CHEESY SQUASH CASSEROLE
Southern squash casserole is a family-friendly way to get kids to eat their veggies! This simple recipe calls for summer squash, Vidalia onion, butter, sour cream Parmesan and cheddar cheese. Top with crushed buttery crackers before baking.

Steps:
- Preheat the oven to 350 °F. Grease a 2-quart casserole dish.
- Heat the oil in a large skillet over medium heat. Sauté the squash, onion, and butter until soft. Transfer to a bowl and stir in the Parmesan, cheddar and sour cream. Add salt and pepper, to taste.
- Place in the prepared casserole dish and sprinkle the cracker crumbs evenly over the top. Bake for 20 minutes or until the top is golden and bubbly.
BUBBA'S BAKED BEAN CASSEROLE
This is my version of a great supper for ANY occasion! It always gets RAVE reviews and I have given the recipe to almost everyone who has had it.The various meats add sooo much flavor and men LOVE this. It is a one dish meal!

Steps:
- preheat oven to 350 degrees.
- brown bacon and remove from pan (will use later).
- brown onion and celery in grease until soft (remove from pan) and quickly fry sliced sausage in bacon fat to brown.
- brown sausage- drain.
- brown hamburger- drain (I brown these meats at the same time in 2 pans for speed).
- In a 3 quart casserole, mix all 4 meats well.
- Open and drain all the cans of beans and add to meats.
- In another bowl, mix together the sauce of ketchup, brown sugar, onion and celery, vinegar, mustard and red pepper.
- Add this to the meat mixture and stir well!
- cover and bake for 1 hour.

BUBBA'S CASSEROLE
Steps:
- In a 2-quart microwavable casserole dish put rice and 1/2 cup juice from beans. Put beans on rice.
- Crumble uncooked hamburger on beans. Put minced onion on top of hamburger. Top with tomato sauce. Cover.
- Bake 30 minutes in microwave. Let stand 20 minutes before serving.

BUBBA'S JAMBALAYA
A recipe that comes from another source that I lost a while ago. Glad that I had my handwritten notes for this one. This contains chicken, sausage, shrimp, and ham. I usually tend to just go with the chicken and shrimp and it's still really tasty. Add your favorite hot sauce to taste.

Steps:
- 1. Heat a large pot over medium-high heat. Add bacon, and cook until crisp. Remove bacon pieces with a slotted spoon, and set aside. Add celery, bell pepper, and onion to the bacon drippings, and cook until tender.
- 2. Add the ham, chicken and sausage to the pot, and pour in the tomatoes, beef broth and chicken broth. Season with thyme, hot sauce, cayenne pepper, and Cajun seasoning. Bring to a boil, and add the rice. Bring back to a boil, then turn the heat to low, cover, and simmer for about 20 minutes, until the rice is tender.
- 3. Stir in the shrimp and bacon just before serving, and heat through. If you use UNCOOKED shrimp, let it cook for about 5 minutes before serving.

BUBBA RICE
Simple rice side-dish that has a wonderful onion flavor. This recipe produces a creamy rice that goes well with chicken or pork. My grandmother (my Bubba) used to make this all the time when I was a kid, and it is still one of my favorites, yet oh, so simple. Cook time includes time to cook the rice.

- Cook rice according to package.
- In large skillet, saute onion in butter or margarine until soft.
- Add cooked rice, chicken boullion dissolved in 1 cup of boiling water, salt, pepper, garlic powder, and parsley.
- Cook, stirring, over medium-low heat for 8-10 minutes,adding extra water to produce a creamy texture.
