thawed

Steps:

  • Preheat the oven to 400˚F. Line a baking sheet with parchment paper, and set it aside. Place a wire baking rack on a sheet pan and set aside.
  • Heat a large cast-iron skillet over high heat. Season the meat with salt and pepper to taste. When the pan is hot, add the cooking spray. Add the meat. Sear, turning it occasionally, until the meat is a deep golden brown all over, about 4 minutes total.
  • While the meat is searing, pulse the mushrooms, in two batches, in a food processor until they are very finely chopped.
  • Remove the skillet from the heat, and transfer the meat to the wire baking rack set over the sheet pan. Spray the skillet with cooking spray and place it over medium-low heat. Add the shallots and about half of the thyme. Cook, stirring occasionally, until the shallots start to become tender and fragrant, about 2 minutes.
  • Raise the heat to high. Add the mushrooms to the skillet. Sauté, stirring occasionally, until the mushrooms have released their liquid and the liquid has mostly evaporated, about 10 minutes. Add the sherry and cook for another minute. Add the pâté and stir until it is fully incorporated into the mushrooms. Season the mixture with salt and pepper to taste. Let it cool slightly.
  • On a work surface, lay down 1 sheet of phyllo. Spray the phyllo lightly and evenly with cooking spray. Sprinkle it with one quarter of the remaining thyme. Repeat the process with the remaining 3 sheets of phyllo, stacking the sheets as you go.
  • Working with the shorter side of the phyllo toward you, spread the mushroom mixture over the lower half half of the phyllo, leaving a 1-inch border on the sides. Place the beef on top of the mushroom mixture. Fold up the sides of the phyllo on the right and left of the beef to encase it. Roll up the beef in the phyllo.
  • Place the beef-phyllo package, seam side down, on the prepared baking sheet. Spray the package lightly with cooking spray. Season it with salt and pepper.
  • Roast until the meat is medium-rare, about 20 minutes. Let the Beef Wellington rest for 5 minutes before slicing.
  • Phyllo dough is low in fat and contains no saturated fat or trans fats, and no cholesterol. It's light and flaky, and as long as you use butter-flavored cooking spray and/or olive oil cooking spray between layers rather than real melted butter or olive oil it's a perfect low-fat/low-calorie swap for most recipes that call for dough of any kind.

Don't let the length of this recipe put you off! Practically everything can be done in advance. And, the individual steps are easy. But what a reward! This has been our Christmas Dinner for decades. It is the merger of two recipes: Julia Child's "The French Chef Cookbook", and a local restaurant that published their recipe in our local paper. Last year I made everything up in advance (except wrapping the beef in puff pastry) froze it, packed it in dry ice and hauled it to Colorado where two of our sons live. It was perfect!

Time 2h25m

Yield 4 serving(s)

Number Of Ingredients 24

1/3 cup olive oil
1/2 cup sliced onion
1/2 cup carrot
1/2 cup celery
1/4 teaspoon dried thyme
1/4 teaspoon sage
1 bay leaf
3 allspice berries or 3 cloves
6 peppercorns
1 teaspoon salt
1 cup dry white vermouth
1/3 cup cognac or 1/3 cup brandy
2 lbs mushrooms
2 tablespoons butter
4 tablespoons shallots, minced
1/2 cup dry madeira wine
4 -5 tablespoons mousse type pate or 4 -5 tablespoons foie gras
4 (8 ounce) filet of beef
4 slices prosciutto, thin
2 sheets puff pastry
2 cups beef broth
1 tablespoon tomato paste
2 tablespoons cornstarch
1/4 cup madeira wine

Steps:

  • Place all marinade ingredients (except salt, vermouth and cognac) in a small saucepan.
  • Cook slowly until vegetables are tender.
  • Remove from heat and let cool.
  • Season filets with salt; place in ziplock bag; add marinade mixture; pour on the wine and cognac.
  • Refrigerate 2 to 3 hours.
  • Remove from marinade.
  • Pat dry.
  • Heat 1 T oil in a heavy duty saute pan over high heat.
  • Add filet and sear briefly on all sides.
  • Return to refrigerator until ready to assemble the Wellingtons.
  • Reserve marinade for sauce.
  • Mince mushrooms in food processor until very small.
  • In the corner of a clean kitchen towel, twist the mushrooms a handful at a time to extract as much of the mushroom juices as possible.
  • I usually dampen the towel first so it won't absorb the juices of the mushrooms.
  • Reserve the juices for the sauce.
  • Saute mushrooms and shallots in butter 7 or 8 minutes or so until the mushroom pieces separate from each other and begin to look dry.
  • Add the madeira and boil until liquid has evaporated.
  • Season to taste and stir in the pate or foie gras.
  • Simmer marinade ingredients and mushroom juices with 2 cups beef broth and 1 T tomato paste for 1 hour or so until reduced to 2 cups.
  • Degrease, season and thicken with 2 Tbs.
  • cornstarch mixed with 1/4 cup Madeira.
  • All of these steps can be prepared well in advance and even frozen in separate containers.
  • Simply thaw everything before proceeding.
  • I usually get two Wellingtons out of each sheet of puff pastry.
  • It depends on the size of the steaks.
  • Roll out each sheet a little to accomodate the size of the filet.
  • Cut sheet in half.
  • Lay one sheet of Prosciutto on each half.
  • Place a spoonful of mushrooms on top; place a filet on top of mushrooms; spoon a little more mushrooms on top of filet; wrap filet in pastry.
  • Pinch to seal.
  • If you have any pastry left over, be creative and decorate the Wellingtons to fit the occasion.
  • Place on parchment lined cookie sheet.
  • Refrigerate at least 30 minutes or until ready to bake.
  • Preheat oven to 375^F.
  • Egg wash the tops of the Wellingtons.
  • Bake until golden brown.
  • About 25 minutes.
  • Use an instant read thermometer to insure that the meat is done to your liking.
  • If Wellingtons start to brown too much before the meat is ready, cover with foil and cook until it is done.
  • Serve with the Madeira sauce spooned on top.

Gordon Ramsay's version of the classic steak dish - a showstopping centrepiece on a special occasion

Provided by Gordon Ramsay

Categories     Dinner

Time 2h30m

Number Of Ingredients 10

a good beef fillet (preferably Aberdeen Angus) of around 1kg/2lb 4oz
3 tbsp olive oil
250g/9oz chestnut mushroom, include some wild ones if you like
50g/2oz butter
1 large sprig fresh thyme
100ml/3.5 fl oz dry white wine
12 slices prosciutto
500g/1lb 2oz pack puff pastry, thawed if frozen
a little flour, for dusting
2 egg yolks beaten with 1 tsp water

Steps:

  • Heat oven to 220C/fan 200C/gas 7.
  • Sit the 1kg beef fillet on a roasting tray, brush with 1 tbsp olive oil and season with pepper, then roast for 15 mins for medium-rare or 20 mins for medium. When the beef is cooked to your liking, remove from the oven to cool, then chill in the fridge for about 20 mins.
  • While the beef is cooling, chop 250g chestnut (and wild, if you like) mushrooms as finely as possible so they have the texture of coarse breadcrumbs. You can use a food processor to do this, but make sure you pulse-chop the mushrooms so they don't become a slurry.
  • Heat 2 tbsp of the olive oil and 50g butter in a large pan and fry the mushrooms on a medium heat, with 1 large sprig fresh thyme, for about 10 mins stirring often, until you have a softened mixture.
  • Season the mushroom mixture, pour over 100ml dry white wine and cook for about 10 mins until all the wine has been absorbed. The mixture should hold its shape when stirred.
  • Remove the mushroom duxelle from the pan to cool and discard the thyme.
  • Overlap two pieces of cling film over a large chopping board. Lay 12 slices prosciutto on the cling film, slightly overlapping, in a double row.
  • Spread half the duxelles over the prosciutto, then sit the fillet on it and spread the remaining duxelles over.
  • Use the cling film's edges to draw the prosciutto around the fillet, then roll it into a sausage shape, twisting the ends of cling film to tighten it as you go.
  • Chill the fillet while you roll out the pastry.
  • Dust your work surface with a little flour. Roll out a third of the 500g pack of puff pastry to a 18 x 30cm strip and place on a non-stick baking sheet.
  • Roll out the remainder of the 500g pack of puff pastry to about 28 x 36cm.
  • Unravel the fillet from the cling film and sit it in the centre of the smaller strip of pastry.
  • Beat the 2 egg yolks with 1 tsp water and brush the pastry's edges, and the top and sides of the wrapped fillet.
  • Using a rolling pin, carefully lift and drape the larger piece of pastry over the fillet, pressing well into the sides.
  • Trim the joins to about a 4cm rim. Seal the rim with the edge of a fork or spoon handle.
  • Glaze all over with more egg yolk and, using the back of a knife, mark the beef Wellington with long diagonal lines taking care not to cut into the pastry.
  • Chill for at least 30 mins and up to 24 hrs. Heat oven to 200C/fan 180C/gas 6.
  • Brush the Wellington with a little more egg yolk and cook until golden and crisp - 20-25 mins for medium-rare beef, 30 mins for medium. Allow to stand for 10 mins before serving in thick slices.

GROUND BEEF 'WELLINGTON' WITH FENNEL

Ground Beef 'wellington' With Fennel image

I took the idea of wrapping beef in pastry from the traditional beef Wellington to make a simpler dish with the kick of fennel and chile. I serve these with tomato sauce.

Provided by iqspam

Categories     Meat

Time 1h

Yield 2 pastries, 4 serving(s)

Number Of Ingredients 12

1 tablespoon vegetable oil
1/2 cup diced onion
1/4 cup fennel, chopped
1 tablespoon garlic, minced
1/2 teaspoon fennel seed
1/4 teaspoon crushed red pepper flakes
1 egg
1 lb ground beef
2 tablespoons dry breadcrumbs
1 tablespoon dried parsley
1 teaspoon salt
8 ounces refrigerated crescent dinner rolls

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
  • Heat the vegetable oil in a skillet over medium heat. Stir in the onion, fennel, and garlic. Cook and stir until the fennel is tender, and the onion has softened and turned translucent, about 5 minutes. Stir in the fennel seed and red pepper flakes, and cook for 1 minute more. Meanwhile, beat the egg in a bowl, then mix in the ground beef, bread crumbs, parsley, and salt. Add the cooked vegetable mixture, and stir until combined.
  • Separate the crescent roll dough into two squares. Divide the meat mixture among the crescent roll squares, then seal the dough around the meat. Place seam-side-down onto the prepared baking sheet.
  • Bake in the preheated oven until the pastry has turned golden-brown, and the center of the pastries registers 160 degrees F (71 degrees C) on a kitchen thermometer, about 30 minutes. Slice and serve.

  • PLACE pattie in middle of pastry, add the mushroom mixture on to of the beef and fold like and envelope; making sure you pinch close all seams;.

Time 1h30m

Yield 6-8 serving(s)

Number Of Ingredients 18

2 1/2 lbs beef tenderloin (have butcher clean tenderloin)
kosher salt & freshly ground black pepper
extra virgin olive oil
1 packet store-bought puff pastry, defrosted (17.5 oz.)
1/4 cup butter, melted
1 1/2 tablespoons finely chopped fresh rosemary
coarse sea salt
2 (2 lb) bags fresh spinach
1 garlic clove
1 tablespoon butter
1/2 teaspoon ground nutmeg
2 cups assorted wild mushrooms, quartered
3 sprigs thyme, leaves
1 tablespoon butter
3 tablespoons flour
1 cup red wine
2 cups demi-glace (store-bought or homemade) or 2 cups rich veal stock (store-bought or homemade)
parchment paper

Steps:

  • Preheat oven to 400?F.
  • Season tenderloin all over with salt and freshly ground black pepper. Heat a large skillet or roasting dish and add approximately 2 tablespoons of olive oil. Sear the tenderloin until it has a nice deep brown color all over it and then put it into the preheated oven to bake for 20-25 minutes or until medium and juices run pink.
  • Prepare the pastry by laying it out flat on a sheet tray. Using a pastry cutter, cut the sheet into 4x4 inch squares and separate slightly. Brush the pastry all over with the melted butter and then sprinkle liberally with the chopped rosemary and some coarse sea salt. Use a fork to pierce the pastry so it doesn't rise too much when cooking. Bake in the oven for 10-12 minutes or until slightly puffy and golden.
  • Meanwhile, prepare the spinach. Heat the olive oil and butter over high heat and then add the garlic. Add the spinach and then the nutmeg and cook until just wilted. Season with salt and pepper and then set aside. In a separate pan, cook mushrooms over high heat with chopped garlic, butter and thyme. Season with salt and pepper, set aside.
  • Once the tenderloin is cooked, remove from the oven and set the tenderloin aside to rest. Cover loosely with tented foil. Set the pan on a stove top and dust with flour. Deglaze (add) with wine and the stock scraping the bottom of the pan with a spoon to extract all the flavors. Reduce over medium heat until thick and syrupy.
  • Take puff pastry square and slice horizontally in half. To assemble lay bottom half of the puff pastry square on the plate. Heap a spoonful of spinach on one side of square, a serving of mushrooms on the other and top with a couple of thick slices of tenderloin. Spoon over the remaining tenderloin juice to cover the meat and drizzle around the plate. Finish with other slice of puff pastry.
