GRILLED VENISON STEAKS
I've gone through much of the detail on how to properly grill a backstrap of venison (or elk, antelope, bison, moose etc.) above, but remember that this is done over high heat with the grill top open, and that it takes a good 15 to 20 minutes. Be patient and you will be rewarded.

Steps:
- Coat the venison backstrap in oil and salt well. Set aside for 30 minutes to 1 hour at room temperature.
- Get your grill hot, clean the grates and lay the venison on the grill. Keep the grill cover open. Let this cook 5 to 7 minutes without moving, depending on how hot your grill is and how thick your venison loin is. You want a good sear, with good grill marks, on that side of the meat. Flip and repeat on the other side.
- Do the finger test to check for doneness. If the venison needs some more time, turn it to sides that have not had direct exposure to the grill and cook for 2 to 3 more minutes, checking all the way. If you are using a barbecue sauce, paint the meat with it and let it caramelize on the meat for a minute or three.
- When the meat has been cooked to your liking, take it off the fire and let it rest for 5 to 10 minutes. If you are using a spice rub now is the time to roll the meat in it.

GRILLED VENISON
This is the best venison recipe ever! My husband found it in a hunting book from the library. People who do not prefer deer meat have eaten it all up. You must let it marinade for the full 48 hours, or the meat will not be as tasty or tender. (Believe me, I know from experience!)

GRILLED VENISON STEAKS
My husband loves to hunt and always brings home venison. I'd never cooked venison before and had to learn fast. This quick and flavorful marinade that can be used on venison or other cuts of meat. Great served with mashed potatoes.

Steps:
- Place venison steaks in cold water for 20 minutes to remove extra blood, changing the water halfway through depending on how bloody the meat is.
- While the steaks are soaking, combine 1/2 cup olive oil, balsamic vinegar, onion, garlic, Worcestershire sauce, Dijon, rosemary, parsley, basil, salt, and pepper in a 1-gallon zip-top bag.
- Remove steaks from the water and pat dry. Season both sides with garlic powder, salt, and pepper. Place in the zip-top bag, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 8 hours to overnight.
- Preheat an outdoor grill on high heat for 10 minutes and lightly oil the grate.
- Remove steaks from the marinade and shake off excess. Discard the remaining marinade.
- Cook steaks on the preheated grill for 3 minutes per side for medium-rare. An instant-read thermometer inserted into the center should read at least 135 to 140 degrees F (57 to 60 degrees C).
- Remove from the grill and let rest for 10 to 15 minutes. Slice into strips, drizzle with olive oil, and serve.

"GRILLED" VENISON BURGERS
Delicious venison burgers with that "just grilled" taste right from your stovetop. Actually they are better cooked in cast iron rather than on the grill. And no one will know they are made from venison! Until I made these burgers, I never liked pre-formed, frozen burgers that I made. Now, my husband and I prefer these to beef burgers, and they are much lower in fat. I keep a supply in the freezer for quick lunches.

Steps:
- In bowl, mix dry ingredients.
- Add venison and mix well.
- Add liquid ingredients and mix well with a fork, until bread crumbs are barely noticeable.
- On plastic wrap, form into 8 (4 ounce) patties, making them round and very flat-- like a fast-food burger.
- They can be cooked immediately, but I prefer to freeze them first.
- Place them on a large cookie sheet and freeze them several hours.
- Remove from freezer and place waxed paper between each burger as you stack them.
- I stack them in 2 1-quart freezer zip-lock bags.
- Preheat cast iron skillet to very hot.
- Cook frozen burgers until they are slightly charred on one side (about 3-4 minutes) and then turn and cook until the other side is slightly charred and burgers are medium-well.
- Do not overcook.
- Turn burner off and leave burgers in the pan while you put condiments on your hamburger bun.
- If cooking thawed burgers, cook about 2-3 minutes per side.

OUTRAGEOUSLY WONDERFUL MARINATED VENISON STEAKS
This recipe is from Taste of Home and it's the most wonderful marinade for venison that I've ever tried! It's great with venison steaks and tenderloins, but I'm sure it would be fabulous with beef also. I get better results if I grill my steaks rather than broil, but that's just me. It's the only way I've been able to keep venison steaks tender and juicy - you won't be disappointed either! I often double the marinade recipe so that I have plenty for marinating, basting and for serving. I have not included the marinating time in the prep time, but it's best if marinated overnight.

- Place venison in a large Ziploc bag.
- In a bowl, combine all of the remaining ingredients.
- Pour half over the venison; seal bag and turn to coat.
- Refrigerate overnight.
- Refrigerate remaining marinade.
- Drain and discard marinade from the steaks.
- Broil steaks 3-4 inches from the heat for 4 minutes.
- Turn; baste with reserved marinade.
- Broil 4 minutes longer.
- Alternatively, grill steaks on a gas grill over high heat for 3 1/2 to 4 minutes a side, basting often.
- I prefer to grill venison to medium-rare at most so that it remains tender.
- Serve steaks with more of the reserved marinade.

GRILLED VEGETABLE PACKETS
These are perfect for the grill, especially when grilling steaks or chicken. You can use any variety of veggies you want, these are just the ones I use!!

- Heat grill. In a large bowl, combine corn, potatoes, carrots, zucchini and onion.l
- In a small bowl, combine all remaining ingredients; mix well.
- Pour butter mixture over veggies; toss to coat. (I have use Olive Oil instead of butter, personal perference)
- Cut 4 (18 x 12") pieces of heavy-duty foil. Place veggies evenly on foil. Wrap each packet using double-fold seals, allowing room for heat expansion.
- When ready to grill, place packets, seam side up, on gas grill over medium heat or charcoal 4 to 6" from coals.
- Cook 25 to 35 minutes or until veggies are tender.
- To serve, open packets carefully to allow steam to escape.
- *I have use the new foil packets from Reynolds wrap and just put all the veggies in there instead of individual packets.

GRILLED VENISON PACKETS
This is a simple way to enjoy venison steaks. The foil packet is easily made by ripping off a large sheet of foil, place ingredients on one half, fold the foil over the ingredients and then fold all the edges over to seal the packet. If you like spicy, go ahead and increase the seasoning to 2 teaspoons (I usually just sprinkle it on). You can also add some minced garlic or a shot of wine. Grilling time will vary on how thick your steaks are and how you like it cooked.

- Preheat grill to medium high.
- Place venison steaks on foil.
- Place pats of butter over steaks.
- Then cover steaks with sliced onions and mushrooms.
- Sprinkle spicy steak seasoning over all.
- Fold foil into packet and seal edges.
- Place on hot grill and grill for about 10 minutes. We usually flip the packet, but its not necessary.
- Carefully slice open foil - steam will be very hot. Enjoy!

- Cut 8 large pieces (about 14-16" long each) of foil and lay them out double stacked (to form sort of a plus sign shape) to start 4 grill packets. At this point you can line them with parchment paper if desired - simply put a single layer just on top of the foil. Evenly distribute the diced meat and veggies onto each stack of foil and somewhat "flatten" out the contents for even cooking. Sprinkle with salt and pepper and then finish off each packet with equal amounts of marinade drizzled right on top.
- Carefully bring together the two ends of the foil from the bottom piece so the edges meet at the center. Fold the two edges together over at least three times. Then rotate and fold up the edges on the open sides at least two to three times and crimp those together with your fingers as well. If you are throwing these onto the campfire coals (directly on the fire is not recommended) you do not want any chance of ashes making their way inside!
- Let the food marinate for a minimum of 1 to 2 hours. Grill the packets over (or in the coals of) an open fire flipping them once until the meat is cooked to desired doneness, about 20 to 25 minutes total. Can also be baked in the oven. Carefully open each foil packet to let steam release before eating. Serve as is and enjoy!
