Easy Ground Beef and Potato Casserole recipe. Like a hamburger all in one dish. The ultimate quick weeknight comfort food.

1 lb ground beef
1 large onion, (chopped)
1 Tbsp butter
3 Tbsp all-purpose flour
1/2 cup beef broth
1/2 cup milk
1 can cream of mushroom soup
1/4 cup water
4 medium yellow potatoes, (washed and cubed)
2 cups cheddar cheese, (shredded)

Steps:

  • Preheat the oven to 350°F. Spray a 9x13 inch pan with cooking spray. Set aside.
  • In a medium skillet, brown the ground beef and the onion. Drain and set aside.
  • Meanwhile, in a medium saucepan, melt the butter over medium low heat. Stir in the flour. Slowly add in the beef broth and milk, mixing until smooth. Bring to a gentle boil, cooking until thickened.
  • Remove from heat and add in the cream of mushroom soup and water.
  • Layer the bottom of the prepared dish with 1/2 of the potatoes, then 1/2 the soup mixture, then 1/2 the ground beef mixture. Repeat with the remaining potatoes, soup mixture and ground beef.
  • Sprinkle the cheese over the mixture. Cover with aluminium foil and cook in the preheated oven for 75-90 minute. Remove and cook uncovered for an additional 5 minutes.

This is something I made up that my family loves. When making it for just my hubby and I, I will add bell peppers and some banana hot peppers to it - really yummy then, but the boys don't like it that way.

1 tablespoon olive oil
1 yellow onion, thinly sliced
1 pound ground beef
¼ cup butter
¼ cup all-purpose flour
3 cups milk
1 pint heavy cream
salt and pepper to taste
5 potatoes, sliced
2 cups shredded Cheddar cheese
2 cups shredded Monterey Jack cheese
1 cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat oil in a large heavy skillet over medium heat. Cook and stir onions until translucent; set aside. Cook ground beef until evenly brown. Drain excess fat, and set beef aside. Melt butter in the skillet. Add flour, and stir with a whisk for 5 minutes. Gradually whisk in 3 cups milk, then the cream. Simmer, stirring frequently, over medium-low heat for 10 minutes until the sauce has thickened and is smooth. Season with salt and pepper, and remove from heat.
  • Spread a small amount of sauce in the bottom of a 9x13 inch casserole dish. Alternate layers of potatoes, onions, ground beef, cheese and sauce, with 2 to 3 layers of each. Reserve some cheese to sprinkle on top. If you run short of sauce, press down on all layers, and add milk as needed. Sprinkle remaining cheese on top.
  • Bake in preheated oven for 45 to 55 minutes, or until potatoes are soft.

1 lb lean ground beef
1/2 cup onion, chopped
1/4 cup celery, chopped
1 teaspoon garlic, minced
1 teaspoon celery leaves (fresh or dried optional)
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon red pepper flakes (spicy optional)
2 tablespoons butter
2 tablespoons flour
3/4 cup milk (add a little more if needed)
1/2 cup grated cheddar cheese
1/2 teaspoon nutmeg
1/4 teaspoon chili powder (optional)
1 pinch salt
1 pinch pepper
1 pinch paprika
grated cheddar cheese

Steps:

  • Spray a baking dish with cooking spray.
  • Preheat oven 375 degrees.
  • Spray a large skillet with cooking spray and brown ground beef.
  • Drain ground beef, if necessary.
  • Add onions and celery to same skillet and cook until soft, adding rest of spice ingredients through pepper flakes. Stir well. But in a bowl and set to the side.
  • In same skillet, melt butter (or use 1 tablespoon of leftover grease from browning ground beef). Add flour to butter, stirring for one minute over medium-high heat.
  • Gradually add milk and cook till bubbly and thickened.
  • Add cheese, nutmeg, salt, pepper, and chili powder continue to stir until melted.
  • Spoon 1/4 cup of the ground beef mixture and spread evenly on bottom of a baking dish.
  • Add 1 layer of potatoes.
  • Alternate ground beef mixture, then potatoes until completely used.
  • Pour cheese sauce over ground beef and potato mixture.
  • Top with a pinch of paprika and grated cheese.
  • Bake for 1 hour, or until potatoes and beef are bubbly and done.

2 lb ground beef
1 small onion, diced
4 medium potatoes, bakers
2 can(s) cream of mushroom soup
1 c sour cream
1 c milk
2 c cheddar cheese, shredded
salt and pepper to taste
1 c peas or green beans (optional)

Steps:

  • 1. Brown ground beef & onion, drain fat. Season with salt and pepper to taste.
  • 2. Slice potatoes very thin (I use a mandolin). Mix soup, sour cream and milk.
  • 3. In a 13x9 casserole, place a layer of potato. Top with a layer of ground beef and onion. Add 1/2 cup veggie, if desired.
  • 4. Pour on half the sauce and top with 1 cup of the cheddar cheese. Repeat with another layer.
  • 5. Cover with foil and bake at 350 for 1 hour. Remove foil and bake another 10 minutes, or until cheese is golden brown.
