BEER-BRINED GRILLED TURKEY WINGS

Steps:
- In a large, nonreactive container combine the water, orange juice, lemon juice, lime juice, salt, light brown sugar, Southwest Essence, and crushed red pepper and stir until the salt and sugar are completely dissolved.
- Add the onions, lime slices, cilantro, garlic, and beer and stir gently to combine.
- Add the chicken wings and position so that they are completely submerged in the brine. Cover with plastic wrap and refrigerate for at least 8 hours and up to 12 hours.
- Remove the wings from the refrigerator and discard the brining solution. Pat wings dry with paper towels and set aside to come to room temperature for 30 minutes, covered.
- Preheat a grill to low.
- Brush the wings on both sides with the vegetable oil and sprinkle the Poultry Rub evenly over both sides.
- Place wings on grill. Grill the wings, turning occasionally to promote even browning, until they are cooked through and the meat begins to pull away from the bones, 45 minutes to 1 hour.
- Serve the wings with both sauces. Let cool briefly before serving.
- Combine all of the ingredients in a food processor or blender and process until smooth, about 15 seconds. Scrape down the sides of the bowl with a rubber spatula. Pulse 2 or 3 times. Store in a sterilized container until ready to use.
- Preheat oven to 350 degrees F.
- Cut the top 1/2-inch off the head of garlic. Put the garlic in an ovenproof dish and drizzle with oil. Cook until garlic is soft, about 1 hour. Set aside until cool enough to handle. Halve the head of garlic widthwise. Press on the garlic to press out the cloves, and then put the garlic in a blender. Add the buttermilk, mayonnaise, Essence, salt, parsley, chives, and zest and pulse until blended. Cover and refrigerate until ready to use.

GRILLED TURKEY WINGS

- Place the turkey wings in a pot, cover with the water and bring to a boil. Cover the pan with a lid and boil the wings gently for 15 minutes, then set them aside in the broth until ready to grill.
- To make the grilling sauce, mix together all the remaining ingredients and set side. You should have about 1/2 cup.
- When ready to grill, remove the wings from the broth (freezing the stock for future use in soup or stew), place them on a grill (preferably with a cover) over medium-high to high heat, cover and grill for about 12 minutes. Turn the wings over (the underside should be nicely browned) and brush them with the sauce. Grill, covered, for another 12 minutes. Turn again, brush with the sauce, and grill for another 5 minutes. The wings should be well browned on all sides.
- Arrange the wings on a serving platter, brush with the leftover grilling sauce, and either serve immediately or cool to lukewarm before serving.

GRILLED BUFFALO WINGS

- In a small bowl, combine the salt, pepper and garlic powder. In a large bowl, toss the wings with the salt mixture to evenly coat.
- Preheat a gas grill to medium heat (about 350 degrees F).
- Place the wings on the grill, crowding them together so that they are all touching (this goes against the conventional wisdom of giving meat room so it doesn't steam; you want them to steam so that they stay moist). Grill, flipping the wings every 5 minutes, for a total of 20 minutes of cooking.
- In the meantime, heat the butter, hot sauce, vinegar and honey in a saucepan over low heat and whisk to combine.
- In a clean large bowl, toss the wings with the sauce. Turn the heat up on the grill to medium high. Use tongs to remove the wings from the sauce and put them back on the grill until the skins crisp, 1 to 2 minutes per side. Put the wings back in the bowl with the sauce, toss and serve.
GRILLED TURKEY

- Dissolve the salt and sugar in 2 gallons cold water in a large (at least 16 quart) stockpot or a clean bucket. (You can also add fresh herbs like rosemary, thyme or bay leaf, or aromatics like onions and garlic.) Add the turkey, cover and refrigerate, or set in a very cold place (that stays somewhere between 32 to 40 degrees F) for at least 12 hours and up to 24 hours.
- Remove the turkey from the brine 1 hour before grilling. Rinse well under cold water and pat dry to remove the salt.
- Prepare a charcoal grill for indirect grilling. The temperature inside the grill should be 350 degrees F.
- Place the turkey on the grill, cover and grill until an instant-read thermometer inserted in the thigh registers 175 degrees F, 2 hours 15 minutes to 2 1/2 hours. Let the turkey rest 1 hour before carving.

- Heat one side of grill medium heat.
- Brush drumsticks with cooking oil.
- Sprinkle with coarse-ground pepper, Salt, chili powder, garlic powder.
- Place the drumsticks on grill not directly over flame.
- For Glaze- In a small bowl, mix brown sugar, Worcestershire sauce, Dijon mustard, orange juice and zest.
- Brush a little on turkey.
- And continue to baste till done.
- Lower grill hood and grill for 45 minutes to 1 hour or until tender but no longer pink, turning once.
- Place on foil if turkey gets to brown.
THE GREATEST GRILLED TURKEY
Although not very traditional, grilling turkey is the best way of cooking it -- it comes out tender and juicy every time! The turkey drippings may be used to prepare a gravy by placing a metal pan under the turkey inside the roasting pan, and mixing in about 1/2 cup water, adding more water as necessary to prevent the drippings from scorching. Remove the pan about 30 minutes before the turkey is done cooking.

- Prepare an outdoor grill for indirect medium-high heat.
- Rinse turkey and pat dry. Turn wings back to hold neck skin in place. Return legs to tucked position. Brush turkey with oil. Season inside and out with Italian seasonings, salt, and pepper.
- Place turkey, breast side up, on a metal grate inside a large roasting pan. Arrange pan on the prepared grill. Grill 2 to 3 hours, to an internal thigh temperature of 180 degrees F (85 degrees C). Remove turkey from grill and let stand 15 minutes before carving.
