This retro dish is a blend of salmon, rice, cottage cheese, and diced onion. Baked with a crispy topping, this old fashioned salmon loaf is served with a creamy sauce studded with peas and mushrooms.

Steps:
- Preheat the oven to 350 degrees. Butter a 9x9 baking dish. Set aside.
- In a large mixing bowl, combine the salmon loaf ingredients and mix until well combined.
- Transfer the mixture to the prepared baking dish. Top with the crushed saltines and grated Parmesan. Drizzle with the oil.
- Bake for 45 minutes until set and golden brown on top. Allow to rest while making the sauce.
- Heat a non-stick skillet over medium heat. Add one tablespoon of butter and mushrooms. Saute until golden and caramelized, approx. 5 minutes. Transfer the mushrooms to a plate and set aside.
- Add the remaining 3 tablespoons of butter. When melted, whisk in the flour until well incorporated. Cook for one minute. Slowly add the milk, whisking to create a smooth sauce. Cook for 2-3 minutes to allow the sauce to thicken.
- Season with salt and white pepper. Stir in the peas, mushrooms, and pimientos. Cook for one minute until heated through.
- Cut the salmon loaf into squares. Serve with a wedge of lemon and spoon the sauce over the top.

OLD FASHIONED SALMON LOAF

- In large bowl, remove bones form salmon and mash (including juice with fork. Crush crackers to fine crumbs; add to salmon. Mix well. In bowl, beat eggs; mix in milk, butter, dill, hot pepper sauce and pepper to taste. Blend into salmon mixture. Transfer to greased and wax paper lined loaf pan. Bake in 350℉ (180℃) oven for 30 to 35 min or until centre is firm to touch. Let cool for 5 min. Loosen edges with knife, invert onto serving platter. Garnish with lemon.

- Preheat your oven to 375 °F. Grease a baking sheet and set aside.
- Drain the salmon well and if desired, remove any skin and bones from the salmon. You can leave them in, some people love those the best! They will bake right in, don't worry.
- Flake the salmon with a fork and then mix with the breadcrumbs, onion, milk, dill, eggs, lemon juice, salt and pepper.
- With clean hands, shape into a loaf on the greased baking sheet.
- Bake for 40-50 minutes OR until nicely browned AND reaches an internal temperature of at least 165 °F.
- Let cool for 5 minutes, then slice and serve. Garnish with fresh parsley and lemon wedges. This is excellent with lemon juice squeezed on top!

- Preheat oven to 400 degrees.
- Place garlic in ramekin. Pour enough oil over to cover.
- Wrap the ramekin in double thickness of foil.
- Bake until garlic is very tender; takes about 35 minutes.
- Using a slotted spoon, transfer garlic and 1 T. of the oil to a food processor.
- Add butter to processor; puree.
- Season with salt and pepper.
- Preheat oven to 450 degrees.

- Roast the chiles directly over a gas flame until charred all over. Transfer them to a bowl and cover with plastic for 5 minutes to loosen the skins. Rub off the skins and remove the seeds and ribs. Rinse the chiles and coarsely chop.

- Line two 8-by-4-inch loaf pans with plastic wrap, leaving a 4-inch overhang on all sides. Line the bottom and sides of each pan with one-fourth of the smoked salmon slices, slightly overlapping them. Add 3/4 cup of poblano cream and spread in an even layer. Season the salmon fillets with salt, pepper and the remaining lemon juice; center a fillet on the cream in each pan. Spread half the remaining poblano cream over each salmon fillet and cover with half the remaining smoked salmon. Fold the overhanging plastic up and over the top of the terrine and refrigerate until firm, at least 6 hours and up to 12 hours.
